Banana-Yogurt Oatmeal Muffins

A healthy, tasty muffin your family is sure to love. For the Greek yogurt, I highly recommend Oikos or Chobani. It lends a very delicate texture to the end product. The blueberry flavor doesn't come through on its own, but adds a nice depth of flavor. -- posted by Chef #661355

Breakfast Muffins (Make Ahead )

If you like fresh baked muffins in the morning, then this would be the perfect recipe for you. You can prepare the batter in your leisure and it can be kept in the refrigerator for up to one week and the muffins can then be cooked as you require them.
Also these little beauties can be frozen for up to 2 months perfect for lunchboxes (just take them out in the morning and they will be defrosted by lunchtime) or if you like them warm, take them out of the freezer and pop them in the microwave for a short time and serve warm.
This is a recipe from Barbara Northwoodread from New Idea. -- posted by Tisme

Fruit Nut Harvest Muffins

While looking for a healthier muffin recipe, I came across this little gem. I found this recipe on the Care2 website @ http://www.care2.com/greenliving/fruit-nut-harvest-muffins.html Care2 says: There is so much whole-grain, high-fiber, anti-oxidant nourishment in every bite, and they hardly take any time at all to make: I can mix the batter while the water heats for tea, and bake them while I sip. Plus they freeze beautifully to enjoy on those rushed weekdays when the memory of a leisurely breakfast seems but a dream. -- posted by SassiFras

Pineapple Oatmeal Pancakes (Gluten-Free)

Oh my gosh these are AWESOME! This can of pineapple on the counter was calling to me, and my husband can't eat wheat, so if I make pancakes they're gonna have oats in them. Plus, the Tahitian Pancakes came up on Heroes in the past week or so, so that's on my mind.
I combined two different recipes that I found online, one for pineapple pancakes and one for oatmeal pancakes. Neither one is like this new version though. SO AWESOME!
One last thing, I used coconut milk instead of cow milk, since my husband is also on this non-dairy kick.
This recipe makes A LOT of pancakes, and they're very filling. Store uneaten pancakes in the fridge and have breakfast all week! -- posted by kitchengrrl

Crunchy Crust Peach Cobbler

I was looking for peach cobbler recipe that was a bit different and found this one at TOH. Dh ended up making this so that speaks to the ease of the recipe. This would be easy to substitute other fruit for peaches and I personally would increase the fruit filling but it was good as written as well. This makes for a nice cobbler with a crunchy crust with a light meringue flavor. -- posted by Ceezie

Banging Banana Bread

I LOVE banana bread. So, I have made it for many years. I am always looking to get the flavor just perfect! I use "old" bananas. The upscale produce shop won't sell them, so I usually call and see if they have any. That way I can use them right away AND they sell them to me super cheap! I usually bake around 150 mini loaves to include in my Christmas Goodies Bags. I like my recipes to have measurements for items, sizes for pans, and baking directions. So you will find all of that in this recipe that I have finally decided I have "tweeked" it right down to d-e-l-i-c-i-o-u-s. -- posted by Tantric1

After the Party is Over! Refreshing Detox Fresh Fruit Salad

A wonderful brunch recipe for the morning after or when you need an early boost for a busy day ahead; although this is super healthy and refreshing, I have also served this as the dessert dish for a buffet, BUT with champagne as the liquid instead of orange juice! (Just another idea for dressing this fresh fruit salad up with frills!) This is not only healthy, but it is SO festive and colourful - my photo shows the one I made this Boxing Day (26th December), I usually add kiwi fruit too, but we had run out of them.......oooops! My quantities listed here make enough for 6 to 8 people, but this can be increased as well as reduced to suit personal requirements. I normally serve this with crème fraiche or vanilla yoghurt, but it’s also wonderful when served “naked”, the salad that is, not me! The fruits I have suggested are rich in vitamins and antioxidants for a quick mental boost, as well as a rapid detox to aid recovery after a heavy night or after indulging in rich food, but please do adapt this to your own seasonal and local produce if you wish. -- posted by French Tart

Next-Day Baked Cinnamon-Apple French Toast

We made this for Christmas morning this year (2009). My mother found the recipe in her local paper -- The Daily Breeze in Redondo Beach, CA. When I made it, I added in not just the apples, but all the liquid -- as a result the dish was more like bread pudding than french toast ... it was still great, and I'd make it that way again. But if you'd like a drier texture, don't add the apple liquid. I also swapped out the cinnamon and nutmeg for two teaspoons of Recipe #45672 . -- posted by KLHquilts

So Easy and Tasty Apple Streusel

"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan".

Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy!
Adapted from Penzey's spices and the intro is what they said about the recipe.
A little history:
In baking and pastry making, the term streusel (a German word meaning "something scattered or sprinkled", from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and white sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). Some modern recipes add various spices and occasionally chopped nutmeats. Although the topping is of German origin, it is sometimes referred to as Danish or Swedish. -- posted by Sharon123

German Pancake (Also Called Dutch Baby)

The German pancake, also called Dutch Baby, is like a crepe crossed with a popover. It's ridiculously easy to make (the batter is made in under 2 minutes in a blender) and is always a crowd pleaser. Watching the pancake puff up before your very eyes is always entertaining. You can add fresh fruit to the batter, add it on top after baking ,or go crazy and do both! Then you have the option of topping it with the more traditional squeeze of fresh lemon juice and powdered sugar or simply drizzle on the maple syrup, for the syrup lovers. -- posted by P ROD

Fruit and Yogurt Parfait

Peanut Butter and Honey Bread

My family loves the combination of peanut butter, honey, and bananas, so I decided to make it into a bread. Make sure to use all natural peanut butter and feel free to add more chopped nuts or chocolate chips if you desire.
Breakfast Apples

This is a recipe from the Bagley House Bed and Breakfast. It is their most requested recipe and is an adapted version of Miss Bobo's Apple Goodie recipe from Lynchburg, Tennessee. It's very much like an apple crisp. Their recipe gives instructions to clean the dish as soon as possible or reheat adding water and a few drops of dishwashing soap to help remove the caramelized sugar. I didn't and boy do I wish I had. The recipe reads 4-5 servings, but because it is so sweet, I cut down on how much to serve. I did not time the preparation. -- posted by Toni in Colorado

Creamy Quinoa Mousse

VERY healthy dessert or breakfast. This is the kind of recipe where you like it or you don't... if you do, you're in for a treat (there'd no guilt, it'ts even good for you!!!). The texture is slightly fibrous, due to the quinoa. Can be served warm or cold, l prefer mine partially frozen (I place them in individual cups, then freeze for an hour). Adjust spices to your taste. You can sub the milk for soymilk (if using vanilla flavoured, omit sugar and vanilla from ingredients). -- posted by Génial Génie

Avocado Clementine Breakfast Salad

I'm not an ordinary breakfast eater (by North American standards). I like savory dishes and soups and all kinds of interesting things for breakfast, but rarely enjoy sweet cereals or toast. My family thinks I'm insane, but I don't care. In any case, this particular salad appealed to me one morning so I threw it together and it turned out delicious. Prep time includes time to boil egg. While egg is boiling, cut all the rest of the ingredients and it comes together in a jiffy. This works well using Catalina/French style dressing as well. -- posted by Cookworm

Buttermilk and Sour Cherry Scones for Afternoon Tea and Picnics

A delightful and EASY scone recipe that is perfect for a proper afternoon tea or to take on a picnic. Dried sour cherries are sensational and give a deep essence of cherry flavour to these scones, whilst the buttermilk makes them light and airy. This is a casual eating scone, easy to rustle up, and is perfect when eaten fresh from the oven with butter and maybe some cherry jam and cream too! If taking on a picnic, wrap the scone in a clean tea towel to keep it warm and pack the butter and jam separately. Makes one large scone, which is marked to split into wedges when served. -- posted by French Tart

Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping.
Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice. -- posted by Southern Kitchen Gardener

Power Packed Purple Smoothie

I've gotten really into having smoothies for breakfast lately. They taste great and it helps me get in some great nutrients to start my day. This one contains a couple ingredients that will make you think "What??!!" Trust me on this one. The cottage cheese adds lots of protein and gives the smoothie a creamy texture. Spinach adds lots of vitamin A and you can't even taste it (really, I promise!). ___________________________________________

Peach & Pear Muffins

This recipe was designed in answer to a request from my son for crocodile muffins. The pear skins are the crocodile skin, the peaches are the eyeballs and the butterscotch chips are the teeth. My version is wheat, egg, and (almost) dairy free, but feel free to switch it up and use eggs and milk if you prefer. I haven't found dairy free butterscotch chips, so you could leave them out of the recipe if you needed to. There is no added sugar in this recipe because the fruit and butterscotch are plenty sweet. -- posted by DiabeticMom
