Pimiento Cheese

From EatingWell Magazine September/October 2009. This Southern favorite is a simple blend of Cheddar, mayonnaise and pimientos. If you like spicy foods, add a few shakes of hot sauce. Serve with crackers for an appetizer or as a sandwich spread for lunch! -- posted by Rev.CCJ

Monica & Jamie's Hummas

Jamie and I own a graphic design business. One of our clients owns a Persian restaurant with a terrific Hummas appetizer. This inspired us to try our own hand at it. After trying many recipies, we've created this version with an array of the ingredients we liked best from what we tried.

Mini Crab BLT Sandwiches With Roasted Tomatoes & Avocado

These are simple little sandwiches which you can make all ahead of time and then just put together right before serving. A nice twist on BLT. A simple BLT spread with crab, roasted tomatoes and avocado make this great. I cut the small baguettes on a angle, secure each half with a tooth pick for a nice small bite size sandwich. Great for appetizers. Now, really hungry ... make this on some toasted Ciabatta bread for a decadent full size sandwich with a bowl of soup one night for a great dinner. -- posted by SarasotaCook

Joanna's Party Dip

This is a simple bacon and cream cheese dip I have tweaked over the years and it always disappears at any gathering where I make it. It makes a small amount which is just right to accompany a cheese platter with crackers and some wine. Make at least two hours earlier for best results. -- posted by Perfectionist cook

Sweet Braised Whole Scallions (Molly Stevens)

This would be a fabulous, easy side dish for Thanksgiving. "As the scallions braise, the sweet anise flavor of the tarragon mingles with their oniony juices, giving the whole dish a candy-like sweetness. If you can’t find fresh tarragon, or simply don’t care for its taste, substitute fresh parsley or omit the herb altogether. The scallions will still taste delicious." Recipe is from "All About Braising: The Art of Uncomplicated Cooking" by Molly Stevens. -- posted by blucoat

I have not tried the optional ingredients myself, but they sound like they would be very good. Try it and please let me know. I would appreciate the feedback.
** Cucumber Sandwiches Everyone Loves **

I never follow recipe's.. so this was one that after a lot of taste testing, I stuck with. Everyone loves it!! It's a great appetizer for the holidays as it is so light & not filling. But I have made these for my kids for a summer brunch or lunch also. I have never tried a lower fat version because I despise fat free mayonnaise & cream cheese but let me know if you try something & it works.
I have simplified it since my first 10 times making this recipe as well IT WILL SERVE 12-20 most will want 2nds, trust me :)

V's Soft Turkey Taquitos With Southwestern Dip

Every year my dad would make these taquitos with leftover turkey. The corn tortillas are lightly fried in oil, rolled with turkey and sealed on a griddle and come out soft with a nice crunch with the turkey still moist and delicious. These are awesome because they are not deep fried or baked. I took over the tradition and have been making these for years. My family won't eat any leftover turkey in any other form except these soft taquitos. We look forward to these as an appetizer or a meal served with my own Southwestern Dip, Cheese Sauce, Salsa and my Chunky Guacomole the day after thanksgiving. -- posted by Vseward (Chef~V)

PREP TIME INCLUDES CHILLING
Got this from MIL, who got it from the neighbor, who got it from a lady at church and so on. I have eaten it cold with frito scoops, put on potatoes warm, put in the middle of quesidillas. Everyone LOVES this dip.
Originaly this uses regular mayo and sour cream and regular cheese, I tried to make this a little healthier because I eat a lot of this. Also, black beans were not included with the recipe. -- posted by Anjaylah

There are quite a few Nuts & Bolts recipes here on Zaar, but not of them are quite the same as mine, so I thought I would add mine. The main difference is that I bake mine. It brings out the flavours of the spices, and seems to do a way with the sweetness of the Nutrigrain, as well as making it more crunchy! -- posted by Sara 76

Broken sourdough pretzels seasoned with a combo of spices. This recipe is always requested, especially when enjoying with a cold brew! Beware, these are spicy....you can cut back the amount of cayenne (1 tsp seems to be tolerable for all palettes) I have tried many, but none seemed to have what I think makes these extra special, It's a Dilly and lemon pepper. -- posted by flightnurse

