			<description>I concocted this on a cold, rainy Sunday and the family loved it! You can &amp;quot;take liberty&amp;quot; with the type of beans you add...whatever is in the cabinet.  We like it spicy, but you can use the milder tomatoes with green chilies if you don't like so much heat.  I also keep a bag of frozen chopped onions and peppers so putting this together takes about 10 minutes! 			<description>This amazing soup is from the highly acclaimed Saffron restaurant in Arrowtown, NZ. It is absolutely delicious with naan!! 
Notes: The recipe calls for Star Anise, however I usually substitute fennel seeds.. I also use coconut oil instead of peanut and 3 cans of tomatoes if I don't have fresh. If you can't find Palm sugar, try brown sugar.

			<description>This wonderfully healthy collards and black-eyed pea soup by Sarah Cooper is a natural for New Year's Day. It started as a Cuban-style collards soup that included bacon fat, short ribs, Cuban sausage and ham hocks. Eventually Ms. Cooper decided to &amp;quot;de-fat&amp;quot; and change some of the ingredients to typical  southern ones. The results are both aromatic and hearty, perfect on a cold day. To shorten prep and cooking time, you can use canned black-eyed peas, drained, rinsed and added towards the end of cooking time. Note: the recipe does not include soaking time for the dried peas. 			<description>A vegan adaptation of a Cantonese-American favorite.  Not hard to make but takes some time to stuff the wontons.  

Serve the wontons in a mild, low sodium vegetable broth (chicken flavor if possible).

You can double or triple the wontons recipe, lay them out on a cookie sheet, and freeze them, then bag them and take them out to make soup in small quantities. 			<description>If I recall correctly, this came from a package of dried beans.  It's rich comfort food that isn't really too awfully bad for you as most things in the &amp;quot;comfort&amp;quot; category are.  You could certainly substitute canned beans for the cooked dried beans and get the same result.  (If you do, don't add any salt, as canned beans are already salted.)  Time for preparation assumes dried beans and excludes the pre-soaking time of 24 hours.  You can use 1-2 cups frozen corn instead of canned if you prefer.  Two cans evaporated milk almost makes 3 cups.  I use that and add half and half to make the 3 cups. It contains the 13 varieties of dry beans as follows:  Baby limas, large limas, garbanzo, great northern, black-eyed peas, navy, black, red pinto, red lentils, green lentils, yellow splits, green splits,  and kidney beans.  Even my toddler had fun eating this soup.  It was almost like watching a kid sort their M&amp;amp;M candies into colors!  We took the opportunity to teach her the name of each bean as she picked it out to eat.  Be sure to plan ahead, as the beans need to soak overnight or for 8 hours before cooking.
