Crock Pot Sweet Potatoes With Apricot Pie Filling

My mother thinks this sounds like the recipe she used at Thanksgiving that I have been bugging her for. She can't find her book and she found this at About.com. I tried it today to take to a friend's Ayyam-i-Ha party, as he was making turkey. It was really good and got many compliments. I have to admit that during its day of cooking it reeked of garlic and I was a little worried about it. But when it was all done, it smelled good and tasted wonderful. -- posted by mliss29

These Baked Beans are without a doubt the most flavorful beans I have ever tasted. This recipe came from my wife’s grandmother. Be patient with cooking these beans. Do not stop cooking until they turn very dark.
Slow-Cooker Cheese Potatoes

I love my slow cooker in the summer---don't have to heat up the whole kitchen by using the oven! This recipe uses hash browns, potato soup, mushroom soup, sour cream, and two kinds of cheese. It's from the "Slow-Cooker Fix It and Forget It Cookbook," and is credited to Bernice M. Wagner of Dodge City, KS and Marilyn Yoder of Archbold, OH. -- posted by mailbelle

this is an easy side or main dish. the cheese is optional. we eat it as a main dish. I can't remember where I got the beginning of this recipe but I have adapted it so much I don't think it would be recognized anymore. I make this in a crock pot but it could be made in an oven in a covered dish at 350 degrees for 1 1/2 to 2 hours.
The title sums it all up. A lovely autumnal side dish that is very easy, delicious & healthy. A crock pot recipe that doesn't take all day! **I used frozen squash which worked great. Please note that whichever brand I used - it may or may not hold true for all brands - the dice was small. The apples need to be about the same size as the squash.
Crock Pot Potluck Pierogies With Sauteed Onions and Butter

Great idea for a football party, graduation party, any potluck get-together. I was assigned a hot side dish for a potluck work luncheon, served aside of hot dogs and other party appy's, and decided to try this out in the crockpot and it worked. It went over well; many people went back for seconds and came looking for the leftovers the next day.....it was the only dish that was gone! Very simple indeed, but it's one of those dishes that you hardly lift a finger yet it goes a long way. Would go great aside of hamburger BBQ, sausage sandwiches, bratwurst, hamburgers, etc or make as a main dish. Perfect if you don't have an oven or have limited oven space for your party cooking. I have figured on 16 servings/3 pierogies per person and prep time includes sautee of onion and butter. -- posted by TheDancingCook

Nif's Anytime Crock Pot Stuffing

This is an amazing stuffing that I make for every family gathering. We had it for New Year's Day dinner with roast pork and of course with turkey for Christmas! If you like stuffing, you can make this any time and your guests will be very surprised that it wasn't stuffed in a bird in the oven! Feel free to use different breads (whole grain adds a great texture even if you don't typically like whole grain bread) and/or play with the seasonings. You don't have to use the full amount of butter but it does add a lot of flavour. Make it your own and enjoy! -- posted by Nif

Simply the Best Green Beans

We eat these green beans at least once a week and I haven't found anything to top them. The secret ingredient is the spice blend. I originally found this blend at Gordon Food Services in Michigan. (I have to have my mom ship it to me once a year; the 26 oz container of the spice lasts me about that long). I recently tripled the recipe and took them to work for a lunch for 20 people. Personally, I still like them better from the stove top but I would take them again in a crock pot knowing that I need to stir often so the beans on the outer edge do not get over done. (People did actually go back for seconds) -- posted by Foodie Friend

This is what my Mom used to make when we were kids. They are super easy to make and are great made on stew, roast or soup. They would probably work on casseroles if there is enough liquid but I haven't tried that yet. Add whatever herbs you think will compliment your main dish. Enjoy! -- posted by Nif

Easy Slow Cooker Applesauce

I came up with this recipe after I had bought too many apples for me to eat before they started getting soft. I didn’t want to waste them or my money so I used what I had in my house for spices and poof! Out came this recipe. You can really use any kind of apple you want, Mac’s are usually less expensive than most other kinds of apples. The coriander and lemon juice add great brightness to the apples.
I like to eat it plain, but it’s great stirred into hot cereal, or on top of your favorite vanilla ice cream with a little caramel sauce on the side, it tastes like an apple turnover! I know that the spices seem minimal, but they add such a great flavor that’s not overpowering. -- posted by nicolygoay41

Guinness and Jameson Baked Beans

I like using Guinness in savory dishes, particularly those that are slow-cooked. This summer, I came up with this recipe for baked beans and they were a big hit. Given that this year is the 250th anniversary of Guinness, I thought I'd share and make it slightly more Irish, if not in tradition (these are much sweeter than Irish/British beans), then in ingredients, by making the whiskey Jameson. Feel free to use any whiskey you like (same with the beer actually) and they're still great. For those looking for a non-alcoholic beer substitution, try O'Doul's Amber, which is a really useful cooking beer that happens to be non-alcoholic. I buy my onions pre-diced and frozen and my garlic pre-diced in a jar.

Note that this recipe is made to fill my large oval crock pot and will NOT fit in the standard round ones. Split in half for that. -- posted by JWynia

Chuck's Daddy-O Beans

In 1990, I was fortunate to get involved with a great family who gave me a home and a place to feel safe (thanks, George) and pretty quickly, I came to think of Chuck as "dad". I don't know where he got this recipe or how much trial-and-error was involved, but whenever the family gets together...these are always at the top of the request list. I recently got it from him as part of an online recipe exchange. The secret is the flavor of the teriyaki sauce cooking down and bringing the whole thing together; he prefers the brand sold at Costco but use the one you like the best. I also think the green chiles are just as essential to the finished dish as well. Add more or less of any of the ingredients to suit your taste and whatever brands you prefer--that is the beauty of this recipe. For extra pizzazz...throw in a pound or so of ground meat...pre-cooked or just broken up. -- posted by Hungry Hogareno

Butternut Squash and Potatoes With Rosemary

From the Italian Slow Cooker by Michele Scicolone. It's wonderful to be able to use the slow cooker to make side dishes, especially on those occasions when the oven is engaged by the main event. You cannot go wrong with butternut squash, potatoes and rosemary. While this appears in an Italian cookbook, the ingreidets are very familiar to North Americans, as well. -- posted by duonyte
