Chicken Salad Deluxe

Buttermilk dressing, macaroni, grapes, almonds and water chestnuts give chicken salad a new twist. Given to me by a dear friend, this is delish! This serves 20! Due to the chill times, prep and cook times do not include overnight chill. If you are unable to find Beau Monde(by Spice Islands) at your grocery store, it is available online. It's a great all around spice that I bought after tagging recipe #184001. -- posted by BakinBaby

Jalapeno and Pesto Chicken Pasta Salad

This is a delicious, cold chicken and pasta salad. Very healthy as well. It takes less than 10 minutes to put together and is bursting with flavor from only a few ingredients. I prefer using two jalapenos (SEEDED) but if you want only a very little spice to it, just use one. I wouldn't skimp on any of the ingredients, they all make this salad what it is.

Perfect for any BBQ or gathering or just a super quick dinner on a night where you don't feel like cooking or heating up the house. -- posted by Melvin'sWifey

If I could only eat one thing for the rest of my life, this would be it! It's so good, i make it whenever i go to barbeques or dinners and it's always popular (i'm usually first in line!). This recipe does make a lot (as a side), so if you're just making it for your family feel free to reduce it by a half or two-thirds, otherwise you may be eating it for the next week! -- posted by Hayley_11

Ranch Chicken Pasta Salad

It's too gorgeous out to spend much time in the kithen, but I was pretty impressed how a package of Kraft Classic Ranch with Bacon Pasta Salad can be doctored up to taste homemade. I threw in an extra tomato because it tastes fresher and some extra chives. You could probably top this with nuts or cheese or olives...whatever your heart desires. I think this would make an easy potluck dish or a whoops we have unexpected company and now what are we going to feed them last minute meal.
Potluck Macaroni Salad

I found this online and did a few changes to our family's taste. We ended up taking it to potluck dinners and thus the name. It always disappears so we know people like it as much as we do. I kept misplacing the recipe, so put it on here to keep it where I can find it...lol Prep time includes the time for hard boiling the eggs.

From Southern Living, May 2009 (recipe by Shirley Wood, San Antonio, Texas) this versatile and hearty dish makes a great one-bowl meal.
Skinny Bride's Guide to Pasta Salad

From bettycrocker.com they credited it to eatbetteramerica.com I found it while looking for low calorie high taste substitutes for my creamy calorie and fat laden favorites. I eat this a lot during training for a marathon b/c it is high in carbs and protein but low in fat! Perfect for all you runners out there! Great for everyone commited to an overall lifestyle change! 2 hours cooktime is chill time. Also, Sometimes I use turkey lunch meat (smoked, highest in protein lowest in fat I can find) instead of cutting up an actual breast. -- posted by SarahBeth131

Sarasota's Light Version of Pasta Caesar Salad With Chicken

This originally came from a cookbook which I sold. I think Cooking Light or Prevention Magazine, but I just copied the recipe on a index card so this is all I have. Besides I think I changed a few things along the way.
Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored.
Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. I love the extra flavor of the breaded chicken to the salad. -- posted by SarasotaCook

This is one of our favorite pasta salads. It makes 4 big servings (full lunch) or 8-10 side dish servings.
Israeli Couscous, Tomato and Mozzarella Salad

My modifications to #116054. The Israeli couscous really makes this a wonderful salad. A small round pasta such as Pearl Pasta can also be substituted. Can be served right away, but best if refrigerated for a few hours. Great for using up tomatoes and basil from the garden. If using larger tomatoes, dice and drain prior to mixing. -- posted by Chef #609434

World's Greatest Macaroni Salad (Seriously!)

A neighbor shared this recipe 30 years ago and it immediately became a "must have" at every family get-together! Feel free to play around with the sugar & vinegar a little - we like it a little more "zippy" but you can tone it down and make it a little sweeter if you want. This is going to look a little runny when you first stir it up, but the dressing thickens quite a lot as it chills! -- posted by Park Rangerette

Tortellini Salad

A simple tortellini salad with veggies and a vinaigrette dressing. Simple, and tastes great warm or cold!

I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like!
Shells Stuffed With Fresh Tuna Salad and a Tomato Vinaigrette

This is quick, easy, and makes a great light dinner. I love salads, and love to try to come up with something new that is still hearty, satisfying and easy. I love to serve this with a hearty creamy white bean soup, or maybe a fresh garden potato soup or your favorite. Also, fresh grilled asparagus, grilled zucchini or marinated mushrooms or some green beans. I serve these pretty shells over a small bed of lettuce and let the fresh tomato vinaigrette be the dressing for that as well. One last note ... you can use canned or packaged tuna (I prefer the packaged, much nicer texture), but I use fresh tuna for this. It literally takes 5 minutes or less to saute, let it cool as you cut up and prepare everything else. Stuffed shells and then drizzled with a fresh tomato vinaigrette over fresh greens makes a great salad option to that every night tossed salad. I don't like this as a cold salad but room temp, I find the room temp really accents the flavors rather than hides them. -- posted by SarasotaCook

Gourmet Pearl Couscous Salad With Vegetables and Cashew Nuts and

Blu Gourmet Pearl Couscous (GI 52) now carries the GI Symbol. Unlike traditional couscous, pearl couscous which takes its name from its pearl-like shape and size is often described as a ‘toasted pasta specialty’. Like regular pasta, it is made from hard (durum) wheat and water. But instead of being dried, it is toasted in an open flame oven. It has a rich, nutty flavour and a chewy texture, with a smooth, almost buttery mouth feel. It makes a perfect side dish to meat, poultry, or fish instead of potatoes, rice, or traditional pastas or couscous. It cooks in around 10 minutes by the absorption method – just like rice – and you can also use it in a variety of dishes – just like rice and other pastas. Product ambassador, chef Gabriel Gate, has developed a number of recipes using pearl couscous. You’ll find it will serve around 10 people at a barbecue and is a great way to use up leftover vegetables.
