Fried Parsley

This is from New Orleans food critic and cookbook author Tom Fizmorris. It is a recipe that was served around the city for many years. It was generally served in a basket and they called it "French popcorn". There are two tricks. First, if you have previously used oil (particularly oil that you have fried chicken in) use it. Second, the curly-leaf parsley is very important because it holds the batter better. -- posted by Bayou Andy

Mexican Potato & Chorizo Tortilla

OH my this was tasty. Better than I fantacized it to be! How many times has that happened in your life?? I digress, if you like chorizo, try it, you'll LOVE it!
I used both flour (as Emeril suggests) and corn tortillas. Pick your favorite, they are both wonderful! You can use large (4) 12" or (8) 6" tortillas. I used a combination of both sizes. This recipes was written using (4) 12-14" tortillas. I used my pizza stone and the results were outstanding. We had this for dinner along with salad, guacamole and chips. It would make a great appetizer as well. Recipe inspired by Emeril Lagasse, he uses the grill for part of this recipe, I did the whole thing in the oven. I am writing the oven friendly version. -- posted by Chicagoland Chef du Jour

Pesto Cream Cheese Dip (To Cure Beaver Street Brewery Cravings)

I went to college at NAU in Flagstaff, Arizona. I no longer live in Flag, but often crave the Pesto Cream Cheese Dip from Beaver Street Brewery. This recipe is slightly different, but it might be even better! (Beaver Street doesn't stir pesto into their cream cheese mixture...they just put it on top.) I served it to a group of old college friends, and they loved it as well! In fact, everyone crowded around the bowl, stuffing their faces until it was gone! LOL Quick and easy, but oh so impressive -- even for those who aren't familiar with Beaver Street. I use all reduced-fat ingredients. I only toast half of the bread slices and leave the other half un-toasted, which is what they do at Beaver Street -- this provides a variety of dipping textures with little-to-no effort. :-) -- posted by Robyn's Cookin'

Just the way I like my escargot. Simple and yet elegant and great. Hint; I buy the snails from IGourmet. They sell a can that contains 72, enough for 12 servings @ a really good price and they are as good or better than the higher priced ones.
Garlic Spread With Olive Tapenade

I originally made this to emulate the sandwich spreads you get at the Safeway deli. (Those sandwiches are super addicting, but we don't live near a Safeway anymore!) This is a pretty perfect match and is SO GOOD on sandwiches, but also makes a very pretty party appetizer if you spread the garlic spread on toasted baguette slices and then top with the olive tapenade.

I always use reduced-fat cream cheese and mayo. I have made this several times without the kalamata olives (they're more expensive so I don't always have them on hand) and we enjoyed it just the same.

Recipe yield and prep times are approximate...I'm horrible at paying attention to things like that... -- posted by Robyn's Cookin'

Pineapple Cheese Ball

Canned pineapple gives this cheese ball a little extra flavor and sweetness. I recently brought this cheese ball to a party and even those who claim not to like pineapple were raving about how good it was and said it was "addicting". This recipe makes two cheese balls, however, you may want to only take one cheese ball to your next party and keep the second for you and your family, as I'm sure there will not be any leftovers. I typically do not roll the the cheese ball in nuts, but do so if you wish. -- posted by Chef #396295

Spicy Chicken Sticks With 3 Dipping Sauces

Finger Fun Food. Who doesn't like it. I technically call this an appetizer, but honestly, I have serve this for dinner too. I have a group of friends (my pool buddies ... we play pool on Friday nights) they love these. Three (3) different dips, all unique served with my spicy chicken sticks (just chicken on a stick, but it is fun and never any left. You can always cut down on the sauces but honestly, there usually isn't any left. And what is left - I can easily use in the next few dinners. The herb vinaigrette is great over fresh fish, shrimp, scallops, or chicken. The sundried tomato is awesome on a baguette with grilled chicken for an amazing sandwich; and the artichoke, over pasta for an easy side dish or even or some grilled salmon or grilled chicken breasts. Many possibilities, trust me ... if any sauce is left, you will not have a hard time using it up. -- posted by SarasotaCook

Marmie's Roasted Red Pepper and Garlic Bread Butter

This is an ,exquisite, mellow , really easy and somewhat fancy garlic bread. A must to try!
My Aunt Dawn told me of something that she makes that all her kids love and I thought I would try to imitate it.
This is what I came up with.
Often I make tonnes of roasted garlic and red pepper and freeze it for later ease of use. (fresh roasted red pepper is really nicest)

Marmie's '... on the Way Home from Buffalo...chicken Wings

I used to drive across the border with friends on occasion to Buffalo from Toronto Ontario and we would go through a wonderful (though somewhat dingy) drive through restaraunt for wings and eat them from the bucket on the way home. Soooo delicious After about visit 6 or so I found out how they made these, and over the last 25 years this is the closest to the recipe I can imagine getting! (Bottled BBQ sauce was not as nice as homemade, but it is quick.) So addictive! Not stinging hot ....not bland and plain ol' BBQ . On a hot scale of 1 - 10 my Hubby calls this a delightful 7 - 8 with a wonderful subdued afterglow that makes you desire more. They can be made hotter or milder to taste easily by slowly adding the Red Hot sauce to your taste requirement. NOTE: OFTEN, I make triple or more of this recipe and freeze it in portion controlled ziplock bags to have them on hand for unexpected guests or a night time craving! I hope you like them...and If someone remembers the restaraunt from way back then... I would love to know the name of it!! Good memories... -- posted by Marmie's

Some tasty sausage choices are the chicken habanero with jack cheese, jalapeno and cheese, turkey n cheddar, or just regular smoked sausage.
Creamy Ricotta Florentine French Bread Pizzas

This french bread pizza contains no pizza sauce, instead you use ricotta, spinach, and the "toppings" and top it off with creamy provolone cheese. This makes a great dinner of fun party starter. This pizza is meant to be super chunky so don't cut your veggies or meat too small.(The pepperoni should look like tiny pieces of pie.) If you want your pizza filled more, just use less bread. For a party, I cut mine into slices about and inch or two inches thick. Easy to make meat-free! I usually make a greek salad to go along with it, the tang from the salad is great with the creamy texture of the pizza! -- posted by Courtney R
