			<description>Every spring the morel mushrooms pop out in woods of the midwest seemingly overnight.  Half the fun is finding them, but once you have a batch, the real fun is eating them.  I'm a morel purist and the best way to eat them is to flour them and fry them. 			<description>I love recipes to get ideas on how flavors go together.  Much to my family's dismay, I hardly ever follow them. I saw something like this in our local paper but didn't want mushy polenta. I always have a fridge full of leftovers and this was created with what I had on hand.   It has a few short cuts- like buying pre-made polenta but you can make your own.  Experiment with other veggies, cheeses, spices... Enjoy!

I salted the eggplant then reconstituted the polenta and put it in the oven before prepping the rest of the veggies. This give the eggplant time to weep and to bake the polenta. 			<description>This is a recipe from Pillsbury.com.  l always have to double the recipe because they get eaten up so fast.  People can't believe it only take 15 minutes to throw these little gems together.  If you end up doubling the recipe, I suggest using just 3 Tbsp butter and 3/4 cup cream.  Otherwise the filling can get a little runny.  This is a very easy recipe to change according to your tastes.  Substitute olives for mushrooms, use chives, chopped nuts, even artichoke hearts, whatever you like.  I also generally use margarine, light cream and low fat crescent rolls and they're still delicious.  You can't go wrong with this recipe. 			<description>I got this recipe from the CopyKat website and I'm posting it here for safe-keeping and to add to my ever-growing list of recipes to try.  I have not made it yet, but a lot of people did say it was delicious.  Some people said they sliced the mushrooms and some said they left them whole.  One person said she doubled the mushrooms because they did cook down quite a bit and also added sliced onions.  I guess the sky is the limit as to what variations you can dream up.  I think they would great as a topping for a grilled steak.
Edited 12/21/09:  I did make this last night and they are indeed yummy!  I can see the need to at least double or triple the recipe as they do cook down an awful lot.  I haven't experimented yet with increasing the mushrooms to say 2 pounds with 1 stick butter &amp;amp; 1 pkg ranch dressing mix but I think it can be successfully done judging by the amount of liquid in the pot.