Marcy Goldman's World Famous Potato Pancakes Latkes

This latke recipe is from Marcy Goldman's new cookbook, "The 10th Anniversary Edition of A Treasury of Jewish Holiday Baking". It uses an unusual method - parboiling the potatoes first. These will be the lightest, crispiest and fastest potato pancakes you ever made! For kids or onion haters, use 1 teaspoon onion powder instead of the grated onion. Make these bite-size for a tender centre and crisp outside and use tongs for both putting the batter in the oil and taking the latkes out. -- posted by blucoat

Don's Queso Dip

My dad started this recipe in our family. I grew up making it with my dad and after his death I have continued to make it. I have tweaked it to suit my family. Great to make for the Superbowl or a casual get together. All the spices are to taste. The measurements below are estimates, I rarely measure. Feel free to cut back on the Jalepeno if you don't like your food spicy. Also, instead of just plain ground beef, I have made it using left-over chili, just cut back on the spices then.Use more or less Milk to make cheese as thin/thick as you like, keep in mind the salsa will thin it out. You can use Pepper jack Velveeta if you cannot find the Mexican style. Also, leftover chili or 1/2 lb ground beef and 1/2 lb Chorizo instead of ground beef has had awesome results in my household, just cut back on seasonings. My mother likes to put this into a Crockpot to cook while she makes dinner. -- posted by Bekahbv

Festive Tuna Salad

You could serve this as a 1st course for company; it is not your usual mayo/tuna salad. The addition of fresh mushrooms and green peas really does the trick. I usually make a lighter version where I will strain the whey out of some plain yoghurt in a sieve and use 1/3 strained yoghurt and 2/3 mayo. If using this method the yogurt must be drained really well. I add the peas when they are still frozen; they thaw quickly and I like them cold in the salad and they do not get mushy -- posted by Deantini

Garlic Feta Toasts With a Warm Olive Spread

I don't know about you, but I'm a bit of a soup and salad person, and once a week I have just a salad or soup/salad, soup/sammy for dinner rather than a heavy dinner. I make this quite often and serve it with a bowl of my potato soup or my chick pea soup, but you can use whatever you like best. Slice a few good fresh tomatoes or some fresh fruit if you prefer, and you have a great easy dinner. Two (2) nights a week, I really try to eat a bit lighter - and this fits the bill. But, it also makes an amazing appetizer, or a great side dish for any meal during the week. Simply put, it is just really good. Now whatever you do ... don't get rid of that cheese - Save! It makes a great spread on baguettes or makes an amazing spread for a sandwich. It will last a couple of weeks in the refrigerator covered. and, make all this ahead of time and just heat up, toast and serve. -- posted by SarasotaCook

Dad's Mouth-Watering Shrimp Cocktail

It's a great spread for muffins, biscuits, rolls and even slices of pound cake.
Buffalo Chicken Wing Dip

a great way to enjoy chicken wings without the mess. great served with celery or tortilla chips for dipping. I like to use a crock pot to keep this dip warm during parties, just mix everything up on the stove than transfer to the crock pot or you can use a electric fondue pot on warm too. If you don't want to use those then separate into small batches in oven safe dishes so you can keep the dip warm.
Kamut Salsa Lettuce Wraps With Cojita Cheese Crumbles

Kamut is a type of wheat also known as Krorasan, that is powerfully nutritious - loaded with more protein, fiber many vitamins and antioxidants that "regular" wheat doesn't have. It can be found in natural food stores.
The recipe can be found here: http://lobsterandfishsticks.com/2009/06/10/kamut-salsa-lettuce-wraps-with-cojita-cheese-crumbles/

Joan's Ultimate Appetizer

This is my mother's appetizer that I upgraded to match my tastes. It is a very fast and easy recipe that will always be polished off at parties. It is best served warm so keep it covered, even better covered with warmed cloth napkins. This recipe does not do well reheated as it dries out in the oven or gets mushy in the micro. Please use "bacon bits" or the cheap version. Real bacon lacks the salty crunchy flavor that the bacon bits have. I have tried all the versions of brand name and non for the ingredients and really it doesn't matter so this can be a cheap appetizer if you need it. (don't try black pepper or chili powder, it does doesn't work!) -- posted by eveningtech

Smoked Chicken Fillet and Avocado Vinaigrette

This is a delicious extremely easy summery dish comprised of slices of smoked chicken and avocado, drizzled with vinaigrette, that can do as an entree, in place of a salad, or even as a main meal served with a green salad. The amount of ingredients described here would serve 2 people as a large appetiser or a small main meal. -- posted by becy
