			<title>Roasted Beet and Potato Soup</title>

			<description>I recently roasted five pounds of beets and have been using them for side dishes. I decided to make soup last night, and it turned out quite nice. You may get more servings, but we really like our soup and 4 servings is all I got. I am sure that canned beets would also work quite well. I like evaporated milk because it brings richness with fewer calories, but half-and-half would also be good. I don't usually have fresh celery, but 1/2 cup of chopped celery could be used instead of the flakes and 1/4 tsp fresh ground pepper instead of the peppercorns. 			<description>Yes layered soup, well that was their name ... &amp;quot;Creamy Corn, Chorizo and Bean Tortilla Chowder.&amp;quot;  It was at a small little Mexican restaurant in Taos, NM, about 10 years ago and it was amazing. The table next to me ordered it and it looked so interesting I had to try it. The soup was topped with small piles of the chorizo, avocado and olives, and cheese on top this beautiful creamy pale yellow corn chowder and then they took a bite and the bottom layer of the soup was black beans. It was picture perfect served in this big wide rimmed white bowl, it was almost to pretty to eat. Well it incorporates a spicy layer of black beans, onions and roasted jalapenos, topped with a perfect creamy corn chowder and then topped with small piles of the chorizzo, diced avocados with olives and a pepper jack cheese. A squeeze of lime and cilantro. Take advantage of cooking the chorizo, black beans and chowder well ahead of time so when it comes time to serve ... just reheat and plate up. I serve this with my chicken enchiladas with a red sauce. This is a great dish for friends or just family and it is really simple. The flavors of this soup are amazingit is somewhere between the tangy-spicy herbal flavor of Tom Kha Gai and the best butternut squash or sweet potato soup you have ever had with a little Thai curry mixed in for fun. It is spicy, sweet, tangy and rich all at the same time without being heavy or overly filling.  And it's vegan. How can it be velvety smooth without much in the way of rich coconut milk and absolutely no cream?
It was the addition of the potato that does it. This is a trick she learned when she was cooking for vegan clients as a personal chef. Small pieces of dried jerky or bacon bits are very good added to it, too.  With a salad, it makes a pleasing simple lunch or supper, particularly on a chilly day.  The recipe doubles nicely too.

You can save a little time by roughly chopping the onion and garlic, because the soup will be pureed later.
