These eggs are done up Migas style- with the corn tortillas IN the eggs themselves! If you think you wont like it that way feel free to skip that. I do recommend wrapping this up in a tortilla though and making it a breakfast taco. Made for RSC 11. Gouda was one of the great ingredients on the list. Feel free to sub a different cheese if you like. Mornings can be hectic but this dish cooks up fast and tasty. So fast that you may want to chop and measure everything before hand so it is ready and waiting. You can even do that the night before! 			<description>I found this recipe in a Taste of Home Magazine and it is absolutely to die for.  Generally, when trying a new recipe for the first time I make it exactly as the recipe states.  The only thing I added to this recipe was the addition of Garlic Salt.  It's a must have for me when having any potatoes.  This would probably be good with sausage or bacon, but I don't think as good. The ham gives it a great smoky flavor.  We are not big on onions, but for onion lovers, I would imagine they would be a nice addition.  For those that want their potatoes really brown on top, I would also recommend putting them under the broiler.  I think I'll try that next time.   My kids love it when I make breakfast for dinner so once a month we do that.  I made pancakes to go with it and there was plenty left over. 			<description>I'm proud of my Scottish heritage, as well as my love of food (heck- I'm a Midwesterner!) This named for the Seven Rivers Highland Society here in St. Louis, MO, and for Hogmanay- a truly Scottish celebration!

Scotch Eggs were invented in London by Fortnum &amp;amp; Mason, a food shop, in 1851- apparently in a &amp;quot;Let's pretend to be Scottish&amp;quot; craze. Silly sasenachs! But the name stuck, as did their portability. Some call these &amp;quot;picnic eggs&amp;quot;, some call them &amp;quot;savory eggs&amp;quot; (using chopped eggs) but these are a great item to bring to the office pot-luck, that will leave your co-workers raving!

I first tried Scotch Eggs at the Missouri Tartan Day Festivities a few years ago. I was hooked and when I finally saw how easy they were to make I mastered them!  And searched the world over for variations! And the one I liked was the one from The HandMade Scotch Egg Company in the UK. Alas, we can't get them here- but here is my version of one of theirs. If you go there, avoid the pre-packaged ones at Tesco's, Sainsbury's and the ilk as those are horrid!  And when you can get them here, some are poorly made, and served with a lack-luster approach as an &amp;quot;appetizer&amp;quot;. Yet, these are an easy and unique way to take a quick breakfast out the door to work and can eat this in the car with one hand and no mess! Yep- Portability! 

The key I learned to making any type of Scotch Egg is the quality of the sausage! If you use the low-priced, &amp;quot;discount&amp;quot; stuff, you will end up with holes and gaps in the outer sausage shell. Go for Jimmy Dean, R.B.Rice, Johnsonville, or your favourite one. My daughter loves making these, and everytime we have taken them to a pot-luck lunch, or just something different.

			<description>My friend Lisa shared this recipe with me.  Comes together very quickly and tastes great.  You could substitute different cheeses or meats very easily.  You could also put in other types of vegetables (e.g. spinach, mushrooms, red bell peppers...).  The quiche freezes well -- just cook as usual, cool, then cover with aluminum foil or freezer wrap and freeze.
