Adi's Shepherd's Pie

I started making this for my family when I was around 13. My brother Adam, who I call Adi, was crazy about it. Some people use creamed corn, I found that the frozen corn kept everything nice and moist. I eyeballed everything in this recipe, so hopefully the amounts are fairly accurate. Enjoy... -- posted by Miraklegirl

Kfc Pot Pie

Due to the waste of chicken in the restaurants, the Colonel created a recipe to help use the chicken that was unable to be sold...so he devised the potpie recipe. You see, the chicken could only sit and be sold for 2 hrs after it is fried.
Deliciously Simple Chicken Pot Pie

This is my DH's favorite recipe, and I love it because it's so simple to make! This is especially good on a cold night after a long day at work when you want some warm comfort food but don't have the time or energy to put a lot into preparation. **I wasn't happy with the consistency of the filling, so I played around with the recipe a few times. I think I've finally got it just how I like it and have edited the recipe to reflect the changes.** -- posted by Soup Fly *

Southwestern Chicken Pot Pie

Mmmmmmmmm, really delish and a comfort food for dh and I. Easy to prepare, not much time involved. My dh showed me this in our state daily newspaper and said he'd like for me to try it. I did and fix it alot now. I serve it with warm flour tortilla's w/butter and sometimes warmed nacho chips and salsa. It's very filling and if we don't want it the next day, I have frozen it with success. Also, I have used a can of green chilis instead of the adobo seasoning and think you could spice it as hot as you want with jalepenos. We just don't do hot or really spicy. Also, the last time I only had cheddar cheese and it turned out fine, but it is better with the monterey jack/cheddar blend. Thanks for trying one of our favorite dinners! -- posted by peppermintkitty

Roast Vegetable Tart with Walnut Crust

Adapted from Gaia's Kitchen,by Julia Ponsonby. Roasted red peppers and eggplants provide the filling in this wonderful Mediterranean tart. In contrast to a regular quiche, no eggs or milk are included in the filling. Instead, there is rich base of cream cheese and basil, while either mozzarella or goat’s cheese melts luxuriously over the vegetables. This recipe has the advantage that you can prepare the various elements in advance and then assemble it at the last moment. -- posted by evelyn/athens

Old-Fashioned Chicken Pot Pie With Sweet Potato Crust

The sweet potato gives a lovely orange color to the crust and an unusual flavor to pot pie. A little time-consuming to chop all the vegetables, so you could use already chopped frozen or canned vegetables for the most part (cooked according to package directions) to make it a little quicker and easier. Can be made ahead through step 14 and covered with tinfoil and frozen at that point. Thaw it in the refrigerator when you're ready to cook it, remove tinfoil and follow step 15 for cooking (may take an extra 5-10 minutes to cook through). -- posted by littleturtle

Runzas

These are tasty little pasties perfect for hand-held eating. Great to take along for a cool-weather picnic if you have a way to keep them warm, or just good comfort food on a chilly evening. I'm trying to figure out how best to freeze these for OAMC, so I can just pop one in the oven when I come home from school and have no energy to do anything. Any tips on that would be welcome. Additionally, I'm planning on using a homemade whole grain bread instead of the frozen storebought dough, but I don't have a recipe for that right now. -- posted by kitchengrrl

Chicken Pot Pie Noodle Soup

This is one of those recipes that you start to make early on in the day and simmer all day, for the best flavor. Make this on a chilly day and it will warm you from head to toe. Freeze any leftovers; pull out and thaw when you get that nasty winter cold or just need a quick lunch or dinner. Even though the title states "pot pie" noodle, bow tie noodles have always been used in this soup; something I grew up with. When my mom cooks it, she will sometimes add some thin sliced diced celery and/or a peeled, whole onion to the pot, just for taste, and removes the onion prior to serving. -- posted by TheDancingCook

Tasty Tamale Pie

This hearty and delicious meat pie with tamale topping is a long-time family favorite of ours and based upon a versatile recipe from the 1976 Better Homes and Gardens New Cookbook. You may change things up to suit your tastes by making this with or without olives, with or without beans, with added green chiles and/or chopped tomato. For more spice, include some hot pepper-jack cheese or chopped jalapenos. Easy OAMC instructions are included. -- posted by Deb's Recipes

Turkey in the Bundt (Leftover Turkey)

This tried-and-true recipe is adapted from the makers of Nordic Ware. Simple and flavorful, the milk, eggs and cheese make this bundt casserole moist. Can be served with vegetables of your choice in the center of the rings, and garnished with apple slices, etc. This dish can be "lightened-up" using your favorite ways, and will still retain flavor.
To freeze: cook, thaw, remove from pan (or not) then wrap well and freeze.
To cook after freezing: thaw completely, then re-heat (covered or wrapped in tin foil) at 350 degrees for 30-40 minutes. If frozen whole, place frozen food in the bundt pan, covered with foil, with the bundt pan in a larger pan of water, and re-heat. -- posted by stgmngrjan

