Southern Double Crust Peach Cobber

I live and grew up in the midwest and never had a clue that other people didn't use a top and bottom cobbler crust until I was grown. This crust is kneaded in order to have a true cobbler texture which is a bit tougher texture than a cake or pie dough.Cobbler may be frozen before baking. -- posted by Country Cook in Oklahoma

Fresh Peach Dessert

This dessert is so fabulous! It is my mother-in-law's recipe that can also be made as strawberry or raspberry by switching the Jello flavor and fruit. It is so fresh tasting that you will have a hard time stopping at just one serving! Note: It is important to note that the pudding used is the cooking kind, NOT the instant. This makes a 9 x 13 size dessert, but you could also put it in 2 pie crusts, or half the recipe for one smaller dessert. Enjoy! -- posted by Pam-I-Am

Blueberry Peach Galettes

This recipe makes two galettes, but I usually halve it. Great use for fresh beries and peaches, but frozen can also be used. From Cooking Light. Super simple because it calls for refrigerated, purchased pie crusts. Of course, you could also make your own. I substitute Splenda and sugar free apricot preserves. -- posted by Simply Chris

Peaches and Cream Pie

This pie must be chilled before serving. This is not a custard pie. The filling will look liquidy when the pie comes out of the oven. Don't bake the pie longer in hopes that the filling will firm up--the thickening occurs as the pie cools. Alternative pie pastry to use--an all-butter pie pastry or cream cheese pastry -- posted by ratherbeswimmin'

Peach Melba Tarts

Individual ice cream filled peach & berry tarts. Quick to make but they need to freeze for 4-6 hours so plan ahead. Freezer time not included in cook time. A little trivia about peach melba - the famous London chef Escoffier was once so moved by Nellie Melba's performance in Wagner's Lohengrin that he took up his pans and ice cream maker to create a dessert, both simple and elegant, in honour of the Australian soprano. -- posted by SusieQusie

This method will work perfectly every time! If you follow this recipe and do not change any ingredient amounts, you will have perfect peach pies all year round!
Canned German Peach Pie Filling With Oatmeal Crunch Crust

I have revised this recipe. Cooks have told me it has been too juicy.
When it is time to fill a pie shell,(if you desire) you can peel two apples and add sliced apples to this filling or raisins and nuts if you wish.Sprinkle 1/4 cups flour and 8 dots of butter before adding top crust. If you don't want a top crust,I have added recipe for oatmeal crunch crust.(Due to juicyness of some peaches i have revised this recipe and hope you now do not have any problems with it. Also slice your peaches at least 1/2 inch slices in width or a little more. -- posted by Montana Heart Song

Simple Strawberry or Peach Pie

This is another recipe that comes from my best friend -- who also put it in our church cookbook. It's the only way I ever make strawberry or peach/nectarine pie, because it's about as simple as it gets, especially if you have pre-made crusts on hand. I find if I use bought crusts, I can't quite get two pies out of this recipe, but I usually have leftover sauce. I use baby food jars and put some berries or peaches/nectarines on the bottom topped with the remaining sauce as a treat for my little girls. I sometimes add a layer of cream cheese to the pie, under the berries or peaches, for that little something extra -- and of course, don't skimp on the sweetened whipped cream on top! (According to my dad, whipping cream's not a garnish, it's just as important as the dessert itself!!) Cooking time is refrigeration time. -- posted by Swan Valley Tammi

Old-Fashioned Peach Pie

Serve this pie when it's at its best - on the day it's made. This is one of my favorite peach pie recipes. It has a streusel topping. The amount of time to make includes chilling dough and cooling pie.
This pie is perfect for the summer when you don't want to use the oven, but tastes just as good in the winter. Any berries work great, but peaches are awesome in this as well! The amount of fruit is just a starting point, if you think it needs more fruit, just add it before putting the mix in the crust. "Cook time" is actually cooling time. -- posted by Tee Lee

Fresh Peaches and Cream Pie

This recipe is different than any other peaches and cream pies I have read on zaar. It is delicious. Cook time is for the glaze and the passive time is for slicing the peaches and cool time for glaze. This pie is fairly quick to make. I just made this pie again (July 2007), this time I cut the water back to 1/4 cup and used all Splenda. I liked the glaze better this time. It held its shape better and didn't run everywhere. The glaze was "cloudy" looking instead of a more clear look, I think because of the Splenda. -- posted by knobbyknee

Peach Pie With Almond-Pecan Streusel

Cut from our local newspaper a few years ago. It has become a family favorite.

"If apple is the quintessential American pie, then peach is surely our summertime favorite, and all the more if it's served a la mode. To make a peach pie worth of the name, use fully ripe fruit and a pastry crust that's rich and tender but still sturdy enough to contain its sweet, juicy burden without collapsing.

To remove the skins from peaches easily, pour boiling water over them, then quickly dip fruit into ice water. Use your fingers or a small knife to slip off the skins.

This recipe calls for a crumbly nut topping, but you could substitue a classic lattice crust that lets the fruit show through. Serve the pie warm or at room temperatue, with or without ice cream. To gauge the amount of sugar and cornstarch to use, take your cue from the ripeness of the peaches; if they are very sweet-tasting and quite juicy, use the smaller amount of sugar and the large amount of cornstarch." -- posted by Beth A.

Rustic Summer Peach Berry Tart

This tart is not only pleasing to the eye but the taste buds as well. The crust is meant to be hand-crimped in a rustic fashion, so don't worry about perfection. I used peaches, strawberries and blueberries, but good substitutes for the berries would be raspberries or blackberries. A sprinkling of powdered sugar atop this tart makes for elegant presentation.
This is a wonderful summer dessert. Everyone at the family reunion has gotten to expect it. It is easy to "lighten up" by using low fat and sugar free ingredients. If you use fresh peaches instead of canned sprinkle some lemon juice over them to prevent browning. I make the 4th layer first because it takes so long for it to cool.
Tarte Aux Abricots - Glazed French Apricot Tart With Almonds

This is my favourite type of French fruit tart, even more so than apple tart! Our local Patisserie makes a wonderful Tarte aux Abricots, but they are quite expensive and VERY large, much too big for the two of us when we have no B and B guests! So, I have been tinkering in the kitchen again, and have come up with this recipe. You MUST use fresh apricots for this - tinned ones are too soft and too sweet. Plus, I love the slightly tart flavour that the fresh apricots lend to the flavours of this tart. The ground almonds are scattered over the base of the short crust pastry case to stop it becoming soggy during cooking; they also provide a complimentary flavour to the apricots. A classic French tart that will make a delightful ending to any special meal or for afternoon tea. Serve this tart with fresh whipped cream or crème fraiche. -- posted by French Tart

A perfect way to make use of a surplus of fruit! Feel free to experiment and try any other fruits you want. Just try to keep the total amount of fruit to 5-6 cups. -- posted by Blasell23

Fresh Peach Pie

I'm looking forward to when Colorado peaches are in season again so that I can make this delicious pie! This one uses apricot Jello in the filling. Prep time does not include time needed in the refrigerator to set. -- posted by The Wallaces
