Soup to Get Thin On

I found this recipe in a Fix-It-and-Forget-It magazine, and we fell in love with it. Any time I need to knock off a couple pounds, I'll pull this one out. The recipe states it's ideal for a 7-quart cooker. -- posted by Chef #373404

Mexicali Soup

In 2nd grade my teacher Mrs. Means gave the entire class this recipe. I think we ate this in class one day, but I don't recall. It is my favorite vegetable soup recipe to this day. I'm not sure where the soup got the name, but my guess is it was probably from a story we read. My Mom said the original recipe calls for a beef soup bone and beef, but I grew up without it in the recipe. Feel free to throw either or both in to suit your tastebuds or use your own fresh homemade vegetable stock. -- posted by AmyZoe

Easy Vegetable/Black Bean Soup

With most of the food in the house being saved for christmas eve/day, I was hard-pressed to find anything to eat. I decided to make soup out of canned goods i had in the house. Couldn't find a recipei liked, so i made up my own. It was really good and my parents couldn't eat enough of it. The tomato puree adds a thick body to the soup which makes it hearty and thick.
I made this about a week ago and I may not have remembered all the ingredients or steps. If i left anything out I'll be sure to add it. However, this soup is really versatile so don't be afraid to make it your own! Any leftover vegetables would be a welcome participant. Enjoy! -- posted by Lindsay!

Porcini Mushroom Soup

This is an easy and delicious soup. The porcini mushrooms add richness and depth of flavour not often found in vegetarian soups. For a lighter broth, skip the purreeing step. The soup is based on a recipe from "Gourmet Magazine" (Dec. 2008).
Soup, without dill and parsley, can be made 3 days ahead and chilled. Add herbs after reheating. -- posted by blucoat

Chicken Hot Pot With Mushrooms and Tofu

Cooks in Asia serve hot pots communally, setting a big pot of bubbling broth on the table alongside a platter of raw ingredients (like vegetables and thinly sliced chicken) for dipping. It’s a fun way for guests to feel like they have a hand in making their own meal. In his version, Ethan Stowell gives each person at the table an individual bowl of sliced mushrooms, tofu and scallions, then adds piping hot chicken broth loaded with chunks of tender cooked chicken. Serve with a light-bodied, unoaked Chardonay: 2006 Ruffino Libaio . Appeared in October 2008 edition of F&W Magazine.

Panera's French Onion Soup

I thought this soup was really good but not as good as panera's, which topsecreet recipes claim it is. Then again, I subsituted a mixture of light butter and no-fat butter spray for the sweet cream butter so that probably made a lot of difference. Either way, using my low-cal butter mixture and no cheese or croutons, I made this soup for about 40 calories per cup and it's a great filling soup for a diet. PS - If you have a food processor, save yourself tons of time by processing the onions! -- posted by Keee

Chinese Twin Mushroom Soup

Spicy Tom Yum Soup

A knock off from our favourtie Vietnamese restaurant. I soak the vegetables in a salt water brine to keep them from getting mushy, but this step is not necessary. Yield time includes soaking time. This soup is really quick and easy. -- posted by Pam #5

Welcome Spring! With Some Chicken Soup from the Farm!

The coming of Spring is a pleasurable thing to behold. The clouds have parted, the wind has warmed up, and there are robins on the farm. We have a a special contest here on Longmeadow Farm. Whoever sees the first robin of the year, and tells any of us on a Saturday Lunch gets a dollar bill. This special contest has been going on since I was knee-high-to-a-grass-hopper. Now I know you can't get rich off of a dollar, but you can however, at least share in the soup. To give the cold Winter months a bid-a-dew, we celebrate with the simple, but tasty chicken soup. I found this originally in "Vitality" magazine, a special insert that my Dad gets in the mail. I started using it, because it just was so darn simple and so darn tasty I think this should certainly celebrate the end of a long winter, and a "Hello!" to that nifty red-robin-redbreast. -- posted by Andi of Longmeadow Farm

White Bean and Vegetable Soup

Adapted from Sunset- January 2009. An instant hit with the entire family. Easy to make, very flavorful, and easy on the budget. A rough-textured bread is best for soaking up flavor! The original recipe called for fresh herbs which I will try when my garden is producing.
Garden Vegetable Soup

I was talking to a lady where I was working about enhancing recipes. She threw down the gauntlet about a recipe in the Weight Watcher's guide. It had 0 points and, as she put it, 0 taste. The challenge was to make it have TASTE. I read the recipe and agreed that the result of the original recipe would have no taste. The challenge was to add flavor without adding points. See what you think. -- posted by franzcooks

Nickey's Chicken N Asparagus Soup

A very light, simple chicken soup. Time does not include time to bring stock to boil ... might add another 5 minutes?

Hehehe, I know I shouldn't write this here because you might not want to try it! Here's my friend's reaction even though I warned him that it was mildly flavored and easy on the stomach...and that he might want to add the very ingredients that he did!

