			<description>I've seen other recipes for these little indulgent treats, but they cook them in a crockpot and I prefer to bake ours.  Baking them in the oven allows the bacon to crisp, the liquids to be released from the Smokies, and the brown sugar to caramelize on them deliciously.  It also allows to you control the fat content of them a bit more easily, as most of the bacon drippings will remain on the sheet pan after cooking.  We usually make them during the holidays, but they're good for all year 'round, of course. The stores were quite small and could accommodate only a few seated customers, while most business was take-out.

			<description>My dad started this recipe in our family. I grew up making it with my dad and after his death I have continued to make it. I have tweaked it to suit my family. Great to make for the Superbowl or a casual get together. All the spices are to taste. The measurements below are estimates, I rarely measure. Feel free to cut back on the Jalepeno if you don't like your food spicy. Also, instead of just plain ground beef, I have made it using left-over chili, just cut back on the spices then.Use more or less Milk to make cheese as thin/thick as you like, keep in mind the salsa will thin it out. You can use Pepper jack Velveeta if you cannot find the Mexican style. Also, leftover chili or 1/2 lb ground beef and 1/2 lb Chorizo instead of ground beef has had awesome results in my household, just cut back on seasonings. 			<description>An old-fashioned treat, this is a fabulous way to use up left over ham, although I have also put some freshly cooked ham aside especially for this when I have baked a ham for Christmas, Easter or another special occasion. The ham is finely minced and mixed through with old-fashioned spices and butter, and it keeps for several weeks in a cool place. Another name for this recipe is Potted Meat, and it was VERY popular in Victorian times, although recipes for potted meats (preserved under butter) goes back even further than that historically. Wonderful in sandwiches for the teatime table or for picnics, lunch boxes and festive buffets. This is an adapted recipe from Mrs Beetons Book of Household Management, where she suggests that this is a nice addition for the Breakfast or Luncheon table. Serve with sliced breads of all types, oatcakes, toast, bread rolls, and crackers or with salad, chutneys, mustard and pickles.  NB: Use a good cooked ham on the bone for this recipe: the sort carved by hand at the deli and old-fashioned butchers.
