My Pork Lo Mein

My combination of a few different Lo Mein recipes was too delicious not to share! Not to mention I wanted to record it somewhere so I wouldn't forget for next time... yum!! The meat & vege portions given are approximately what I have used and are all of course adaptable. You could sub minced pork for diced or even chicken / prawns... Also add more cornflour if you feel there is too much liquid. -- posted by Bondnz

Easy, Light Coconut Rice

This recipe is so fragrant and creamy, nobody can guess that it uses chicken stock to reduce fat/calories without reducing flavor. It is mild enough to be paired with any dish yet tasty enough to be eaten on its own.
Asian Rotisserie Chicken Salad (Martha Stewart)

A light, flavourful, and easy summer salad from Martha Stewart. For a salad with the best texture, shred the chicken instead of cubing it.
Bachelor's Soba Noodle Soup

Substitutions: Broth can be powder or liquid, chicken or beef, or use miso powder or paste.

Variations: Add kimchi, cooked meats, beef balls, fishballs, kamaboko, green onion, seaweed, cooked dumplings or wontons. -- posted by Chef #1345657

Sam's Ramen Soup

This is the way I love eating ramen noodles. It's been in the making now since I was nine years old. Sometimes I vary it with vegetables or even different cooked meats or seafood. But it's always my go to recipe when I'm sick. Never fails. Just be careful not to overcook the noodles and as soon as you add the egg, you have to be quick. -- posted by SaMSaM

'akwa - Traditional Yemeni Oxtail Stew

This is a very traditional dish from Yemen and is made with Oxtail - hence it's name 'Akwa (this is the Yemeni word for Oxtail or literally "the thickest part of the tail". It has one of the lengthiest cooking times I've encountered, but really is worth the wait (& you can get on with your chores whilst it's cooking as it needs little attention). I have a feeling that this could also be tweaked a little to accommodate crock pot cooking! 'Akwa is also commonly eaten during the month of Ramadan. -- posted by Um Safia

Shorba Libiya - Libyan Lamb & Chickpea Soup

There are many versions of this Libyan classic, this recipe is the basic recipe, to which other bits & pieces may be added depending on the region & household. Although lamb is traditionally used here, you may also substitute beef or chicken.
Chai Tea the Simple, Quick, and Delicious Way!

This is a fast and simple way to make a large pot of Chai tea for company or to put in the fridge for a weeks worth of Iced Chai! This recipe comes from Vikram Vij's brilliant Indian Cookbook, found here http://www.amazon.ca/Vijs-Elegant-Inspired-Indian-Cuisine/dp/1553651847. I have changed the method and measurements slightly.

This is a very basic recipe that is open to extensive modification. Try it with whole allspice, cloves, a cinnamon stick, or even dried apple peices! The possibilities are endless!

I do this on the stovetop, but it would also be very possible to boil the water in a kettle first. I find allowing the spices to sit in the water as it boils enhances the flavour. -- posted by TheJourneyman

Chinese Eggs and Tomatoes

This classic Chinese dish is so simple, but full of flavor! It's one of my favorites, and I order it with nearly every meal in China. You can have this as a side dish, or even a main dish over rice. There are a few different ways to make this; but this way is my personal favorite. Don't be afraid to throw in some ground pork, cumin seeds, more or less eggs or tomatoes, etc. I will frequently drizzle sesame oil on top of the finished dish. -- posted by Mrs.R

Asian Vegetable Noodle Soup

This light, refreshing rice noodle soup is perfect for both Summer and Winter. If needed, dried herbs can be used in place of fresh ones. Add tofu, cooked chicken, seafood and mushrooms as desired. White cabbage can be added instead of bok choy and a small amount of leek or onion is also good. The soup will freeze well but noodles tend to go mushy when reheated. -- posted by the_allergic_chef

