			<description>Ha Ha!!  NOT FOR THE DIET CONCIOUS!!!  This comes from when I was a restaurant supervisor at Cadillac Jack's Diner/Casino in Deadwood, SD.  The poker player guys that stayed at the casino for hours, even days on end would order breakfast and sometimes couldn't make up their minds between having an omlette and hashbrowns or  biscuits and gravy with eggs and bacon/sausage so this is what one of the brilliant cooks came up with!!  It never was on the menu (should of been!!) and now no one is there that knows how to make it. 			<description>Get your breakfast all in one casserole! Typically, I make this casserole for dinner and the leftovers (if there are any) are breakfast the next day. This casserole works great as an after-holiday breakfast. It will put some of that yummy leftover ham to good use. Otherwise, I just find my favorite deli ham and tear up several slices. This casserole reheats well. We have one in the fridge, ready to be reheated, at the start of every week. Dad likes to take this casserole a step further and put a scoop of it on his favorite morning bread with a slather of black raspberry jelly for a yummy (though slightly messy) breakfast sandwich. There are several other ingredients that you could add or substitute into this casserole. Think of it as an omelette and go nuts! Mushrooms, tomatoes, spinach, salsa, etc.  If you have a big family to feed, this recipe can easily be expanded to serve 12 by using a 3-quart casserole dish and doubling all the ingredients. When I made them I used Splenda in place of the sugar and walnuts in place of the pecans as that's what I had on hand. I also added 1 scoop of protein powder to my batter. The next time I make these I plan to bump up the Splenda to 2 or more tablespoons and the cardamom to 1 1/2 teaspoons. Ideally, latkes should be somewhat thick, golden, very crisp on the outside, and very creamy in the center.  Figuring out how to make these ideal latkes meant finding the best potato, the best grating method, and the best frying technique.  Matzo meal is a traditional binder, though we found that the pancakes' texture does not suffer without it. I love these potatoes and always cook two eggs, over medium, and put right on top of the potatoes and mix it all together. YUM!! If you plan ahead on making home fries for breakfast, then you can pre-bake potatoes for this. Please note that cooking time does not account for baking the potatoes! This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes. You can easily make this up ahead of time, according to others you should be able to make this up to 2 days ahead in the fridge, or 2 months in the freezer. 			<description>Wonderful for a weekend brunch. My whole family absolutely loves it. Lots of flavor from the onions, chives, and bell pepper. There are lots of variations of this recipe but I like that this one uses milk instead of sour cream or cream cheese which are high in fat and this one still has just as much flavor. It came from Debbie Macomber's Cedar Cove Cookbook that a friend got me for Christmas. I only switch the whole milk to 1 % and keep the skillet at medium-low instead of low when making the sauce. Can easily be doubled to serve more people. When I do, I use a 12 oz package of bacon and a 1 lb 14 oz bag of hash browns since that's what they usually come in anyways. Also, the easiest way to snip the chives is with kitchen scissors. So much faster than with a knife!
