			<description>A wonderful friend makes this for her open houses, and it is a fantastic queso type dip to serve with tortilla chips.  Just a touch of heat, but not too spicy (though if you like it spicy - just use hotter picante sauce).  I'm a transplant and moved to Alabama in the late 90's, and ironically it's named Alabama dip! 			<description>My dad started this recipe in our family. I grew up making it with my dad and after his death I have continued to make it. I have tweaked it to suit my family. Great to make for the Superbowl or a casual get together. All the spices are to taste. The measurements below are estimates, I rarely measure. Feel free to cut back on the Jalepeno if you don't like your food spicy. Also, instead of just plain ground beef, I have made it using left-over chili, just cut back on the spices then.Use more or less Milk to make cheese as thin/thick as you like, keep in mind the salsa will thin it out. You can use Pepper jack Velveeta if you cannot find the Mexican style. Also, leftover chili or 1/2 lb ground beef and 1/2 lb Chorizo instead of ground beef has had awesome results in my household, just cut back on seasonings. 			<description>Not sure what to call this...It's an old classic. I didn't come up with this, but I have added my touches over the years, but it is still a favorite. Now I love to make these in 3 small ramiken molds to put on a serving platter rather than 1 large mold (to me it is just a nice presentation), but any decorative bowl, or even just a nice round bowl. You just don't want a dish that is too narrow or deep as you are making layers. It is perfect for parties. Just make sure to serve a variety of crackers, toasted baguettes, vegetables, bagel chips, or just fresh breads and fruits to enjoy all the flavors. Note: using fresh pesto really helps if you have the ingredients. I make this quite often and serve it with a bowl of my potato soup or my chick pea soup, but you can use whatever you like best. Slice a few good fresh tomatoes or some fresh fruit if you prefer, and you have a great easy dinner. Two (2) nights a week, I really try to eat a bit lighter - and this fits the bill. But, it also makes an amazing appetizer, or a great side dish for any meal during the week. Simply put, it is just really good.  Now whatever you do ... don't get rid of that cheese - Save!  It makes a great spread on baguettes or makes an amazing spread for a sandwich. 			<description>This recipe was from Family Circle Magazine Dec. 2009. It was considered to be a healthy recipe choice for those having parties with lots of food and drink. I made them for a meeting and they were a hit. I think you have to serve them with other things because despite being healthy they are a bit rich. I like them as a great alternative to the usual cheese ball. The nuts give it crunch and the two cheeses with the three fruits was very unique. This is not for someone who doesn't like cheese though. Perfect for the holidays, New Year's parties or anytime you need a no cook appetizer.
