Rhubarb Crisp: a Celebration of Summer!

My rhubarb flourishes at the end of my clothesline, right next to a patch of hollyhocks that sway in the summer breezes. Right now there are some little birds (I can't make them out with my spotting scope) snatching up pine needles and flitting about busily. Anyway, this recipe comes from the June '09 issue of *Country Living*. I do live in the country, and have an abundance of rhubarb. It's easy to freeze the cut-up pieces, and if you toss the pieces with sugar (right in the zipper bag), you can pop it in the freezer and use them later. The extra sugar will be fine in the recipe! -- posted by Debber

Caramel Apple Salad (Fluffy Apple Salad)

I got this recipe from my little sister. It was called Caramel Apple Salad, but I personally don't think butterscotch pudding tastes like caramel apples... nonetheless, it is a delightful sweet side dish/salad or dessert. Other recipes I've seen on 'Zaar all have pineapple, so I am posting this one as it does not. I prefer Granny Smith or another tart apple in this salad as it is quite sweet, but you can use whatever apples you have on hand. :) Prep time includes chilling time; may also be frozen. -- posted by Anissa Wolf

Caramel Apple Pudding

I made this the other night for a pot luck dinner and it went down well. Personally I found it a bit too sweet so you may want to reduce the sugar in the pudding batter (but I don't really have a sweet tooth). This also works well for a crowd, you just need a very large baking dish.
Please Try My Sweet Potato Pie

Calling all pie lovers and seasoned bakers. I would love your opinions on this sweet potato pie recipe. It was my first attempt and I thought it came out really good, but I would greatly appreciate objective and honest comments and reviews. The "Basic Flaky Pie Crust" recipe came from another website and I didn't change a thing (in my opinion, the crust was perfect!) For the filling, I read several recipes, tweaked them each a tad and settled on a combination that I thought might work. So, please try my sweet potato pie....and let me know what you think. I value your opinions. -- posted by CookETC

The Best Baked Cheesecake in the World (No Seriously...!!!)

This really is cheesecake for beginners but it is sooo deliciously rich & creamy - you have to try it. I've acquired this recipe from a friend who simply serves this with fresh raspberries which is wonderful but because I'm prone to distraction & browning the top (usually one half rather than the other) I like to make the berry topping given & let it soak in & set before serving. It's amazing. I find myself contemplating any excuse under the sun worthy of making it again & again & again!!! -- posted by Bondnz

Crazy Cake With Two Icings

This is a recipe that I can actually make and it comes out perfect everytime! Believe me when I say if I can do it, ANYONE can do it!!! I got this recipe out of an allrecipes.com magazine and it was submitted by Carolyn Hobbs in there. The only thing I could tell that was wrong with it is that it makes WAY to much of Icing #2 so it needs to be scaled way back...I just never did it. It just needs to be drizzled on top with a squirt bottle or something like that. Maybe one of you amazing cooks could figure that part out LOL. Hope you enjoy as much as we did!!! Looking at the recipe it seems like it would take forever but it really doesn't at all and is super easy!!! -- posted by SoNottaCook

Snickerdoodle Blondies

I've seen this recipe on several food blogs and was obsessed with them. Being a big fan of Snickerdoodle cookies, I knew the moment I saw these I had to give them a whirl. What impressed me most about this recipe was that it was super basic, no need to run out and buy anything special, just raid your fridge and pantry and bake away! These are super easy to make and will have your house smelling heavenly in 10 minutes. These bars go great with a cup of piping hot coffee! Now get obsessed with these bars and get to baking! My hats off to Julia of Dozen Flours who created this new favorite of my family and friends :) Now everyone asks me for the recipe! I have not seen this recipe on Zaar, so I am posting it here to share! -- posted by Vseward (Chef~V)

Snickerdoodle-Bundt Cake

I love Snickerdoodles and since the recipe#384800 were a huge hit in my house I knew this cake will be loved and devoured. This cake needs no frosting, there is a crispy sugary shell that forms on top with a moist cake and cinnamon struesal center .(See my photos, I've tried to capture the inside and out) Traditional Bundt cakes serve 12 but you can serve 18 with this one just cut the slices a little thinner..... but you might want a huge piece after your house smells like a gigantic snickerdoodle cookie while it's baking! This recipe was created by my friend Julia of Dozen Flours. Thanks Julia for another fantastic recipe. I'm sure the Zaar community will love this one. I gave it 5 stars myself ;) -- posted by Vseward (Chef~V)

Bake Sale Time: Rice Krispies W/ Malted Milk Ball Bars

Here's one to add to your bake sale repertoire--and they'll be just enough different [but still the same thing] to get the kids curious, and good enough that they'll sell like "hot cakes!" Save a couple for the home-folks, because you won't be bringing any home when you take these to the potluck or family reunion picnic!
Yum Yum Yo Yo Biscuits

