Japanese Egg Salad - a Twist on Eggs and Mayo

Chilled, crisp salads are one of the great summer dishes, and a refreshing eat-it-anytime meal. Almost any food can be a part of an enticing salad -- vegetables, fruits, pasta, potatoes, meats, cheese, herbs. This Japanese Egg Salad showcases fluffy white rice, shrimp, hard-boiled eggs and Romaine lettuce leaves; tossed in a tangy French dressing with capers and chives. A delicious alternative to the same-old, same-old egg salad. -- posted by Feast Your Eyes!

Spicy Asian Tuna Salad

Do yourself a favor and try this fabulous variation on traditional tuna salad. It's good for everyday use on top of a salad with an asian vinagrette and can also be served with crackers at a dinner party. If you like a little crunch in your tuna salad feel free to substitute red onion for the green onion or add some chopped up celery. I created this recipe on a whim for use in my sushi rolls and have it posted under "Spicy Tuna Salad Sushi Roll" with a lot of detailed instructions on how to prepare the rolls. -- posted by OwlMonkey

Light and Versatile Seafood Salad

I initially wanted to make a lower-calorie version of seafood salad (the kind that often goes on a sandwich), and then when I threw it together the first time just wanting to see how it would taste, did less chopping. With larger pieces, it's great as a stand-alone salad, and more finely chopped works as a dip or would go well with pasta. -- posted by Chef #1322378

Crabby Avocado Salad

This is from a South Beach cookbook, but I like it with imitation crabmeat a lot better. The original recipe also calls for the jarred roasted red peppers but I find I don't really miss it if I don't have them. One of my favourites and it's even good thrown in a tortilla with a little lettuce for a sandwich! I will say though, it doesn't keep that well - eat it the day you make it as it get kind of watery and the avocado gets a little mushy the next day. I also usually just wing it with the cayenne, depending how much spice I feel like and I add more cilantro sometimes because I love it! -- posted by Cadillacgirl

Curried Quinoa Salad With Yogurt-Cumin Dressing

This is a "flexitarian" recipe - meaning, it's readily adaptable to a vegetarian/non-vegetarian version - a boon for those who have to deal with both in a household. While this recipe is vegetarian, the author, Dawn Jackson Blatner, says 4 ozs of cooked salmon or tuna can be used instead of the chickpeas. Check your quinoa package for prep information - usually quinoa needs to be washed to get rid of a bitter coating, although it sometimes comes pre-washed. -- posted by duonyte

Penne and Tuna Pasta Salad

I was in search for a pasta salad that had tuna in it....I came across a recipe that I thought would be perfect but made so many changes I had to post it as a new recipe. I hope you like this recipe as much as I did. Cook time equals cook time for pasta.
Lemon-Garlic Marinated Shrimp (Ice Cold and Refreshing)

I found this recipe on the Eating Well website amongst the diabetic friendly recipes. It's supposed to be an appetizer but I served it over a nice salad as a cool, refreshing summer dinner. We loved it. The shrimp are super simple to prepare and they tasted great hot or cold although they are meant to be served cold. Serves 12 as an appy but 6 as a main course. -- posted by Realtor by day, Chef by night

Seafood Cobb Salad With a Florida Twist

This is classic Cobb salad flavors, but a definite twist. Smokey turkey bacon, mango, seafood (crab, lobster and or shrimp) and a fresh citrus vinaigrette, but just as good. Now for expense reasons, I love shrimp and crab, but by all means, use lobster for the ultimate if you want. I try to use some good crab (canned is fine) as well as some great shrimp from your local grocer. You can even use some grilled salmon which is just as fine for this.

I love this elegant salad. You can vary the greens if you want some fresh spring greens, arugula or even watercress, but I happen to like romaine for my salad. Also I like to use the classic flavors of egg, bacon, tomatoes, but I love to add some onions to the salad base and then the fruit gives it a nice twist with the seafood and the citrus vinaigrette is a nice change. I still top with gorgonzola for the bleu cheese lovers for some of that basic flavor and then top with with fine chopped walnuts for some crunch. But have fun, use your favorites... nothing wrong with changing it up a bit.

