Thanksgiving Green Bean Casserole

I just can't have Thanksgiving without green bean cassorole it is absolutely my favorite dish. This recipe is based on the classic Campbell's green bean casserole recipe. Instead of using the traditional condensed cream of mushroom soup, which is full of msg. I use organic cream of mushroom soup, it is not condensed so there is no need to add any milk. -- posted by Cupcake-Princess

Jellied Cranberry Sauce With Fuji Apple

This is from the November 2009 issue of Food & Wine. It tastes like a combination of cranberry sauce and apple sauce. The pectin in the apple eliminates the need for gelatin. This cooks quickly but allow 3 hours to chill. -- posted by Barbara's cooking again

Simple, Simple Green Peas and Sweet Onions Salad

This is a real quick and easy recipe. I got it from my Mother and I've been making it for over 40 years. It uses simple ingrediants you probably have in your pantry. You can adjust the amount of onions to your personal taste. I like it with a lot of Vidalia onions and lots of fresh ground pepper. It taste better if you prepare it an hour or two ahead of time. Can be served at room temperture or cold. -- posted by Naturelover

Pierogie Casserole

This is one of the first recipes I learned while away at college. Its a very simple side dish or main course. And great to take for a potluck dinner. This recipe freezes nicely and the leftovers are wonderful the next day. If you want, you can sauté onions in some butter and serve on the side. I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. Enjoy!! -- posted by coffybean

Creamed Potatoes for Dialysis Patients

I love potatoes, but they are a no-no for us dialysis patients unless treated in a manner similar to this recipe. The butter and cream cheese are just fine if you are on dialysis. The addition of the sweet potato adds a little extra pift. You don't have to be on dialysis to enjoy these but they are a little high in fat. This method removes much of the potassium from the potatoes, which is what dialysis patients need. -- posted by Dan-Amer #1

Ranch Mushrooms

I got this recipe from the CopyKat website and I'm posting it here for safe-keeping and to add to my ever-growing list of recipes to try. I have not made it yet, but a lot of people did say it was delicious. Some people said they sliced the mushrooms and some said they left them whole. One person said she doubled the mushrooms because they did cook down quite a bit and also added sliced onions. I guess the sky is the limit as to what variations you can dream up. I think they would great as a topping for a grilled steak.
Edited 12/21/09: I did make this last night and they are indeed yummy! I can see the need to at least double or triple the recipe as they do cook down an awful lot. I haven't experimented yet with increasing the mushrooms to say 2 pounds with 1 stick butter & 1 pkg ranch dressing mix but I think it can be successfully done judging by the amount of liquid in the pot. I'll come back and post the results when I try that. -- posted by Luby Luby Luby

Brussels Sprouts in Soy Sauce

My wife and I love Brussels sprouts and this is our favorite way to prepare them. It's our own creation and so good that I'm amazed I have never seen a similar recipe anywhere. The flavors of the sprouts and the soy sauce seem made for each other. The recipe is quick and so simple that it can be thrown together as a side vegetable any time sprouts are on hand. I always use Tamari soy sauce, but anything you have on hand will do fine. And I always use olive oil, but butter or another vegetable oil would be fine if you prefer. -- posted by Cowshill

Gramma's Glazed Candied Sweet Potato Slices

This is the recipe my gramma used to make, passed down to my mom and all of my 7 siblings. It takes times so grab yourself a cocktail and relax. It's worth the wait! One potato generally is enough for 1-2 people. Select sweet potatoes that are uniform in diameter. I do not like to use really chubby ones. I prefer to use an electric frying pan because it has the most even cooking temperature. -- posted by Chicagoland Chef du Jour

Left over (Leftover) Fried Rice Latkes or Pancakes

I had a lot of fried rice left over from a big Chinese feast I made and needed to change things up a little. I made these little pancakes and the family loved them. They are nice and crispy on the outside and soft on the inside. We dipped them in duck sauce but I'm sure dumpling sauce, mustard or any combination of your favorite would be great. They are yummy by themselves too. These could also be good hors'd' oeuvres as they are passable as finger food. My serving size may be off since I didn't really count how many I got and I made 2 + batches anyway. This easily doubles if you happen to have more left over. You can use 1 egg for 1-2 cups of rice. The point is just to get it to all stick together. -- posted by Ilysse

Grandma's Rivels

This will forever be a soup that makes me think of my grandma. Rivels are kind of simple little dumplings dropped into any flavor of broth. When I asked my grandma how to make it, she said, "take some eggs and some flour, a little salt, and rivel 'em up!" We often ate this soup with bbq grilled chicken during the summer.

(When I was younger we always had chicken rivels, but recently I made a stock with the ham bone from christmas, added some ham soup base, and diced up some leftover ham to add in. This also produced great results!) -- posted by PSU<3

Roasties for Sunday Lunch

These are the classic British roast potatoes which are a vital part of the British roast dinner. They are usually cooked in the oven with the roast meat, and will cook fine at whatever temperature you need for that - just adjust the cooking time. The cooking dish must be large enough to hold all the potatoes in a single layer. -- posted by SarahEmmm

Cheese & Butter Green Peas

Have kids who hate green peas? Well, everyone seems to have that problem! I randomly added cheese & butter to my green peas (despite being a lover of peas) and it tasted great! In fact, at the end of the day, I got more sick of the cheese than peas. Amount of cheese? One slice. (: This is even for the health-conscious...enjoy! For me, I can polish off the whole thing, but to be on the safe side serve this for two. (: You can do this for just about any vegetable, in particular non-leafy ones like carrots & peas. -- posted by Chef #1531879

Sweet Somen Noodles

Skillet Salt Roasted Potatoes

The salt is infused with fennel seed (or caraway) and used to evenly distribute the heat so the potatoes roast on the stove top. After cooking, the salt can be used to sprinkle on the potatoes or saved in an airtight container to season other meals, such as vegetables and fish.
Best Homemade Rice Pilaf

Mixture of rice and vermicelli slightly browned with a buttery flavor. I love this with ribs, salmon, or barbecued chicken. This recipe is from my mother-in-law, takes about 1/2 hour to prepare, and you need 2 sauce pans. Don't sub with brown rice because it doesn't taste as good. You can cut the butter a little if you want but the more you reduce butter the drier the rice. Use real butter! I suggest make it as is written the first time around. -- posted by Chef #1537226
