I prefer it with bacon fat (I'm the sort of person who keeps bacon drippings in a canister in the refrigerator), but if you don't have any on hand, or want to make this recipe vegetarian, it tastes almost as good with vegetable oil. Black beans are my favorite, but you can also make this recipe with nearly any other type of canned bean. I've used pinto, kidney, cannelli and even chickpeas. 			<description>Polo (a Central Asian variant on the word pilaf) is a food staple found across Central Asia, including Kazakhstan, Kyrgyzstan, Uzbekistan, Turkmenistan, Tajikistan, and parts of northwestern China.  The different peoples of each region have their own takes, and their own flavors, for the recipe.  This recipe is for Uyghur polo, the variant of the dish found in China's Xinjiang Uyghur Autonomous Region.  Uyghur food is on the whole closer in taste to Indian, Persian, or Mediterranean food than it is to conventional Chinese food.

I credit this recipe to my Uyghur language instructor. 			<description>I found a similar recipe on another site, but am really curious as to nutrition values as I make this ALL the time.  Its a little different every time I make it, but i'll post the most usual recipe. I portion it out and freeze the leftovers .. makes for delish lunch or quick dinner!  Can really make it your own, and honestly you cannot taste the pumpkin.  ( I made this for my mom and her beau, who turns his nose up at anything healthy, and he LOVED it!)

I usually use 1 lb of ground chicken breast, but today I made it with 1.5lbs of shredded chicken. I have to say, I LOVE it with the shredded chicken. would make a great sandwich!

			<description>I first was introduced to this recipe when I was reading the book, &amp;quot;Belong to Me&amp;quot;, when the main character &amp;quot;would have sold her soul&amp;quot; for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese! 			<description>This recipe originally came from one of those Gooseberry Patch cookbooks but I added more ingredients and doctored this chili up quite a bit. When I first tried it, it seemed to need more than the original recipe. Here is what I came up with and usually it's a hit. I like to add a little red pepper flakes (not cayenne) cause with the pepper flakes you can play around with the temp of it. I like this on hot dogs too! 			<description>I got this recipe from my friend.  I have  been making chili for years, and recently made her recipe, and my family raved over how delicious it was.  I'll never make my old recipe again.  Absolutely delicious.  The corn is optional but we really like it.  Also, I do not cook the celery with the ground  beef so it is a little crunchy, which is what I prefer.  If you prefer, cook it with the beef and onion.  I make this in a large crock pot, but you certainly could do on the stove top.   I used whole wheat spaghetti for the pasta, and regular olive oil, you could use what you like.
  I was hoping to have some of this left over for the next day but I ate it all that night.  I put down 2-4 servings but I ate it in one.  Sorry!!

The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes.  We thought it tasted a bit like sushi and loved it!  Feel free to add more heat, but this had enough for our family as we've got wee ones.