"About the soup...hehehe...I boiled the chicken in water for the broth, then added the chicken stock, shredded chx and asparagus. Well, the flavor just wasn't there and so I added a little salt then shoyu...something is missing...Aha, a little bit of dashi, the one with no MSG. Suddenly it changed the whole flavor! Auwe! Jam-up! And SO I decided to add sesame oil. Now this soup has gone through a metamorphosis...I call this soup: Oriental flavored Chicken Asparagus Soup. Guess I'll be bringing the soup to work for lunch." -- posted by marisk

Got this recipe from an Amish neighbor years ago, but she doesn't remember where she got it. I have had this at the Hoss's steakhouse chain as an appetizer or with a big salad. This is more about the broth than the ham or cabbage.
Healthy Italian Vegetable Soup

Afraid that my healthy (no meat, low fat, low salt) Italian vegetable soup was not going to be tasty, I prepared a chicken soup to add before serving, but it turned out so sweet and delicious I stored away the chicken soup for another night! ...... The optional vegetables can also be cauliflower, mushrooms, burdock root, bell peppers, potatoes, etc. Try the vegetable that is said to be healthy but you don't usually eat! The green stars in the photo are slices of poached okra added before serving. They are nutritious and adds thickness to any soup you make. -- posted by milliwuu

Indian-Spiced Tomato Soup

Summer soups using garden bounty are just the best - especially when they are full of interesting flavors but not heavy with fats & starches that leave one feeling hot & heavy after consuming. This recipe strikes me as a delightful alternative to gazpacho & I plan to use robust & assertive DelMars & Chesapeakes & Old Brooks to make it. Zing, pop, wow - for a light but satisfying summer lunch or supper.
From Sunset magazine. Allow at least an hour (up to a day) for the soup to chill & the flavors to marry. -- posted by Buster's friend

Roasted Tomato Soup

Will be making this using the grill outside rather than heat up the house when I am awash in tomatoes. Will try both on the gas grill as well as the smoker (when cooking something else LOL). Found this in Sunset's recipe gallery. It is versatile - serve hot or cold - it is simple but I bet has wonderful flavor without being heavy (too miserably hot & humid here for rich food in the summer). Another alternative to our beloved gazpacho routine.
Will experiment with fresh marjoram, basils, mint, thyme & peppers in this mix as well. -- posted by Buster's friend

Vegetarian Cabbage Vegetable Soup

I've tried other cabbage soups out there, but they are so bland! This is how I combined a few recipes and adjusted to make it more pleasant. The vegetables can be varied easily, and sometimes I'll use some frozen mixtures instead of the fresh, and it comes out just as good. This recipe makes a big pot, and it freezes great, so don't be afraid to freeze in individual portions for a later meal.
Kenchin Style Vegetable Soup

This is from "The Enlightened Kitchen: Fresh Vegetable Dishes from the Temples of Japan" by Mari Fujii. It comes from Kenchoji Temple, the first Zen buddhist temple in Japan. It is a wonderful example of shojin ryori, or "temple cuisine". The ingredients suggest this is a winter soup, although for health and nutrition, this soup can certainly be served in any season.

The author suggests that instead of the soy sauce (or in place of part of it), you can substitute miso or sake without losing authenticity.

Although this looks like a lot of directions, it's actually a very simple preparation. If you can boil water, stir fry, and use a knife to slice vegetables, you have all the skills you need. Once you make this, you won't even need to look at the directions.

Note: prep time and cooking time does not include the 2 hr soaking of the konbu to make konbu stock, but does include all other cooking and soaking times. -- posted by Gandalf The White

Asian Vegetable Noodle Soup

This light, refreshing rice noodle soup is perfect for both Summer and Winter. If needed, dried herbs can be used in place of fresh ones. Add tofu, cooked chicken, seafood and mushrooms as desired. White cabbage can be added instead of bok choy and a small amount of leek or onion is also good. The soup will freeze well but noodles tend to go mushy when reheated. -- posted by the_allergic_chef

No-Chicken Soup

This is my "trademark" recipe--I make it every single week! It is so rich and flavorful I like it more than "traditional" chicken soup. Although the secret ingredient--sassafras--isn't essential, it deepens the flavor. Powdered sassafras leaves can be found in supermarkets in the spice section. It's also called "fil'e" or "gumbo fil'e." If your market has a "Cajun" or "Creole" section, you might be able to find it there too. It's a classic Cajun seasoning, but it's also good in just about everything. -- posted by Theodwyn

Chicken Broth Soup, Mushrooms With Wild Rice Dumplings

This is a great light broth soup with cremini mushrooms, scallions, chicken and topped with wild rice dumplings. This is an easy soup and is perfect when you have some of that leftover rotisserie chicken. It's light, but offers lots of flavor and very comforting. Serve with a side salad, these are my favorites; Recipe #384938, recipe #387014 and this dressing on your favorite greens recipe #401158. NOTE: This recipe really works best with 100% pure wild rice, not a blend. Completely healthy without the need to add ANY condiments at all, unless you need a stronger taste. You can double or triple the wontons recipe, lay them out on a cookie sheet, and freeze them, then bag them and take them out to make soup in small quantities. The frozen wontons only take 1 or 2 minutes longer to cook than the fresh. -- posted by Shazzypupp

The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.

Red Kubbeh Soup

Kubbeh is a small pocket of dough that is stuffed with ground beef. Kubbeh for soup is usually boiled, whereas Kubbeh served on a platter is fried. Grocery stores in Israel and increasingly in the United States offer frozen packages of Kubbeh that are ready to drop into a vegetable soup. Enjoy this traditional recipe for kosher Kubbeh Soup, or Marak Kubbeh in Hebrew.

I found MirJ has a great Kubbeh recipe, Recipe #26755 or you can use frozen store bought kubbeh.
