I had gone to the store to get ingredients to make a boring yet delicious butternut squash soup, but decided that I didn't want to make it.  As I sat in my car in the parking lot of our local grocery store, I had remembered weeks earlier about my wife saying something about a tortilla soup that she had tried a while ago.  I myself have tried the soup, but having already left the house, I had no way of looking up another recipe.  After a few more minutes of thinking, I went into the store, bought a bunch of ingredients, came home and started cooking.  What follows is the result. 			<description>Now the cold weather is coming in, we are going to need our comfort foods.  This recipe will satisfy anyone on a cold winter night.  I don't particularly like soups myself but this version turns it into almost a stew..i guess a real stoup, steaming mashed potatoes with gravy over them, chicken and veggies and even a pot pie decoration :) I add just a couple of tbs of dark rum or brandy to it, it gives a touch of extra depth.

I found this recipe on chaosinthekitchen.com and have had it open for days i so don't want to lose it, finally posting it  here.  She suggests using separate frozen veggies if you go frozen since they are normally more tender than the mixed but either way. or fresh of course. It was kind of spicy when I made it, if you don't like spicy I would substitute the peppers for just a green bell pepper.  Also, it calls for chipotle chili powder and I used just plain.  Any white bean would be good in this, I substituted one of the cans of beans for a can of hominy and added a can of corn. 			<description>Now, I have probably too many versions for chicken soup ... My favorite ... fresh vegetables, stock and herbs taking hours to make my own roasted stock, slow cooked and fresh made pasta. Well, I love it and for a special night, I actually go through all that work.  But, working full time, that opportunity just doesn't come around that often. So version #2. Now, I normally don't like packaged seasoning, and frozen foods are usually as a last resort, but hey...we all have a life, jobs, family and sometimes... shortcuts just have to be made and this is one. The best part is you can make the chicken ahead, and then put the soup together in 20 minutes.  For a quick soup, this is really good. Now you can always use the seasoning and add add fresh vegetables if you want, but this is my version of a homemade tasting soup in less time than it takes to go get take out. Make some grilled cheese sandwiches or some ham and cheese and you have a great comfort food dinner. The changes I made were using Turkey carcus for the broth and picking off the turkey meat to add back to the soup.  I also added 2 sliced green onions and cooked the veggies longer so they'd be soft.  I don't like my veggies crunchy in soup.

			<description>I came up with this after several attempts and still tweaking.  Starting with a bland one I found in a cookbook and deleted and added until I got the taste and consistency I liked.  Most of the ones I had tried were watery and bland.

This is a hot soup.  If you dont like hot and spicy, dont make it ,,, you wont like it.  Im from Texas where we like our women, chili and most everything else hot.  To make it even hotter, add the whole can of Rotel and leave the Jalape&amp;ntilde;o seeds in.

This will generously serve 6 people.  Add garnish if you must or just pour it up and enjoy with a cool glass of iced tea or man beverage of your choice.

You can use generic brands for the ingredients but if you are health conscious,  check the labels for fat and cholesterol content. 			<description>This is a recipe that I lost and just found today so I am posting it.  It was created by Michael Symon and posted on the Calphalon site many years ago. He states that this soup was made famous by his grandfather.  It is my all time favorite chicken soup although I have never had truffles to add to the dumplings. I am posting it in it's original form even though I cheat and replace about half of the chicken stock with water. I also simplify some of the stock making steps and throw some additonal minced tarragon into the final pot. I always make my recipe #407601 they really make a difference in the soup, 1 1/2 this recipe as you need more noodles.  I also use recipe#404067 for the potatoes, cut back a bit on the butter and milk when using in soup because all the liquid already gives it great flavor. 			<description>I got this fabulous recipe when I vacationed at Disney's Animal Kingdom Lodge. The soup was on the Boma - Flavors of Africa Buffet. When I inquired about a cookbook with the recipe, the waitress went &amp;amp; got the recipe from the kitchen. This is posted in the same manner I got it, but I'll tell you that finding 1 gallon containers of broth is difficult. So I use 10  14oz cans, it's a little more, but just as good. I also usually use 2 poblanos. Using ready to go chicken tenders is a big time saver. I just sautee them in a little sesame oil &amp;amp; garlic before I dice them.  This soup is very tasty and borderline addicitive. I've made several times since I got back. It is absolutley delicious the next day and freezes well. You can control the heat of this recipe by the type of salsa you add- I usually use mild. Whatever heat you choose, it should be fresh salsa so the cilantro and other flavours are strong enough. If you really like it hot, add some chillies! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!!
