Left over Corned Beef Scramble

Makes a very nice brunch dish. Not only did I use left over Corned Beef but I also had a potatoe left over and there were bits of sweet peppers in the fridge too. So this was a very sucessful clean the fridge recipe. It really serves two or one very hungry person. Use your own favorite recipe for the scrambled eggs. Tabasco Sauce or any hot spicy sauce is good - I used Mama Zulu's -a very hot sauce -- posted by Bergy

Blizzard Bread

We have a lot of snow days in N.E. Pennsylvania. So, we sprinkle a little snow on our French Toast too. Well, not real snow, but confectionery sugar is a great substitute. When snow is in the forecast, you have a hard time finding bread, eggs, and milk on grocery shelves. Get them early! Why? Because along with snowy days...comes comfort food - French Toast for breakfast. It's also a favorite for sleepovers. The kids always request Blizzard Bread for breakfast, even if it's 100 degrees outside. -- posted by ChaCha3

Eggnog Popovers

I get really excited when eggnog hits my local dairy aisle. So excited, in fact, that I suspend knowledge of the fact that nobody in my family likes eggnog and buy a half-gallon of the stuff.

So, what to do with it all? The best popover you've ever had. I'm half-contemplating buying and freezing more eggnog so that I can eat these all year. -- posted by seapard

Herb and Mushroom Quiche - from Get Cracking!

This is one of my favourite quiche recipes. I received the recipe card and spice packet from the Egg Producers of Nova Scotia. I do change it slightly for our tastes, by using either a mild cheddar or marble in place of the swiss. I also go the 'crustless' route. If you add extra mushrooms and onions (like I often do), I suggest putting them, along with the cheeses in the pie plate first. Then pour the egg mixture on top. ;) -- posted by Diana #2

Peanut Butter and Honey Bread

Breakfast Apples

This is a recipe from the Bagley House Bed and Breakfast. It is their most requested recipe and is an adapted version of Miss Bobo's Apple Goodie recipe from Lynchburg, Tennessee. It's very much like an apple crisp. Their recipe gives instructions to clean the dish as soon as possible or reheat adding water and a few drops of dishwashing soap to help remove the caramelized sugar. I didn't and boy do I wish I had. The recipe reads 4-5 servings, but because it is so sweet, I cut down on how much to serve. I did not time the preparation. -- posted by Toni in Colorado

Yummy Pumpkin Whole Wheat Pancakes

I have tried many recipes for whole wheat pancakes and was never really satisfied with the result so I have tweaked them to come up with my own. Even my 2 year old gobbles them up! I added pumpkin to this variation but you can modify with banana, blueberries, nuts or whatever you can think to add. The flaxseed and wheat germ can be omitted -- I just add them to give the pancakes an even healthier kick! -- posted by turtlemom

Adapted from Gormet Cookbook. These muffins are light, sweet, buttery and packed to the hilt with juicy blueberries. They are reminiscent of tiny, personal sized coffee cakes. I warn you, if you make these, don’t plan on having too many to share.
Peach French Toast Bake

This is a stunningly simple and delicious recipe from The Food You Crave cookbook. I have copied exactly, the books version but we make it slightly different at our home. I've used artisan loaves of bread: raisin/pecan; apricot/almond; and other fruit/nut combinations for the bread. Then, instead of the combination of egg whites and whole eggs, we just use the entire egg and 2% milk. I have found that there is NO difference between the hard-to-find frozen peach slices and drained, canned peaches so we now use canned. I've also made this with a combination of fruit: canned peaches and apricots, just one of the fruits or sauteed Granny Smith apple slices with butter and Applejack Brandy added to the saute pan. This is a hearty and beloved recipe at our home and extremely easy to adapt to your taste and calorie needs. It can also be cut in half and made in an 8" x 8" pan with the same great results. -- posted by The_Swedish_Chef

Buttermilk and Sour Cherry Scones for Afternoon Tea and Picnics

A delightful and EASY scone recipe that is perfect for a proper afternoon tea or to take on a picnic. Dried sour cherries are sensational and give a deep essence of cherry flavour to these scones, whilst the buttermilk makes them light and airy. This is a casual eating scone, easy to rustle up, and is perfect when eaten fresh from the oven with butter and maybe some cherry jam and cream too! If taking on a picnic, wrap the scone in a clean tea towel to keep it warm and pack the butter and jam separately. Makes one large scone, which is marked to split into wedges when served. -- posted by French Tart

Auntie Lu's Amazing Egg Bake

A cheesy, delicious, breakfast meal for a crowd. Auntie Lu would always make this when we would stay overnight and it was a HUGE hit. We use a "perfect brownie" pan so that every piece is a delicious, crusty edge piece. The recipe works with either white or wheat bread, you can't tell the difference. I use a spicy sausage so there is no need for additional spices, but you can add your own spices to the eggs before you pour it on or in the meat when you cook it. Sauce is optional but very delicious. -- posted by Scott Johnson

I was experimenting with ingredients I had leftover from making spinach quiche and decided to try making a yummy omelet with some of them. I love pepper so I chose to increase the amount of it in my omelet. I also used frozen spinach. There's no need to thaw it. I used a knife to shave off what I needed. Cheese is optional because this omelet has great flavor without it and is much healthier.
Chocolate Chip Waffles

I used my Belgian waffle machine for these, although you can use any type of waffle iron as these are not true Belgian style waffles. These were so good and did not last long at all. I don't remember how many this made - I think about 8 full round waffles. Next time I make them, I will update the amount with more accurate info on the servings. I just know I wished I had made a second batch ;) The Zaar computer requires that I enter a cook time, but the time will vary based on each individual machine - I guess at about 7 minutes per waffle, but please test one out on your machine first for more accurate timing. -- posted by HeatherFeather

Toast-Less French Toast - South Beach Phase 1

I invented this in my kitchen at the end of the first week of Phase 1 out of desperation for a sweet instead of savory breakfast. Enjoy plain, or with sugar free syrup, or jam. For Phase 2 I would recommend fresh fruit (like berries), and fat-free no sugar added whipped cream; or you could core and slice some apples and saute in margarine before adding the egg mixture. This is also good with some yogurt on the side - try plain with fruit infused stevia (apricot is excellent!) This saved me from falling off the wagon and I hope it works for you too. -- posted by Chef #1532737

Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping.
Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice. -- posted by Southern Kitchen Gardener

The Big Breakfast Burrito

Having recently tried and enjoyed a number of recipes featuring the sweet potato and black bean combo, I was excited to sample a dish using them at a restaurant. As it was quite tasty, I, of course, decided I needed to be able to make them at home! A few tweaks later, here we are. I put a range on the serving size, as I only eat half, but no doubt there's someone who can eat the whole thing in one sitting :) Using pepperjack cheese instead of the white cheddar is also a good choice - nice for a little added zip. -- posted by Starrynews

Power Packed Purple Smoothie

I've gotten really into having smoothies for breakfast lately. They taste great and it helps me get in some great nutrients to start my day. This one contains a couple ingredients that will make you think "What??!!" Trust me on this one. The cottage cheese adds lots of protein and gives the smoothie a creamy texture. Spinach adds lots of vitamin A and you can't even taste it (really, I promise!). ___________________________________________
