Cinnamon Pecan Pie Shell

This is a simple pie shell recipe that is a great alternative for those on a no grain diet. You can make this for any kind of pie. I made it with pumpkin pie and it was great. You can also use, almonds or walnuts if you prefer. -- posted by RawwGurl

Everyday Simple Chestnut Cake

This simple Italian dessert is a regional specialty of Tuscany. I found this recipe while looking up stevia. Stevia is a sweetening alternative, so you could use a Tablespoon of sugar (or less raw organic cane sugar,) rather than the stevia if you prefer totally natural foods. I suppose you could use the other alternative sweeteners -- I just don't like/use any of them. -- posted by Yum Mum

No-Flour Hazelnut, Chocolate and Cinnamon Cookies

This is a recipe by famed Johannesburg caterer and confectioner, Tony Scorgie, and I hope she doesn't mind me sharing this with you. Tony has the amazing ability to "throw together" things and create great food. If using Splenda or Sugalite (South Africa) it should be a fairly diabetic-friendly recipe. -- posted by Zurie

Big B's Pancakes (Dairy Free, Diabetic Friendly)

My late dad was a fabulous cook. My mouth waters when I think about his concoctions. He owned a pancake parlour and this is his pancake recipe that he used and that I memorized as a young girl. Fortunately it is dairy free so it works well for my dairy allergic son. My dad insisted that this recipe worked better if the batter aired for at least an hour prior to cooking. The batter can last in the fridge for up to 24 hours. I usually use 2 pans simultaneously to halve the cooking time, so the cooking time specified in this recipe is for the whole batch using 2 pans. -- posted by Cheron

Sugar Free & Reduced Carbohydrate Chocolate Pound Cake Mix

Original recipe for a sugar free pound cake. There is a slight grainy texture due to the almond meal used in place for a portion of the flour, but personally I don't mind at all. This is best served the day or day after it's made as it dries out relatively quickly. Left overs may be dried completely and crumbled to be used in place of graham cracker crumbs or slices left whole to be used to make chocolate french toast trifle or tiramisu. Waste nothing! -- posted by the werecat

Sugar Free Oatmeal Raisin Spice Cookies Mix in a Jar

My personal version of a recipe I found on www.budget101.com. I wanted to do more than just have a good sugar free cookie since the starchy carbs in the flour will also jack blood sugar. This version comes out fantastic! They are more cake like than a standard crisp cookie and stay wonderfully moist in a cookie jar. Not that they will actually last long enough to worry. -- posted by the werecat

Buckwheat-Yogurt Banana Bread (Guilt-Free)

I came up with this recipe to use up some extra bananas and yogurt, but since I live alone, eating a whole banana bread to myself is... well... pure gluttony. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. If you are used to regular store-bought over-sweetened cakes, I recommend you increase the amount of sugar in the recipe or, you can use these tricks: use over-ripened bananas (they are sweeter), use sweetened applesauce and/or vanilla yogurt instead of plain. -- posted by Génial Génie

Anzac Day Oaty Biscuits

I found this recipe for a healthier Anzac Day biscuit on the New Zealand Heart Foundation website. It comes from a program they have done aimed at schools. I was also drawn to it because of the lack of coconut which I was finding in a lot of Anzac Day biscuit recipe. Since I am not a fan of coconut these sound perfect for me. The recipe didn't give a yield. So, I am guessing on that. -- posted by Sarah_Jayne

Makeover Strawberry Cake

This recipe utilizes a cake mix to make a quick easy dessert. It's called a makeover strawberry cake because the recipe was changed to lower the fat and cholesterol. The icing has less sugar and butter and the cake uses less oil. I must confess that I just threw in 4 whole eggs, but I don't think you'd miss the yolks. I also used regular strawberry gelatin instead of sugar-free and fresh strawberries instead of frozen. Recipe from Taste of Home Healthy Cooking June/July 2009.
Virtually Fat Free Banana Bread