Beef & Red Wine Pies

Individual pies with a slice of onion pressed into the pastry. Very elegant for a dinner party and they could be fully assembled beforehand and just placed in the oven to cook when you are ready. This recipe could also be used to make a single larger pie. If you make one larger pie, remember to adjust the cooking time. I haven't made these yet but they sound so delicious and look so elegant in the photograph that I'm posting this recipe here for safe-keeping so that this magazine doesn't disappear again under a pile of other magazines! From the Australian July 2002 'Family Circle'.
Baked Meatloaf Shepherd's Pie

After doing a search, I couldn’t find a decent Shepherd’s Pie recipe… I did find recipes for meatloaf and mashed potato bake, however. And thus, Baked Meatloaf Shepherd Pie was birthed. This recipe is an adaptation of two highly rated recipes, Meatloaf #54257 and Mashed Potato Bake #41344. It is comfort food and a great dish to bring to someone who needs a meal, as it doubles easily, and freezes well. Enjoy! -- posted by Chef #174919

Fidget Pie

This traditional English pie is always appreciated in our house. It's a two-crust savoury pie that's very economical to make and uses up those orchard apples! The combination of apples and pork is always a winner and never fails to remind me of falling leaves and chilly Autumn evenings. I do this by eye at home, sometimes adding a little more cornflour if I think the sauce won't be thick enough or adding a little more ham/onions. I also sometimes throw in some chopped mushrooms. It's a very forgiving recipe so I'd suggest 'tweaking' to get the balance of cider/creamyness your family likes and throwing in more veg if you wish. -- posted by JustEmma

Grandma Star's Pot Pie (Chicken & Dumplings)

This is my Polish grandma's recipe, taught to her by her mother. She never wrote down recipes, which forced us to spend even more time with her, learning her recipes (no one ever complained about that though), but also had the unfortunate (for you) effect of none of us writing down the recipes either, so most measurements below are estimates. It is a little time-consuming, as everything is made from scratch, but it is good to whip up on a Sunday afternoon in January. You can also not make the dumplings and just serve the broth with other egg noodles. -- posted by ksduffster

These are SO good, I really should make them more than once a year! Walking down Main Street in these towns will usually take you past a mom-n-pop cafe' where you can buy a pasty similar to this recipe.
If Leeks Could Kill......

This is a lovely leek and mushroom pie, one of my mother-in-law’s dishes, that I’m thankful for having. It makes sense, then, that we made it for 2007’s version of our relatively new tradition: Vegetarian Thanksgiving Dinners. :o) We use frozen puff pastry sheets for this which tends to be on the thick side. Roll out the sheets a little when thawed if possible. The name? Uh... all I can say is that I asked my husband for a name and that's what he came up with. Tickled my funny bone, but it sure doesn't put a positive spin on this dish, does it. *lol* -- posted by Sandi (From CA)

Turkey, Vegetable and Roast Potato Pie

This delicious pie is always a huge hit with our family. This comforting casserole pie is filled with vegies and turkey in a creamy mustard sauce which is complemented by the cheesey crisp potato topping. Its perfect to make if you have any leftover turkey and roast potatoes from Christmas day or dinner the previous night. I got this recipe from a "Christmas leftovers" special in a magazine and have adapted it to my family's likings.
Flavorful and Comforting Chicken Pot Pie

Not just your average pot pie, this dish is full of flavor and so wonderfully comforting on a cold winter night! Add whatever vegetables you have on hand, almost any will do. I served this with a simple salad of soft butter lettuce with a lemon and olive oil vinaigrette and a Pinot Noir in front of the fire!
Illegal Pot Pie

I call this recipe 'Illegal Pot Pie' because it is such a cheat recipe that it should be illegal. It came about the other night when I was hungry for ‘something’ and looked in the cabinet and saw a can of Campbell’s Chunky Turkey Pot Pie Soup. I then remembered that I had a pie crust in the refrigerator! I am a fan of double crusted pot pies, but you can certainly use the top crust only. You can also use any soup you would like as long as it a thick, chunky soup with some substance.
The British Bulldog! Traditional Layered Beef Steak Suet Pudding

