I've made this often enough that I don't measure the spices but you should adjust them to your desired level of spiciness. It is a very tasty, not too hot chili that is just right for these cold winter days.  I added little cubes (less than 1/2-inch) of 3 uncooked chicken breasts to this chili about half way through the cooking for a little more protein, as though it needs it.  It didn't hurt one bit!  The author says this is a soupy chili but I did not find it so.  It has great flavor.  She cautions that the beans sink while the corn floats. 			<description>I like this as comfort food - it isn't gourmet, but it is easy to make, and I like the taste of it pretty all right, especially when I am in the mood for Mexican.  The key to this recipe is getting GOOD enchilada sauce - you won't be happy with the normal, Americanized El Paso brand, etc.  Go to the Mexican food aisle and get some of their sauce.  Additionally, good corn tortillas are also very, very important, and the cheaper ones are rubbery (mission brands aren't good).  

All spice amounts are general, and should be modified to taste ( you should start with less and build the sauce up to the taste you like with these seasonings). 			<description>Very easy to put together.  I have a 6qt All-clad crock pot with the insert that I'm able to use on the stove top as well, which comes in sooo handy.  Otherwise, just brown your beef in a large skillet, drain, and transfer to your crockpot.  This makes a good size batch so if your crock pot is much smaller, just try cutting the recipe in half.  If you work during the day, this can be thrown together the evening before, stuck in the fridge, then started before you leave for work. 			<description>This is a hearty chili without tomato chunks.  If you prefer chucks of tomato in your chili use diced tomatoes instead of tomato sauce.  This is just enough for a lunch for my husband, our toddler, and myself, but if we need a bit more I'd go to the 22 oz size of tomato sauce and or beans.  Do not leave out the salt since the little bit really brings out the other flavors.  IF you making a large pot to have left overs leave out the salt since chili always gets saltier as it stores.