My grandma raves about my banana bread, so I am constantly making it for her. I decided to play with the recipe to find a "better for me" option, and the results were amazing! I think my "healthified" banana bread tastes better than the full fat version! I usually add in chopped walnuts, but they add fat, so this is optional. This makes a lot of bread, so I usually half the recipe. Enjoy! -- posted by Health Nut 101

Splendid Diabetic Carrot Cake

This is my doctored-up version of my Grandma Joyce's incredible carrot cake, and it is delicious! I've been low-sugar/sugar-free for several months now and really wanted this cake, so I reduced the oil, substituted Splenda for sugar, and used whole wheat flour. The icing option is high-fat but really tastes great, even with Splenda in it (and I haaate Splenda's aftertaste!). I don't recommend making substitutions for this recipe, as the nuts and pineapple are crucial for the flavor and texture of this cake.
Vanilla Almond Panna Cotta

My husband and I both adore silky, smooth, and lightly sweetened panna cotta. I got this recipe from Cheryla33 at All Recipes.com (http://allrecipes.com/Recipe/Panna-Cotta/Detail.aspx) but tweaked it just a bit. The original recipe is in the link above . . . I have decided to make mine sugarfree by using Splenda.
Sugar-Free Strawberry "shortcake" Dessert

This is sooooo easy and light - and YUMMY!! For the 4th, I added the layers of blueberries and blue Jello, but I usually just use strawberries.
When I got this recipe, it called for regular cakes and Jello, but because there are some diabetics in my family, I tried using the sugar-free angel food cakes (Walmart) and Jello - no one can tell the difference. Everyone loves it and because it is so easy to do, it is one of my all-time favorites!

I found this in a Diabetic cookbook and were so good! They were like a light cheesecake, but even better!! The only change from the listed ingredients and what I used was they had Sugar Free Lemon Yogurt listed and I couldn't find that anywhere, but I did find Dannon Light and Fit Carb and Sugar Control Vanilla Cream Yogurt. I used that it may have made them even better!! Also you can substitute Splenda for the Sugar. I tried to write the recipe that way, but it wouldn't let me.

Almond Tahini Date Balls

Very Middle Eastern and very tasty. A somewhat sophisticated brunch treat if you will, and would also make awesome finger food for tea or a dinner party. Especially if it's one of those where the meal is light but hors d'oeuvres are heavy. And can you believe this awesome treat is healthy and vegan? I couldn't! For some ideas, try a mix of Chinese red dates (I used 100%) with traditional dates. Put in a dash of ground pistachio and/or cardamom, how about a teensy bit of honey? There's a lot more I plan on doing with that huge thing of almonds I bought at BJ's.
Found on the internet somewhere, don't remember where. If this is your recipe or you know where it came from, just drop me a line so I can give credit where it is due. -- posted by the80srule

Sugar Free Pumpkin Bars With Cream Cheese Frosting

Completely sugar free dessert! I've been experimenting with a sweetener called "Xylitol" that I buy online and will gradually post recipes with my successful results.

I promise never to post a recipe that hasn't passed the "Kid Test". I have four kids who are very, very finicky eaters. My kids CAN tell that these aren't made from real sugar - mostly because I don't have real sugar in my house anymore. But they still love these. I have also served these to friends without anyone knowing they weren't "normal" pumpkin bars.

I started looking for a sugar substitute when a dear friend had surgery and became completely intolerant to any processed sugar. Splenda doesn't agree with me and I always prefer 'natural' options when possible. Xylitol IS more expensive than sugar, so experimentation is frustrating sometimes. I hope you will enjoy my successes without having to endure the waste I've had. It has 40% less calories than sugar, 75% less carbs, and has a glycemic index of 7 (compared to sugar at 68 and corn syrup at 100) and my friend can enjoy sweets once again!