A traditional British steamed savoury pudding - fluffy dumping style suet pastry layered with tender and succulent braised beef steak - pure comfort food. Once you have prepared this, just let it steam quietly away in the background, whilst you get on with other things. Unmould this pudding at the table and serve it immediately with extra gravy, steamed seasonal greens and mounds of fluffy mashed potatoes. There is an urban myth in the UK, that men ask woman who can cook this delicious savoury pudding to marry them........be warned.......be careful! Preparation time includes the cooking of the beef steak before the pudding is made and steamed. (This recipe comes from my family's recipe collection - it was cooked regularly by my grandmother and my mum; the original recipe is written in pencil on a scrap of paper.........it was like finding real treasure!) -- posted by French Tart

Vegan Shepherd's Pie

I got this recipe from an episode of Good Eats. It of course wasn't vegan, so I made it vegan and made a couple adjustments to the measurements. I must say, this dish was so amazing that I ended up dreaming about it! The fresh herbs, the sauce, the fluffy potatoes... it's heaven in a baking dish. Thank you Alton Brown! (and btw, regular Worcestershire sauce is not vegan, but you can find vegan sauce at specialty stores. I used The Wizard's Organic Original Vegan Worcestershire Sauce. Also, Mornistar's crumbles are no longer vegan, so use Boca or equal amounts of seitan pulsed in a food processor.) -- posted by tendollarwine

Turkey Leftovers Pie

Serve with baked beans.
As the pie is intended to make maximum use of tasty leftovers, the quantities of ingredients given should only be taken as a guide. If, for example, you have more leftover turkey and less stuffing than suggested, adapt the quantities accordingly and by all means include any leftover chipolatas and bacon rolls as well!
Tip: The pie can be made using cold ingredients if you prefer. Mix the turkey and bread sauce together and spoon into an ovenproof dish. Place the stuffing evenly between the turkey chunks, season and spoon over the gravy in an even layer. Top with the mash and grated cheese and bake in a 350°F oven for 35-40 minutes until piping hot and golden brown on top. -- posted by English_Rose

Lloyd's Squirrel or Chicken Pot Pie

DH started from fluffernutter's Recipe #137552 #137552 (which came from the South Carolina Outdoor Press Association), but made so many changes that I am posting DH's version. I'm not a fan of pot pie, nor squirrel, so I told him he had to take total responsibility for any squirrel dish he fancied. To my surprise, his creation was delicious and had no strange taste at all; the meat tasted similar to dark meat chicken. He had 4 squirrels, which yielded a little over 1 pound of meat. He ended up with 2 pot pies because he wanted a lot of potato, and used full 15 ounce cans of lima beans and green peas. Our pot pies were packed with vegetables with squirrel accents. I appreciated that no cream soups nor heavy cream were used. -- posted by KateL

Bridies

My adaptation of another of Huey's recipes. He describes a Bridie as "a South African pasty filled with spiced minced lamb... well, kind of..." Minced lamb is what Americans call "ground lamb". As I don't like my foods hot and spicy, when I make these I shall be omitting the sambel oelek (or any other chilli paste) and increasing the garlic. They looked so delicious that I'm really looking forward to making these. I'm also interested to learn from South Africans how well-known this dish is in South Africa and the degree to which this version has varied from the standard Bridie. If you are planning to make this recipe, please check the NOTE below the directions about a problem I had in posting one ingredient. For yield, I also tried to write, again unsuccessfully, "2 large or 4 small Bridies". Whether you consider this recipe appropriate to serving 2 or 4 will, of course, depend on the appetites of the eaters, and whether the Bridies are being served with other side dishes or on their own! -- posted by bluemoon downunder

Peachesz Apple Sausage Cheese Pie

I have hade variations of this since I was i kid.I used to make it in crepes then graduated to pies. Use swiss cheese instead of cheddar and becomes a creamy rich variation.Use Blue cheese instead of cheddar and its tangy sweet combo will melt in your mouth.Use American Cheese for smooth texture. This works for breakfast, a hearty winter lunch or a filling dinner special. It can be served with sour cream. -- posted by Peachesz Zukowski

This is so easy and so flavorful! Each person gets their own chicken pot pie! I make them in small glass Pyrex bowls with lids so they're easy to take to work/school. -- posted by Pesh

Shrimp in Lobster Cream Pot Pie

This is a Brazilian pot pie that I have put my twist on it that is the shrimp filling that is very mouth watering. This is my Dad's crust recipe. It's very flaky and melts in your mouth. It looks like is very complicated but is not. Please try! You won't regret it!!!
BTW the crust is the best part so whatever you want to fill your pie with is cool! -- posted by Brazilianflavor in Atlanta, GA

Clipped from a newspaper food section, but I don't remember which one anymore. The sweet potato topping caught my eye, and I thought it might be good to make. Posted here so I wouldn't lose the recipe. -- posted by *Kathy*
