			<description>This is the way my aunt used to make croquetas, with bechamel - an old family and personal favorite. If you don't know what croquetas are, they are deep-fried treats about the length of your thumb and twice as wide. Variations of croquetas are famous around the world, but this recipe is Spanish (although it would truly be Spanish made with Serrano ham, but that's not the way my aunt made it). I used to eat several as a meal but generally these are served as tapas (appetizers/light lunch). These are perfect to throw in the lunch box too! Also, please don't be intimidated by the long list of directions, because in the end this is pretty simple to make. 			<description>This is the recipe for the true Canadian-Chinese type of ribs very popular around Ontario, Canada. You can't find these state side, unless you have this recipe!!  Having grown up on the canadian border near Cornwall, Ontario in a town named Massena, NY, most of my relatives were from the canadian side so we crossed the border frequently and ate at the many chinese restaurants there. These are very sweet, sticky and delicious! You can use babyback pork ribs, country style pork ribs. This also turns out great using beef ribs, too. I've even used this recipe to cook boneless, skinless chicken in...it's just that good.  Very simple ingredients, but don't let that fool you!!  You'll see! This is not gourmet but it is easy to throw together quickly, especially if you speed the cooling time but putting the ground beef in the fridge or prepping it the night before, and it is a very forgiving recipe with omissions and substitutions and it is simple and pleasing so I love it for a quick dinner or as an appetizer!  Use pizza dough, Italian sausage and mozarella cheese and omit the bacon for another variation. I dip the cheeseburger rolls into bacon ranch dressing (serve with mustard and mayo) and the Italian sausage rolls into homemade marinara sauce. For a party appetizer, slice more thinly! Enjoy! 			<description>Do you hate eating nachos and getting to the bottom and there is no cheese or no sauce left. Or how about hating that someone smeared sour cream all over all the chips because they like it - but you don't.  How about olives that you like but your friends don't and pushed them all off to the side. Well this is a great way to make nachos for a party so everyone is happy.  Individual pouches or small packets of nachos for each person. You get your own chips, lots of cheese, a creamy sauce and served with the traditional toppings.  Now for me ... traditional toppings include shredded lettuce, black olives, jalapenos, salsa or tomatoes, sour cream and guacamole. Now since this is a NO MESS easy clean up meal.  I line a pie plate with parchment paper and put all the toppings right in that. That way at the end of the meal ... toss the parchment paper out and NO clean up. And with all those toppings they can make the nachos exactly to their liking.. Each parchment packet has chips, cheese and either the seafood topping or the traditional beef and bean topping, all hot and ready to garnish. And the best part ... individual packets so once again, no clean up or mess. This is just a great party food.  So whether you decide on the seafood or the beef, you will have 8 great packets of nachos to enjoy during my favorite ... Three (3) different dips, all unique served with my spicy chicken sticks (just chicken on a stick, but it is fun and never any left.  You can always cut down on the sauces but honestly, there usually isn't any left.  And what is left - I  can easily use in the next few dinners.  The herb vinaigrette is great over fresh fish, shrimp, scallops, or chicken.  The sundried tomato is awesome on a baguette with grilled chicken for an amazing sandwich; and the artichoke, over pasta for an easy side dish or even or some grilled salmon or grilled chicken breasts. 			<description>I used to drive across the border with friends on occasion to Buffalo from Toronto Ontario and we would go through a wonderful (though somewhat dingy) drive through restaraunt for wings and eat them from the bucket on the way home.  Soooo delicious  After about visit 6 or so I found out how they made these, and over the last 25 years this is the closest to the recipe I can imagine getting!  (Bottled BBQ sauce was not as nice as homemade, but it is quick.)   So addictive!  Not stinging hot ....not bland and plain ol' BBQ .  On a hot scale of 1 - 10 my Hubby calls this a delightful 7 - 8 with a wonderful subdued afterglow that makes you desire more.  They can be made hotter or milder to taste easily by slowly adding the Red Hot sauce to your taste requirement.    NOTE: OFTEN, I make triple or more of this recipe and freeze it in portion controlled ziplock bags to have them on hand for unexpected guests or a night time craving!   I hope you like them...and If someone remembers the restaraunt from way back then... I would love to know the name of it!!