Adapted from a recipe I found on the Simply Great Meals website. Faced a dilemma in settling on a name for these. They are n-e-v-e-r called Yo Yo Biscuits, just Yo Yos... the Simply Great Meals website called them Yo Yo's, but the apostrophe makes no sense, and without the apostrophe the name looks like Yo YOS - which sounds silly and is NOT what they are known as! Conversions: 150g = just under 5oz; 60g = 2oz. Personally, I'd prefer to omit the food coloring. Not anti-pink, just prefer to avoid unnecessary chemicals. Seems to me that even a 1/2 teaspoon of cherry juice would achieve the pinkness if that's what you're after. The slivered almonds are not generally found in a traditional Yo Yo: I've added those. I'm of the belief that yummy nut never goes astray, be it in sweet or savoury dishes. -- posted by bluemoon downunder

Dark Chocolate and Sangiovese Pear Brownies

This yummy and super-rich chocolate brownie recipe has been adapted from a recipe by Maggie Beer, a revered Australian chef and author of many cookbooks. If Sangiovese Verjuice is not available use any Verjuice; and you could use glacé cumquat, ginger - or whatever glacé fruit you like instead of the pear - and you could use a mixture of fruit and nuts. I'd recommend macadamia nuts. Some conversions: 300g = approximately 91/2 ounces; 250g = 8 ounces; 60g = 2 ounces; 40g = 11/3 ounces. For the BEST results, do use top quality chocolate, such as Lindt 70% cocoa. Recently, I tried some German chocolate that was 85% cocoa... that was probably too rich and too bitter for most tastes, so rich in fact that you'd find that much as they enjoyed it people wouldn't be coming back for a second and third brownie - so your brownies would last longer! -- posted by bluemoon downunder

Rich Mallow and Honey Almond Fudge

I’ve adapted this recipe from one I found on the Simply Great Meals website. The original recipe uses pistachios; I’ve used honey-roasted almonds. Obviously, you could use whatever nuts you fancy or a mixture of several different nuts. Once you’ve melted your chocolate, butter and marshmallows, no more cooking is required. Great for lunchbox snacks, picnics and potlucks! For the best results, use top quality chocolate rather than cooking chocolate. I’ve suggested Lindt, and if you choose one with orange or peppermint chips, you’ll add another subtle flavour. I’ve wondered also about using a fruit juice instead of the water but haven’t tried this yet. The conversions you may need: 90g = 3oz; 250g = 8oz. -- posted by bluemoon downunder

This is a recipe that I actually learned to make from my instructor when I was a Pampered Chef Consultant. As it is prepared in one of the Stoneware pieces. It is generally chocolate, but I suppose the choices are limitless! It is so easy, but so delicious. Everytime I go to a potluck, I am asked to bring it!!! ALWAYS a crowd pleaser!!! -- posted by Little Mamma 2

Peanut Butter Blossoms

I found this recipe from Home Cookin' With Dave's Mom (David Letterman), and it's a keeper. I made some with almond kisses and some with regular, and I used half chunky and half creamy peanut butter. I also substituted butter for shortening because it's what I had. It's a dangerous peanut butter cookie. Serving size is estimated and assumes one cookie, but good luck with that. -- posted by AmyZoe

Creamy Pumpkin Rice Pudding

Even though the phrase "leftover pumpkin" doesn't exist in my household, most people often wonder what to do with the leftover pumpkin after making a pumpkin pie. I like to make this tasty, simple, and quick dessert when I have a huge can of pumpkin I haven't completely gone through. Whole milk and cinnamon rice milk really work best for this recipe, but some tasty variations that really add to this pudding's richness are vanilla rice or soy milk, and Silk Pumpkin Pie flavored soy milk (which is only seasonal, I wish it was available year-round! And is it just me or does Silk Pumpkin Pie Soymilk taste just like Silk Nog that's available around Christmas, only they package it differently? So if you're making it around Christmas, use Silk Nog!) This awesome dessert is great for parties and potlucks,
it travels and freezes well, and was a big hit at my sister's Halloween party! Both the kids and adults loved it. (Note: Prep time does not include cooling time.) -- posted by the80srule

Peanut Butter Cookies

This recipe makes enough for a family reunion (I halved the recipe and still had 4 dozen cookies). I've posted the recipe as originally written. I really like the seasonings--cinnamon, ginger, and cloves. It makes a nice twist on a classic treat. Next time I'll skip the shortening and use real butter (just a personal preference). I'd also dip my fork in white sugar and press them in a criss cross pattern after they come out of the oven instead of before.
Crazy Eee Coconut Puffs/ Loaves