Crunchy Asian Sesame Salad

This salad is great. Light, crunchy and pleasantly nutty. After graduating from college this past May and being home looking for a job I got sick of eating the same things everyday so I threw this together for something lighter. I've included what I use below, but this salad lends itself to be pretty flexible. Would be great with sliced grilled chicken on top or shrimp might be good too, with a little squeeze of lime. One warning: this makes quite a lot of salad so unless you are feeding a crowd I wouldn't put the dressing on all of the salad at once... it won't keep (soggy lettuce, soggy crunchies, etc). A good solution would be to bag up single serving portions in ziplock baggies and then top with dressing and crunchies when ready to serve. You could even put them straight into the bag and shake to mix it up before putting on a plate. -- posted by Steph.K

Won Ton Wrapped Chicken With Apricot Dipping Sauce

This is a great appetizer or main dish from "Kosher By Design" by Susie Fishbein. The sweetness makes it perfect for Rosh Hashanah. To make a pareve recipe, replace the chicken with 2 cans of salmon (skins and bones removed). Although this is a very easy recipe, the chicken must marinate for at least 8 hours so start this one the day before. For a healthier option, you can bake these in the oven.
This is a very fast and tasty dish. It is great just as written, although I also like to add a little Thai Chili Sauce to it for zing! Also, I use a mix of stir fry vegetables, but the original recipe calls for frozen bell peppers. If you wanted to cut the peppers, this would probably be good with fresh peppers. This recipe is doubled from the original. -- posted by Scrivener1

Steamed Tilapia over Cellophane Noodles With a Miso Broth

Easy, inexpensive, great flavor and completely different. I love this dish and it is so easy and a one pot wonder. Serve with a light salad with a sesame dressing, some shredded carrots, zucchini, red onion, cucumber and water chestnuts for a great side, and that is all you need. And for those who say they don't like steamed fish ... Just try it. Now I did say Tilapia, only because it is very inexpensive and mild and it seems that there of a lot of people who enjoy it. Personally, I would prefer grouper, halibut or cod but as long as it is a firm white fish it will work just fine. -- posted by SarasotaCook

I think this way of making rice comes from the North of Iran. I prefer this to the more classic polow as it's less work to do and it's faster. My husband has a very interesting way to check if the rice it's done:he spits a little on his finger and places the saliva on the pan.
I know that garam masala recipe often vary family to family and region to region. I couldn't say where this one is specifically from but it comes courtesy of the fabulous Madhur Jaffrey, her World of the East Vegetarian Cooking book. This is quite heavy in cardamom, so if that's not a flavour you enjoy, this might not be the mix for you.
Almond Tahini Date Balls

Very Middle Eastern and very tasty. A somewhat sophisticated brunch treat if you will, and would also make awesome finger food for tea or a dinner party. Especially if it's one of those where the meal is light but hors d'oeuvres are heavy. And can you believe this awesome treat is healthy and vegan? I couldn't! For some ideas, try a mix of Chinese red dates (I used 100%) with traditional dates. Put in a dash of ground pistachio and/or cardamom, how about a teensy bit of honey? There's a lot more I plan on doing with that huge thing of almonds I bought at BJ's.
Found on the internet somewhere, don't remember where. If this is your recipe or you know where it came from, just drop me a line so I can give credit where it is due. -- posted by the80srule

Pakistani Style Bhindi Ka Salan (Okra/Ladyfinger Curry)

Back in the days when I was a child every time my mother made this dish it was considered a treat among me & my siblings. Besides potatoes & peas, okra/ladyfinger is another all time favorite vegetable among the Pakistani population. It is usually served with roti/chapatti & yogurt or sometimes with Masoor Dal (lentil) here is the recipe of a basic okra curry that was passed down from my grandmother to my mom & down to me. It’s the tomatoes that give it a different taste compared to the other recipes posted so far.

