			<description>I got the idea for this from a recipe in Vegan Planet, but I tweaked it quite a bit.  You can either prepare this the day you eat it, or put it together the night before.  If you do that, you'll want to let it come to room temp before baking it.  Also, I was going to make some hashbrowns and mix it in with this, but I didn't have time.  Just bake a potato, peel it, grate it, fry it in a pan with some veggie oil and layer it on top of the bread. This is great when you have company staying over and you don't want to be in the kitchen first thing in the morning cooking.  You put this together in the evening the night before. You can grate your own potatoes or purchase shredded from the store. If using frozen, defrost first. I have used other cheeses but I find this Monterey  Pepper Jack (w/ jalapenos) to work best. 			<description>This recipe is a hybrid.  I found two recipes with almost identical ingredients.  I liked the one recipe better because I could just put everything in the baking dish without layering.  However, it called for it to be refrigerated overnight so that the egg mixture could sink in.  I have a full-sized fridge plus two bar fridges but I do so much cooking at Christmas, there simply isn't room to store one more dish.  The technique for the second recipe didn't need for the dish to sit overnight, but rather cook it in a hot water bath for a longer period.  The end product was a big hit and turned out perfectly cooked and moist.  A big time saver for this recipe is using the cut up day old bread that many bakeries sell over the holidays for making stuffing. 			<description>I got this from cooks.com. I didn't see one like this on here. I made this for our new years eve breakfast and hubby and i  both loved it! It was so easy to make and i loved that i made it last night and just poped it in the oven in the morning while i was making the pancakes. The only thing I would do different is to add some hot pepper sauce to the mix(it was a little bland for our taste. If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking.  While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole.  Frozen hash browns would work too just thaw them before adding to the mix. 			<description>Whenever I make a loaf of gluten free bread, I can't seem to eat all of it before it goes stale or moldy.  While I could slice and freeze half, I prefer to use it for bread pudding, stuffing, meatloaf, etc.  This is an excellent use for bread that is too hard and stale to eat.  I would not make it from fresh squishy bread, as I think it would probably dissolve in the egg custard.  The original recipe, Debbie Tate's &amp;quot;Make Ahead French Toast&amp;quot; at allrecipes, suggests 8 slices of French bread.  I would assume that sourdough, old hard sandwich rolls, etc. would also work beautifully.  This morning I used the last quarter loaf of bread made from Bob's Red Mill GF Homemade Wonderful Bread Mix.  I would be happy to serve this for company, or Christmas morning. 			<description>Wonderful for a weekend brunch. My whole family absolutely loves it. Lots of flavor from the onions, chives, and bell pepper. There are lots of variations of this recipe but I like that this one uses milk instead of sour cream or cream cheese which are high in fat and this one still has just as much flavor. It came from Debbie Macomber's Cedar Cove Cookbook that a friend got me for Christmas. I only switch the whole milk to 1 % and keep the skillet at medium-low instead of low when making the sauce. Can easily be doubled to serve more people. When I do, I use a 12 oz package of bacon and a 1 lb 14 oz bag of hash browns since that's what they usually come in anyways. Also, the easiest way to snip the chives is with kitchen scissors. So much faster than with a knife!
