White Chocolate and Maple Rice Krispie Squares

This is a yummy variation on the classic kids' treat.
I like my rice krispie squares to be heavy on the mallow so if you prefer, feel free to add more rice krispies to the mix!
I don't have easy access to good maple syrup this side of the pond so please feel free to adjust that amount too- 2 tablespoons of the fake stuff I get here is about right but you may need less of the real thing!
If you want to make less, half of this recipe fits in a loaf tin beautifully. -- posted by Shuzbud

Simple Berries and Cream: No Cooking Involved

When I was a little girl, I used to go pick wild blackberries with my Daddy. I'd get eaten alive with chiggers, but thinking about this yummy dessert made it all worth it. After we got a big container full, we'd drop some off with my Grandmother for a cobbler, but Daddy would keep at least 2 cups out for the 2 of us. This was our little treat!!! Today when I eat it, I still think of that time with my Daddy. Guess Daddy's girls never really grow up! -- posted by CharlieGal

Anzac Day Oaty Biscuits

I found this recipe for a healthier Anzac Day biscuit on the New Zealand Heart Foundation website. It comes from a program they have done aimed at schools. I was also drawn to it because of the lack of coconut which I was finding in a lot of Anzac Day biscuit recipe. Since I am not a fan of coconut these sound perfect for me. The recipe didn't give a yield. So, I am guessing on that. -- posted by Sarah_Jayne

Strawberry Cream Cheese Snacks

I was trying to find something to snack on one night, and I remembered reading another recipe about strawberries dipped in brown sugar, so I came up with this. Amounts are approximate, since you really just dip the cut sides of the strawberries in the sugar, and spread cream cheese on crackers... so it depends on how much sugar and cream cheese you like. This is the first recipe I have published on here, mostly because it's the kind of easy thing I like to find on the site and I didn't see anything like it. -- posted by Queen Roachie

Butterscotch Picnic Cake

Banana Health Muffins

Healthy, tasty and suitable for coeliacs, those with lactose intolerance and vegans alike.
Despite their healthiness, these taste delicious and the recipe can be adapted to suit any tastes and i recommend sprinkling the tops with a little muesli and sugar and serving them warm from the oven and drizzled with yoghurt if you are not lactose intolerant. For a nuttier flavour, the vegetable oil can be substituted for nut oil. Chickpea flour can be substituted for rice flour if you don't like the taste. Variations include adding apple, dates, cream cheese, cranberries and raisins to name a few...the possibilities are endless!
Black Bean Brownies

There are a few of these recipes on the net - this one belongs to Ani Catalano via 101cookbooks.com
Obviously these are much healthier than your usual brownie & great for those watching their weight. You can probably substitute normal or powdered (icing) sugar for the agave nectar if you can't get hold of any.
Tropical 7 Layer Twist Bars

*After making 7 Layer Bars for a bake sale at work, I started thinking about how well white chocolate chips and macadamia nuts go together. Then I thought, "Hey!!! What would happen if I threw them together with some pineapple and coconut?", and this is what I came up with ... A refreshing tropical twist on an old favorite.
Depending on how big you cut your pieces, you can get about 12 to 16 bars.
I also plan on making these in a mini muffin pan, to get some little "tropical tarts" -- posted by "Ratalouille"

This is a recipe I adapted from Allison Holst's Fruit Salad Muffins in her Muffins & Slices Cookbook. We didn't have any fruit salad, but we did have lots of apples that no one was eating. I added the spice, because not much can beat spicy stewed apples! These muffins are a perfect comfort food to wake up slowly with- coffee and hot apple spice muffins are a great way to meet the day. -- posted by MisChef-Maker

Kiwi, Strawberry and Grape Juice.

I got this recipe from 'The top 100 juices' by Sarah Owen, published by Lifetime Distributors, Castle Hill, Australia.
Sarah Owen says "All three fruits in this juice provide a massive infection-fighting boost of vitamin C and can help to shorten the duration of a cold. The kiwi fruit a also contain lutein, a phytonutrient known to reduce the risk of cancer, heart disease and eye disease. Both strawberries and grapes are high in ellagic acid, which neutralizes carcinogens. The tannins, flavones and active compounds in the grapes combine to make them energizing and strengthen the cell walls of blood vessels"
You could make more than one serving, and serve with lemonade and ice in a punch bowl for a party if desired.
I haven't made this yet, as I don't have a juicer, but if I ever get one, this will be the first juice that I make.
Enjoy! :) -- posted by TALIA #3

Summer Camp Gorp

I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. Also keep an eye on the oats as they're cooking, as all ovens are different, so they don't burn. -- posted by NapalmFairy

Mom's Simple Granola

My Mom literally makes this granola every other day. It barely makes it off the cookie sheet before it is gone. Great as a cereal with milk, as a snack, as a topping to yogurt, OR dare I say, a topping to create fruit crisp. I like to make mine with milk chocolate chips or dried cranberries, but you can add any extras you like! -- posted by Hadice

Spooktacular Halloween Pudding Cups

Super fun Halloween treats that the kids are sure to enjoy. Easy to make and look great to!! I got the idea off of another website that used chocolate pudding but I thought using vanilla and dying it orange would be really cool since the pudding and oreos together would be traditional Halloween colors. This recipe can be easily divided in half and so on. For the pudding I used the kind that you cook verses the instant. I think the cooked pudding has a much nicer and thicker consistancy. The amount below for the oreos is a guesstimate because it wouldn't let me put down 1 large package of oreos but either way just one regular package of oreos crushed is what you need. Enjoy! -- posted by mamawheezy

Strawberry Raspberry Smoothie

I made this completely by accident, and i love it! I use Yoplait thick and creamy yougurt, i think it gives the drink the best texture, and I also use the condensed frozen juice, welches white grape is the best, but apple also works, depends on how sweet you like it. I also found substituting 1 Delmonte Fruit chiller in polar raspberry tastes better to me than the frozen berries themselves. To each his own.
For a healthier smoothie use light yougurt, no sugar added juice, and skim milk. -- posted by Chef #1470073

Blueberry Muffins à La Alton Brown (Good Eats on Food Net

We tried this recipe because I was craving having blueberry streusel scones (# 244646) again. However, I am trying to cut down on my saturated fat and cholesterol, so we looked for something to fill that baked goods craving without blowing my daily saturated fat limit, and Alton Brown is often a decent place to start. We used whole wheat pastry flour with some flax meal thrown in for good measure, frozen blueberries allowed to thaw slightly, and a silicon muffin tin. They were somehow dense and light at the same time, and had an interesting buttermilk note (we assume from the yogurt). Also, Alton says muffins are really more like pancakes than cupcakes! -- posted by Michelle from Central Time

Sweet and Simple Couscous With Fruit

I adapted this from a recipe I saw on Everyday Italian. My local WinCo carries "Tri-Color" or "Rainbow" couscous, which I like for the aesthetics. For fruit, any dried fruit will do, but I like to use a combination of dried cherries, cranberries, blueberries, apples, and apricots. The flavors work really well together, and--again--the aesthetics are very pleasing. With smaller fruits like blueberries and cranberries, you can leave them whole.
