I avoid any vegan cheesecakes that call for tofu because the texture turns out funky, and tastes, well, not like cheesecake should taste like.  This variation is great for the holiday season!  You can make your own crust or find a separate recipe for a cheesecake crust, but I wanted to save time so I just used the pre-made crusts. 			<description>This cheesecake has been the all-time favorite of my family since it appeared in the 1981 issue of Woman's Day Dessert Lover's Cookbook (magazine). We like it topped with ready-made cherry pie filling, but I have submitted the recipe with a pineapple topping as originally written. With 40 ounces of cream cheese, it is simply the richest, best tasting cheescake we have ever had. This recipe does not call for a hot water bath during baking, so I'll leave that decision up to you. Also, I have used a 10-inch springform pan with no problems. It still makes a nice tall cheesecake. Prep and cooking times are approximate and do not include cooling/chilling time. Because of the amount of time it takes to prepare, bake, cool, and chill, I usually make this the day before I need it. 			<description>This is borrowed and adapted from a chocolate cheesecake recipe on the Food Network.  Nice and rich, easy to make.

For the cranberries, get some whole berry sauce, and stain off the syrup, or (better) simmer fresh berries in a light sugar syrup.

I have since used an acid reduced cranberry called Berry Bits, from Alpine Foods.  These are really great as they are like cooked cranberries, without all the sugar, so you an eat them straight or add them to anything as you would say blueberries. 			<description>Okay so this is just an ordinary cheesecake with a little twist. I remember this recipe because my manager and I was trying to figure out how to make a cheesecake unique and great. Some people uses sour cream and some people don't. Some uses evap. milk and some people dont. We werent exactly sure what would taste better and what would make the cake smooth or etc. So we came up with this! HOPE YOU ENJOY IT!

You will need a Springform pan or if you dont have won, just use a 9inch round pan with foil paper. Make sure to wrap the whole pan with foil!

As for toppings, you may use anything you like.
Whipped cream
Strawberries or blueberries or cherry or any fruits
Strawberry or chocolate syrups. Any syrups to your liking.

			<description>These are really great luxury biscuits. Simple to accomplish but just perfect for a night in, picnic, kids lunch boxes or to show off at the next coffee morning! ;P 
I usually make these in an 8x8 square tin and (when done) cut into 8 long strips, then half each strip - i.e. you should end up with 16: 1 inch wide x 4 inches long, fingers.
If you cannot find any freeze dried raspberry pieces then you can use just the sauce for the biscuit, but use an extra teaspoon to get the flavouring.

You will need mini-muffin tins to do this, they usually hold about 12 mini-muffins and the recipe yields 48. And yes, 1/8-tsp spoons are actually made! You can find them at Family Dollar. If you don't have this size or a sliding spoon to use, about 10 drops will equate to 1/8 tsp.