Note if you want to make "Bhindi Gosht" (Okra curry with mutton) after frying the onions add mutton, let it cook on medium low heat for 20 minutes, then follow the rest of the recipe. You can also add 1/2 cup water to make it a little saucy. -- posted by Bint e Naeem

You can't go wrong with a butternut squash soup, but this one has a subtlety of flavors that is positively gourmet. And with the incredibly easy preparation and ingredients this will be a staple of your winter-time dinner parties or even just a quick after-work meal.
Traditional Teriyaki Sauce

Traditional Japanese recipe I'd copied from a Japanese cookbook many years ago. The best thing is it will keep indefinitely and even matures and improves with age. I generally make a batch using a whole bottle of sake (and you can use the bottle to hold 1/2 the batch). Is exceptional with Yellow Box Honey... but any good quality honey will do. Excellent marinade for chicken and seafood, or in stir fried tofu/veges. -- posted by Malaliu

Egyptian Lentil Stew

This is a great recipe to make in the winter - it is a hearty lentil stew, takes about an hour to make (no matter how much you increase the portions), and goes with most other foods. Also, it is really really easy to make, and can usually be made with things that you have in the house already. Can be served cold or hot, but it is much better hot than cold.
Got this recipe off the back of a package of Dynasty Chow Funn Noodles pack and tweaked it according to what I had in stock (the original recipe called for pork, but I used chicken breast instead).
Marcy Goldman's World Famous Potato Pancakes Latkes

This latke recipe is from Marcy Goldman's new cookbook, "The 10th Anniversary Edition of A Treasury of Jewish Holiday Baking". It uses an unusual method - parboiling the potatoes first. These will be the lightest, crispiest and fastest potato pancakes you ever made! For kids or onion haters, use 1 teaspoon onion powder instead of the grated onion. Make these bite-size for a tender centre and crisp outside and use tongs for both putting the batter in the oil and taking the latkes out. -- posted by blucoat

This is a very typical Arabic soup made with very few ingredients. The taste is amazing and your stomach will thank you if you eat it on a warm, rainy day. Make it a meal by adding torn up pieces of pita bread to your bowl, or fry pieces of pita bread in oil for an arabic style crouton. Some like a squeeze of lemon or a pinch of cumin for extra flavor.
Chicken Chow Mein Casserole

This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family. -- posted by Croft Girl

Lebanese/Syrian Bazella

After having lived in Syria for the past year for school, I learned how to make several authentic dishes. They will probably taste different outside the Middle East due to the availability of items seasonally and brands of ingredients used.
Lebanese/Syrian Fasoulia

Please note: if you use dry lima beans, they must soak in water overnight. The shells may come off of them when you begin to cook them, but this is normal. -- posted by Mustafa's Cook

Chicken Pepper Pot Soup

I got this fabulous recipe when I vacationed at Disney's Animal Kingdom Lodge. The soup was on the Boma - Flavors of Africa Buffet. When I inquired about a cookbook with the recipe, the waitress went & got the recipe from the kitchen. This is posted in the same manner I got it, but I'll tell you that finding 1 gallon containers of broth is difficult. So I use 10 14oz cans, it's a little more, but just as good. I also usually use 2 poblanos. Using ready to go chicken tenders is a big time saver. I just sautee them in a little sesame oil & garlic before I dice them. This soup is very tasty and borderline addicitive. I've made several times since I got back. It is absolutley delicious the next day and freezes well.
Sweet Somen Noodles

I add this to the somen noodles I serve my Taiwanese Spaghetti recipe with for a little extra sweetness. Found this recipe off the internet from someone who would eat the somen noodles made this way alone (kind of bland in my opinion, but you can eat it that way, too). This noodle can be served cold or warm, depending on preference. Cooking time is the time it takes to boil the somen noodles -- posted by Fluffkins

Middle Eastern Style Three-Lentil Soup With Potatoes (Vegan)

Based this off my other lentil soup recipe. You can find most of these ingredients in Indian grocery stores, it takes longer to cook because red lentils dissolve easily but the others don't. Particularly tasty with Recipe #411190. -- posted by the80srule
