Even though the ingredients are canned, it tastes incredibly fresh (thanks to the cilantro and lime juice.)  My variation is different from my MIL's in that I added cilantro, garlic, and lime juice. 			<description>This is a recipe for guacamole that I created after discovering that I actually like guacamole after 42 years!  Since then, I have been making it at least once a week without fail.  I am addicted!  I love my recipe because I like my guacamole with some texture, spicy, and with some cilantro and lime flavors.  It doesn't take long at all and I don't measure out my ingredients, so you will just have to make yours to suit your own taste.  The number of avacadoes is tricky...the sizes of them vary greatly and it also depends on how much you want to make. 			<description>This is a great appetizer and a hit at any party! They get eaten up quickly. You can't tell how hot a jalapeno is, no matter how good you clean them. It's fun to watch people as they take a bite, wondering if the pepper will &amp;quot;bite back&amp;quot; at them. I always make 38 peppers...mostly I double the recipe. I grow jalapenos in my garden, and when they are ready, I get my chili grill out and go to town! I will tell you, this recipe does take time to make. Usually, I will clean the jalapenos and place in a covered bowl in the fridge overnight. The next day I make the stuffing and cook them. You MUST wear rubber gloves to clean them! Believe me, I found out the hard way. First time I made them,  I woke up in the middle of the night with my hands burning! If you do not heed my warning, soak your hands in a bowl of milk until the pain goes away. I cook my jalapenos in a chili grill so they cook upright. My grill holds 38 peppers. If you have any extra filling, freeze it. Next time you want to make peppers, you have the stuffing! I have tried different filling combination's, and this one seems to be the party favorite. Flour tortillas probably won't work as well for this and definitely won't have the corn flavor and base. Never spend money on premade again! You can also control how large or small you want to make them (and keep them seasoned or not) not to mention salt content if you're watching sodium intake. 32 chips is all I could fit on my convection oven's cookie sheet so feel free to use more tortillas; the methodology is all the same. 			<description>Every year my dad would make these taquitos with leftover turkey. The corn tortillas are lightly fried in oil, rolled with turkey and sealed on a griddle and come out soft with a nice crunch with the turkey still moist and delicious. These are awesome because they are not deep fried or baked. I took over the tradition and have been making these for years. My family won't eat any leftover turkey in any other form except these soft taquitos. You can skip the roasting of the tomato and peppers if you would like to save time and it still tastes great. I love it fresh, pure and simple... the way I made it every day in my friend's Mexican restaurant in Nevada (constantly, since the customers just couldn't seem to get enough!). We sold a lot of it a la carte, and only used the finest, freshest ingredients possible... fresh ripe avocados, Key limes, onion, and just the right amount of Margarita salt. Look for large Key limes and ripe avocadoes in Mexican markets -- they're the best. For those quacamole purists like me who do not want chunks of this-and-that in their dip... then this is definitely the guacamole for you! AND ALWAYS REMEMBER...
