Jeremy's Mom's Strawberry Jelly Ring

Emila Brittain made this for our team party for the East Toronto Dodgers all-star baseball team many years ago; I asked for the recipe and she faxed it to me on May 31, 1996. For a long time, I lost the fax -- but I finally found it! I thought it best to get this here at Zaar for two reasons: the fax has already started to fade badly, and I don't want to lose this delicious recipe again. Emila served it as a salad, but it could also be a dessert. Please note that the time to prepare doesn't include the chilling time. -- posted by Lennie

This is supposed to be "Cinnamon-Applesauce Salad," but it is weird calling it a salad!
Red-White-And-Blue Salad

My grandma Lorraine Stromgren would listen to WCCO Radio's Joyce Lamont as she broadcasted a daily recipe. My grandma would sit by the radio with pencil in hand to write down those recipe favorites! A cookbook was published in 1979 after 10 years of recipes being broadcasted. Of over 2,000 recipes that had been broadcasted, the cookbook has the recipes that were the listeners' favorites. -- posted by Bec

Orange Stuff

This reminds me of orange sherbet! It is from my favorite cookbook- The Roosevelt Raccoons "All of Our Favorites" cookbook. The cookbook contains recipes from active parents and teachers of Roosevelt Elementary School, Mankato, MN. It is where I went to school, and my family submitted all of our family favorites for it. So, we probably have 10 copies of the book in our house! I changed the name to "Orange Stuff," after our family favorite "Green Stuff." Before, this was simply called "Salads." -- posted by Bec

Lime Jello Salad

Congealed salads have long been a part of our family's holidays. This one was served first at my husband's parents' holiday table. It was such a hit with everyone, that it became the standard for our gatherings and continues today. So simple, my husband's aunt had given it to them and yet I found a way to simplify it more by using the blender. This is good even using the sugarfree Jello and lite cream cheese, etc. We love it and have even been known to have it for dessert or....breakfast!!! -- posted by eHelen

I was lucky enough to enjoy a Cooking Light dinner and demonstration where this was the final course. It was soo silky and delicious, and you really couldn't tell that this Italian favorite had been lightened up. At the time, the recipe hadn't appeared in the magazine, so I couldn't recreate it right away but when it did... Hope you will enjoy it as much as I have.
Mom's Thanksgiving Cranberry Jello Mold

A MUST for us! A neighbor in Omaha had given this to my Mom in the early'60's and she has made it every Thanksgiving since. Now I make the holiday, so I make the mold! It's very easy. Keep in mind that this has walnuts just in case you have guests who are allergic to nuts. Enjoy! *You can make this 2 days before serving so I will make it on the Tuesday before Thanksgiving and keep it in the mold in the refrigerator and just unmold it before serving. -- posted by Oolala

Key Lime Mousse; Awesome!!

This is even better than Key lime Pie because it is creamy and much richer yet still light enough to serve after a heavy meal. A wonderful mix of sweet and tart. Don't let the use of unflavored gelatin and the long directions scare you off. If you can make Jello, you can make this. Just follow the directions & you'll be fine. This mousse is great for family desserts during the summer yet with some graham cracker crumbs and white chocolate curls on top, it is fancy enough for company also. -- posted by JanetC-KY

I use whatever fruits are in season ie: peach, mango, nectarine, strawberries, plums - kiwi & pineapple are no-no's because they don't allow the gelatine to set. I also usually put in 2 different fruits for variety. -- posted by *Marli*

Summer Berry Tiramisu

This is in no way traditional, and comes from a Hotel du Vin recipe card. I have modified it as they make this in 6 x 6cm diameter ring moulds - which I do not own. I own one 20cm (6 inch) springform tin.

This also has no eggs, unless you use eggs in the sponge instead of an egg free sponge/cake recipe for the base.

You can use cream cheese in a pinch, but it is not quite the same. You can also use any berries of your choice.

Extreme Cranberry Mousse

This makes a wonderful make-ahead holiday dessert that can be spooned into a prepared graham cracker crust, or into individual 3-inch tart shells lined with a graham cracker crust. I like to use half package each of the cranberry gelatin and the raspberry, it really gives the moussse a great flavor, but that is optional. I suggest to use only Ocean Spray Juice Cocktail and jellied cranberry sauce, I made this with alternative products and the taste was just not as good. If you are using tall thin dessert glasses you should get 7-8 but it will depend on the size of your serving glasses, so yield is only estimated.
Gigantic Jaffa Cake

This is, as you might expect, a gigantic Jaffa cake. Not much else to say is there? It's great for parties and things. For those of you who aren't familiar with Jaffa cakes, just google-image-search "jaffa cake" and you'll find pics. Little tiny flat sponge cakes with orange jelly on them and all coated in chocolate. Mmm. You buy them in England. And what could be better than a GIANT INTERNATIONAL VERSION? Nothing. Absolutely nothing. -- posted by visualdichotomoy

Diet Green Tea Lemon Jello

I'm dieting, ugh, and for a treat I've been having Sugar Free Jello. After reading about green tea and how it is supposed to boost your metabolism I thought I'd try to incorporate tea into my diet. Who knows if it works? This is one tasty idea I've had. If you like strong tea then steep the bag longer or use 2 tea bags. I also divvy it into serving sizes using custard cups, but any small vessel will do, I've used coffee cups, too. Cook time is chill time. -- posted by AustinMama

Espresso Marbled Panna Cotta

This is from Donna Hay's Autumn Issue 2 (from about 2001 I think). I added more vanilla (you can reduce this to half if you only like a slight vanilla taste) and used raw sugar (not as sweet). I have made this with raspberries as well (see separate recipe). Looks great in a clear glass so you can see the pretty marbled effect (and no messy unmoulding!) Time doesn't include refrigeration time. -- posted by LilKiwiChicken

Jello Holiday Salad

Here's a recipe I used to make a lot for big family gatherings at Thanksgiving or Christmas. Could be served any time you want a cool, refreshing salad with the flavors of raspberries and cranberries and the creaminess of sour cream. From a church fund raiser cookbook, around 1984. Passive cooking time is a guesstimate for the chilling time required.
Animal-Free Raspberry Vodka Gelatin Jigglers

This recipe for vegetarian-friendly, alcoholic gelatin jigglers (think Jello Jigglers meets Jello shots) combines fruit flavored vodka, uses seaweed-derived gelatin called agar-agar (as opposed to nondescript gelatin, which is likely to be animal-derived), and reduces paper/plastic waste (no cups). The ratio of water to alcohol is 1:1, so these jigglers are quite alcoholic! For better taste/less alcohol, you might consider reducing the amount of alcohol to 1 1/2 cups and increasing the amount of boiling water to 2 1/2 cups. Of course, it's all a matter of personal taste and preference. The agar-agar powder can be found at your local South East Asian market. -- posted by Thuha
