			<title>Traditional Mennonite Green Bean Soup</title>

			<description>This is, of course, best with fresh-from-the-garden green beans, but frozen beans work equally well.  The original recipe calls for an additional dollop of sour cream before serving, but I've grown up on this stuff just served with milk or half-and-half cream at the table.  When I make this now, instead of boiling a ham bone for the stock, I slice up a pound or two of farmer sausage to make the stock and then just leave the meat in the soup. It's a mild soup, so some people add salt or chicken bouillon to give it a little extra flavour. You can also add other fresh veggies as well, like peas and chopped carrots. 			<description>This was a big hit at a family potluck. It makes enough for everybody and has a rich creamy flavor. I was a little cautious at first because the fresh oregano tasted so strong, but after baking the flavors all blended perfectly. Still, if you like oregano even less than I do try using basil or thyme. If I know I'll be making it ahead of time, I prepare the dish up to the last step the night before and refrigerate it until I'm ready to bake it. 			<description>This is the recipe we got from my uncle when we wanted to make our own sausage.  We discovered that making sausage was a bit more work than we were interested in -- especially since we had to rent shop space and use equipment we weren't really familiar with -- so we decided to leave it up to our butcher.  Since he's also started using this recipe, we still get the same great sausage -- at a slightly higher price, yes, but with a lot less work!  (I haven't included the time it takes to stuff casings because that will be different for everyone.)     **Edited Sep07/06:  I forgot to indicate in the intial post that this sausage gets smoked for 3-4 hours after it's in the casings. 			<description>Okay, I know it sounds gross...but, trust me, it only sounds that way!!  This traditional Mennonite recipe comes from the Mennonite Community Cookbook that was given to me as a gift.  Amounts can vary, since the stomach should be tightly stuffed.  I usually use 1 lb bulk sausage and 1 lb. turkey sausage. Sometimes to make this very simple, I buy the hash brown shredded potatoes with onion and peppers. I have never used cabbage, but am sure it's good with that in it too. One of my favorite ways to eat sausage; great with a side salad or fresh green beans. Then your friends can make their own and pass it along to their  friends. This is why the bread is called &amp;quot;friendship bread&amp;quot;. It's time consuming, but it's worth it.

Amish Friendship Bread is a starter bread. If you know someone with a starter, you are in luck. For those of you without access to a starter, I have placed the directions for the starter in step one.  When passing the recipe on, be sure they realize that part of step one is not day one for them. My Nana saved a copy of the cookbook and gave it to be when I became an adult.  The cookbook has seen better days and I thought it would be good to post some of the recipes and keep them alive after the book has fallen apart. Also, I think it is a nice snap shot of the type of recipes these women (largely of Pennsylvania Dutch ancestry) of rural Pennsylvania where making in 1980.  The cookbook says this was the recipe submitted by the then Minister of the church, Pastor Harold Smith.