I used ingredients from a contest..but missed the deadline to post, no electricity for awhile and today no water, Such is life! Easy Preparation and delicious! This was for a potluck entry. Rich buttery taste on the outside, soft coconut taste inside. I have one large pan with 8 mini loaf slots. You can also use a 9 X 13 pan and make one large cake. Bake about 10 minutes longer.
The puffs are piled high on a plate and a bowl of whipped topping is served with the puffs. Note: Let loaves set a while and use a serrated knife. or,, you can wrap and freeze when cool and take out to thaw before giving as gifts or before serving. -- posted by Montana Heart Song

Rachel's Special Chocolate Coconut Oat Bars

I was in the mood for all three and concocted this: it has the urban decadence of chocolate, the tropical staple of coconut, and the rustic comfort of classic oatmeal. These bars are special because those three things symbolize the various walks of life I have experienced. Open for all kinds of other toppings too! This calls for cream of coconut, crema de coco-- not to be confused with coconut milk or coconut syrup. Would make a wonderful gift or a party/potluck dessert!
Killer Banana Bars

Absolutely addictive! These bars are moist, light, and fluffy like a quick bread (rather than dense like a brownie). They have a slight sweet/salty thing going on that takes them to the next level. Make a pan and watch them disappear! These are a huge hit at potlucks.

You can double this recipe and bake in at 13x9-in. pan.

Variation: For outrageously good pumpkin bars, substitute canned pumpkin for the banana and add 1 tsp. fresh grated ginger. Outstanding!

Caramel Crumb Bars

This is an easy and delicious bar recipe with a light and flaky shortbread crust, a creamy caramel filling, and a crumb topping. The recipe is from the wonderful cookbook, "The Modern Baker," by Nick Malgieri and was chosen Top Cookie Recipe of 2008 by the Washington Post. It's Malgieri's favourite recipe in the book and it might just become yours too! Save the wrappers from the softened butter sticks to grease the parchment. Note that the flour measurement calls for it to be spooned into the cup and leveled off--this will give you a different amount of flour in the cup than the dip and sweep method and noticeably effect the texture of the crust.
MAKE AHEAD: Store in an airtight container at room temperature if you are serving them within a day. Or wrap and freeze for up to 2 months, making sure to bring the bars to room temperature before serving. -- posted by blucoat

A Trifle Decadent

This delightful, low-cal trifle comes from Canadian Homemakers Magazine /2004. Thickened yogurt and angel food cake replace whipped cream and pound cake to make a luscious light trifle. Berries can be frozen or fresh. Garnish with fresh berries and some mint leaf for a pretty presentation.

Death by Chocolate Trifle

This I have made many ways. If you don't like coffee and want a sweet dessert kids will LOVE, use sweetened condensed milk to pour over the cake (about 2/3 of the can) and refrigerate until completely cool. If you want a party dessert adults will love, use Kaluha, about 1/2 cup. Cool whip makes a great sub for whipped cream (might even be better!) but I am trying to use less "fake" foods so I choose to do real. the cool whip holds up better if this will be around for days though! Chocolate mousse is my favorite here, but lots of people have a hard time finding it, i know only a few stores around me carry it so I am listing it with pudding, but if you can find mousse, USE IT! -- posted by newmama

Decadent Layered Cheesecake

Found on an estate agents leaflet, I tried this cheesecake, making it for a lunch with friends. It was quite easy to make, it turned out well, and was very well-received, so I'm sharing it with you! I made this the day before, and chilled it overnight, so allow for that. Hope you enjoy it.

Please note, the stated time is not allowing for chilling overnight. -- posted by Karen Elizabeth

Rachel's Vanilla Cupcakes

For posterity. Open to some flavor variations and fun with food dye, so I included some tips from other recipes and my own experiments. I based the cake part off both a Food Network recipe plus one of my cake recipes. Yields 24 cupcakes, two 9" layer cakes, or one 13 x 9 cake. -- posted by the80srule

Mascarpone Creme "custard"

I use this instead of custard when I make a fruit tart. Alternatively, it works great for making a parfait with strawberries, mini chocolate chips, and shortbread cookie pieces. Prep time include 30 minutes in the refrigerator. -- posted by YoungEngineer

Apple Pie Blondies

The perfect cross between a blond brownie and apple pie…moist, yet hints of sweet cinnamon-y crunch from the sprinkling of cinnamon sugar on top.

Fruit Pizza

Very appealing to the eye and even better; easy to make and fun to eat. A great way to celebrate fruit so have fun and mix and match. You can even have fun with the "crust," try using sugar cookie or even choc chip cookie dough instead of the pizza pie crust. No matter how you personalized this recipe it's sure to put a smile on everyone’s face! -- posted by Chef #1544785