Yes lots of ingredients, but nothing hard, just some chopping involved, but it makes a great hearty salad. Fun for entertaining. Serve a nice bowl of fresh soup to start and then some homemade bread with the salad ... that is a very hearty dinner and a nice change from heavy pastas, sauces and casseroles. But I'm a big salad person, so I love it and it is always a crowd pleaser. This makes 4-6 nice full size salads or 8 smaller salads for an starter. -- posted by SarasotaCook

Pepper Crusted Tuna, Mustard Sauce and a Pea Shoot Salad

This was adapted by a friend of mine ... who got it from a caterer ... who got it from a friend ... who got it from a magazine, who got it from WHO KNOWS where. Well you get the idea - then I got it. Regardless, I love it and have been making it for a couple of years and it certainly isn't difficult and I love that pea sprouts have become more widely available this days. The sprouts or also known as shoots and tuna mix nicely with the tangy mustard sauce to make a very easy quick dish to make. It literally takes 15 maybe 20 minutes to make. And agreed you will pay a little premium for the pea sprouts but you could also use other micro greens or spring greens, but you don't know what you are missing until you try them. And the tuna ... buy it when it goes on sale, that is when I do. This is rich in flavor but at the same time very delicate and well worth the extra money for a nice Sunday dinner or for company. Just add a soup to start and maybe some grilled bread to make a perfect dinner. -- posted by SarasotaCook

Shells Stuffed With Fresh Tuna Salad and a Tomato Vinaigrette

This is quick, easy, and makes a great light dinner. I love salads, and love to try to come up with something new that is still hearty, satisfying and easy. I love to serve this with a hearty creamy white bean soup, or maybe a fresh garden potato soup or your favorite. Also, fresh grilled asparagus, grilled zucchini or marinated mushrooms or some green beans. I serve these pretty shells over a small bed of lettuce and let the fresh tomato vinaigrette be the dressing for that as well. One last note ... you can use canned or packaged tuna (I prefer the packaged, much nicer texture), but I use fresh tuna for this. It literally takes 5 minutes or less to saute, let it cool as you cut up and prepare everything else. Stuffed shells and then drizzled with a fresh tomato vinaigrette over fresh greens makes a great salad option to that every night tossed salad. I don't like this as a cold salad but room temp, I find the room temp really accents the flavors rather than hides them. -- posted by SarasotaCook

Old Bay Shrimp Salad

A recipe from Old Bay - This salad - creamy in texture with crunchy bits of celery and plump shrimp - is very tasty! It can be served up on crackers, in a croissant or rolled in lettuce bowls. Tomato-lovers, try it stuffed in a fresh tomato. Think quick lunch or light supper.
Cool Asparagus and Salmon Salad

As we go into summer in the Southern Hemisphere, with temperatures already in the 30 degrees Celsius some days, a cook's thoughts lightly turns to thoughts of salad, to paraphrase Keats or Shelley! I am extremely fond of cold-smoked salmon. We also love green asparagus. Put them together, add a few extra taste notes, and you have a nice salad. This can either be a starter or a light, non-fattening lunch with an icy glass of Sauvignon Blanc! (I used local salmon trout instead of our very expensive imported salmon). Exact quantities are not of great importance here. -- posted by Zurie

Gazpacho Shrimp Salad

This is great to serve anytime! Makes a great lunch and a fine dinner if you toss a little wine and a loaf of crusty bread in the deal! You can use whatever vinegar you like, and can add, after tasting, more. Nakano makes several seasoned vinegars that are scrumptious! Smoked paprika is one of the best seasonings I've ever used; you can't believe how fragrant it is nd the taste is amazing. However, having said that, it is very pricey. I cannot advise you excpept to tell you that without it, the recipe won't taste the same. -- posted by FLUFFSTER

Lobster, Shrimp Salad With Greens in Orange Cups

I call this my entertaining salad. It is just so pretty and always is a hit. Guests, family, dinner party, special night for you and your other half, or just a special one night salad. Now, I add lobster to mine, but with the combination of the shrimp and fruits, it really isn't too expensive. If you can't find fresh shrimp or lobster, frozen will work just fine. Just look for the frozen lobster tails when they put them on sale - One nice size tail is plenty for this recipe. It is just is a great presentation. -- posted by SarasotaCook

This is a delicious recipe from Weight Watchers New Complete Cookbook.
The crunchy tortilla cups soak up the yummy dressing and become a treat on their own.
To make the tortilla cups use my Recipe #381215
The Weight Watchers cookbook calculates the calories to be 307. Zaars calculation is lower which would make the points value lower as well. I think the cooking spray might be counted in the calorie count by WW. -- posted by Dreamer in Ontario

Kristen's Kickin' Quinoa Salad

I was recently sold on quinoa and how awesome it is! Gluten free, an almost perfect protein, easy to prepare, the list goes on! This is a combination of two recipes, one of which I altered. The first is from this site, (#16399, Quinoa-Toasted). The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes. We thought it tasted a bit like sushi and loved it! Feel free to add more heat, but this had enough for our family as we've got wee ones. A large portion of the cooking time is cooling time. -- posted by SandwichQueen
