Exceedingly and deceptively easy to make, your family and friends will swear that you spent 1/2 a day making these!
Chocolate-Wasabi Pudding

Instant chocolate pudding is deepened with additional cocoa powder, heated up with wasabi powder and brightened with lime zest. It will get hotter if left to stand, so if you can't eat it all, start with the lesser amount of wasabi. Be sure to use Dutch cocoa powder; natural isn't as deep in flavor.
Valentine Candy Cones

These are so neat! My sister sent me pictures of these, and they are just darling! She is making them for Valentine's Day with her grandkids. Really cute thing to do with kids. You could probably make things for other holidays such as little eggs for an Easter cone,or candy corn for a Thanksgiving cone! They're really easy and would take no time at all.
Note** the amounts of M&M's are a guestimate. You can use more or less accordingly. -- posted by FLUFFSTER

Animal-Free Raspberry Vodka Gelatin Jigglers

This recipe for vegetarian-friendly, alcoholic gelatin jigglers (think Jello Jigglers meets Jello shots) combines fruit flavored vodka, uses seaweed-derived gelatin called agar-agar (as opposed to nondescript gelatin, which is likely to be animal-derived), and reduces paper/plastic waste (no cups). The ratio of water to alcohol is 1:1, so these jigglers are quite alcoholic! For better taste/less alcohol, you might consider reducing the amount of alcohol to 1 1/2 cups and increasing the amount of boiling water to 2 1/2 cups. Of course, it's all a matter of personal taste and preference. The agar-agar powder can be found at your local South East Asian market. -- posted by Thuha

Chocolate Covered Oreo Balls

Had these on Christmas Eve and thought Santa came early! Talk about simple - and sinful! These were extremely easy (and a lot of fun) to make.

We used reduced fat ( ::gasp:: ) Oreos, and they were just as good. You could use low fat cream cheese as well. We also decided that covering the *entire* ball made them a bit too sweet (yes, I know - how can that be?!?). Next time, we will just dunk the bottoms in the chocolate.

DH and I can't wait to try out different combinations: Peanut butter Oreos, mint Oreos, flavored chips, adding food coloring to white chocolate (for the holidays, game day, school colors, etc) - the creative possibilities are endless! -- posted by Dea Doo

Big Batch Dulce De Leche

I love this recipe because you can prepare several cans of dulce de leche at once and they keep for months in the cupboard ready to use at a moment's notice. Also there is no stirring while it's cooking. The first time I made it I admit I was nervous boiling unopened cans of sweetened condensed milk but it worked perfectly but BE SURE TO KEEP THE WATER LEVEL WELL ABOVE THE CANS while they are simmering for 3 hours. The water pressure from all sides of the cans keep them from blowing up and meanwhile the condensed milk inside cooks like it would in a pressure cooker and it turns into caramel. -- posted by Ronalynne

Heath Bar Angel Food Cake With Chocolate Whipped Cream Frosting

This was the cake we always had for birthdays when I was growing up. It has a rich chocolate whip cream frosting that has cracked up Heath Bars in it swirled on an Angel Food Cake. Don't skimp and use Cool Whip. This may be tons of calories, but after you try it, you will agree it is well worth it! Using a store bought Angel Food Cake makes this cake so quick and easy! The cooking time listed is only if you bake your own cake. I'd love to hear if your family loves it like mine does! -- posted by terriers2

Lower Calorie Quick Hot Fudge

This is a quick hot fudge recipe that I use when I really want to indulge. You can mix in any kind of 70% Cocoa and above chocolate bars (bars usually come as 2 oz, so you would need 2). I prefer to use Dagoba pure unsweetened chocolate. Whatever is available will work. -- posted by Southern Kitchen Gardener

Low-Cal Chocolate Wasabi Pudding

Adapted from recipe #409244 - reentered to get nutrition information for the low-cal version. As noted there, "Instant chocolate pudding is deepened with additional cocoa powder, heated up with wasabi powder and brightened with lime zest. It will get hotter if left to stand, so if you can't eat it all, start with the lesser amount of wasabi. Be sure to use Dutch cocoa powder; natural isn't as deep in flavor. Adapted from a recipe by Kerry Saretsky at Serious Eats." http://bit.ly/4Ij62A -- posted by DrGaellon

Microwaveable Chocolate Ganache

No double boiler needed! Use it for icing or filling a cake, or to make truffles. Recipes vary slightly so I wanted to post my go-to ganache so I can find it every time. And you can easily double or triple this one. My basic ganache uses a 2:1 ratio of dark chocolate to heavy cream, 3:1 ratio of white chocolate to heavy cream, somewhere in between for milk chocolate. Those measurements don't translate perfectly in a measuring cup so the 2:1 ratio is below (most common) The better the chocolate the richer the ganache. I love mixing semi-sweet with bittersweet. At room temperature it's a perfect truffle consistency. It can be flavored with extracts or liquers. Hazelnut extract makes it so yummy! Grand Marnier would be good too, but is delicious plain. -- posted by Chef #1530933

Pie Crust - No Fail

This recipe came from my sister in law. Thanks Steph! When I made pie crust they either turned out dry, rubbery, or too mushy. This one is ALWAYS flaky and golden brown. It is great for a pie that needs to be baked in the shell, a cream pie that needs a pre-baked shell, or I also use it for my homemade chicken pot pie. Ummm. You just can't beat it! (Don't let adding the vinegar throw you. I bet having it curdle the milk is the key to the flakiness of this incredible crust.) With any leftover dough you do not need, roll it out and bake it with cinnamon and sugar. It is so good. You may need to cover the edges toward the end of baking, so keep an eye on it. Enjoy! -- posted by terriers2
