			<description>This is delicious served with syrup or ketchup - your preference, and served alongside eggs. We also like to eat it here in Lancaster County with milk - or just browned butter - right after it's cooked. (before putting it in the loaf pan) Otherwise, pour it into the loaf pan &amp;amp; let it cool, then keep it in the refrigerator until cooled completely &amp;amp; it can easily be sliced. This recipe is so simple, I was almost embarrassed to post - but it's what we eat here - and I've seen numerous requests for this - so here it is! 			<description>Why only &quot;kinda&quot; Amish? Good question - shows you're paying attention. While the recipe from which this was adapted proudly proclaimed to be Amish Macaroni Salad, I found it to be much too sweet and not eggy enough for our tastes. After playing a bit with proportions and trying different types of vinegar and mustard, this is what resulted -- and although it's only Kinda Amish, it is, indeed, Very Deelish. You may save one hard cooked egg and slice it to arrange on the top, then sprinkle with paprika. Or you can just put all of the eggs in the salad and mix in some paprika too, and garnish with a few little tufts of fresh parsley. Or, for the presentationally-impaired like myself, just use all the eggs right in the salad, and forget the paprika and parsley. Parsley's always a little bit suspicious in my book anyway - once I got some parsley from a salad bar and it was plastic. Yeah, it was part of the decoration, but you know, they could warn people. &quot;Attention Restaurant Patrons: Salad Bar Decorations Are Non-Edible. Everything Else Is Okay To Eat. No, Really. We Mean It.&quot; Oh, by the way, you'll want to prepare this a day ahead, and chill overnight in a padlocked refrigerator. 			<description>This recipe uses the Amish Friendship Starter, see recipe posted by Kim D, Amish Friendship Starter Recipe #64793, it is the exact one I use. After 5 years of using this starter and  making breads I have created several versions of the bread, this is the family favorite. Please note you can make your starter, and if you do not make bread that day, or do not want to give any away, measure out 1 1/4 cups and put in zippy lock freezer bags, write the date on bag, and freeze for up to 6 mos. (I put the 1/4 cup in to count for the stuff that NEVER seems to get out of the bag! To use, take required amount out of freezer and place in fridge to thaw for 48 hours, when completely thawed, just use as normal with no feeding. To use frozen starter to create a new series of starter, thaw on cabinet, place in plastic or glass jar, and feed it with 1 cup sugar, 1 cup flour and 1 cup milk. Count that as DAY #1.
*One thing I have noticed - some people put the starter in the refrigerator. It works, but leaving it out at room temp is fine, and when this recipe was created, people did not have that luxury. We discovered that making sausage was a bit more work than we were interested in -- especially since we had to rent shop space and use equipment we weren't really familiar with -- so we decided to leave it up to our butcher.  Since he's also started using this recipe, we still get the same great sausage -- at a slightly higher price, yes, but with a lot less work!  (I haven't included the time it takes to stuff casings because that will be different for everyone.)     **Edited Sep07/06:  I forgot to indicate in the intial post that this sausage gets smoked for 3-4 hours after it's in the casings. My Nana saved a copy of the cookbook and gave it to be when I became an adult.  The cookbook has seen better days and I thought it would be good to post some of the recipes and keep them alive after the book has fallen apart. Also, I think it is a nice snap shot of the type of recipes these women (largely of Pennsylvania Dutch ancestry) of rural Pennsylvania where making in 1980.  The cookbook says this was the recipe submitted by the then Minister of the church, Pastor Harold Smith.