The key to using this in place of sugar is to MELT the xylitol before adding it to the recipes. I just melt mine in my pyrex measuring bowl in the microwave. I have found it's very important to MELT the Xylitol but not BOIL or otherwise over-heat it, because it does alter it's consistency like sugar. If you heat it too long, when it cools, it becomes rock hard. (I'm still figuring out how to use this to my advantage in fudge and caramels - I'll post when I get a successful outcome.)

This pumpkin bar recipe is an adaptation of one I have in an old Better Homes and Gardens cookbook. I also use only whole-wheat flour and try to skim some of the fat (though not all, in order to keep a nice degree of moistness).

I buy my Xylitol online. Some bigger cities might have natural/health food stores that sell it in the store, but nothing near me. I pay about $25 per 5 pound bag, so shop around. For me and my family, the switch is worth it. -- posted by Bizy_Mum

I haven't tried this recipe yet but I couldn't pass up posting it because I don't want to lose it and others might enjoy a "legal" cookie recipe. I'm totally guessing at the yield. Zaar is listing the calorie and fat content (mostly fron the nuts) for a dozen cookines. Dividing 12 into that amount breaks down to each cookie having 33.5 calories. If you wish to lower it more just use less nuts. -- posted by Annacia

Pumpkin Ginger Muffins or Cupcakes

Use white flour if you prefer, but I think the wheat gives it great texture!

Tweak the spices to your liking...I use 1 Tbs each because I like the spicier holiday flavour. Add allspice and/or other holiday spices...

I've also used vanilla yogurt and it adds a soft variation more for a dessert type muffin.

Also try topping with cream cheese icing (check my recipe I posted!). Sometimes I even add a little cinnamon, ginger, etc or a mix of holiday spices to the icing.

Use smaller muffin pans to make a nice snack for your meal or a quick breakfast. You can even freeze them! Try making a loaf cake as well. -- posted by GoldsmithLissa

“guilt-Free Ice Cream Wannabe”

This delicious low-calorie dessert is a great way to satisfy your craving for a big bowl of chocolate ice cream without blowing your diet. The thickness of the Greek yogurt provides the creamy texture of ice cream for just a fraction of the calories. Also, by using frozen berries, the yogurt freezes as they are mixed in, giving the cool, frozen texture of real ice cream. The Fiber One cereal sprinkled on top provides a nice crunch and textural contrast - enjoy! -- posted by Chef #1453068

Creamy Quinoa Mousse

VERY healthy dessert or breakfast. This is the kind of recipe where you like it or you don't... if you do, you're in for a treat (there'd no guilt, it'ts even good for you!!!). The texture is slightly fibrous, due to the quinoa. Can be served warm or cold, l prefer mine partially frozen (I place them in individual cups, then freeze for an hour). Adjust spices to your taste. You can sub the milk for soymilk (if using vanilla flavoured, omit sugar and vanilla from ingredients). -- posted by Génial Génie

I adapted recipe #63501 to my current diet which limits sugar and fats. Healthy Omega 3 fats, such as that found in walnuts are encouraged. -- posted by JoMomma in Louisiana

A low-carb alternative to yummy cheesecake!! I used this recipe while following the hCG diet which eliminates all starch and sugar. With a little bit of cool whip on top, you'll feel like you aren't missing out on a thing! I found this recipe on a forum I am a part of. Delicious! -- posted by Chef #1530734

Low-Cal Chocolate Wasabi Pudding

Adapted from recipe #409244 - reentered to get nutrition information for the low-cal version. As noted there, "Instant chocolate pudding is deepened with additional cocoa powder, heated up with wasabi powder and brightened with lime zest. It will get hotter if left to stand, so if you can't eat it all, start with the lesser amount of wasabi. Be sure to use Dutch cocoa powder; natural isn't as deep in flavor. Adapted from a recipe by Kerry Saretsky at Serious Eats." http://bit.ly/4Ij62A -- posted by DrGaellon
