This is a VERY easy dish to create. I got this from a friend in California and it is a great "what are we having for dinner" solution as you can have all of the ingredients on hand most of the time. I swear the hardest part is cutting the chimi's out of the packaging. I haven't tried this chicken dish yet, but it has changed my dinner menu for tomorrow. I found this recipe on Allrecipes.com where it has received 663 5-star reviews. Credit goes to Amanda Bibb who submitted it. As I was reading through some of the reviews, there were some notations that I felt should be shared here. One reviewer said that even after draining the artichokes, there was still some excess liquid in the pan, so it was recommended that the artichokes be squeezed prior to chopping to cut the liquid even more. This same reviewer made it at another time and this time used marinated artichokes and said it was fantastic. It was also suggested by a couple of people to use 1/2 mayonnaise and 1/2 sour cream instead of all mayonnaise, now that sounds really good to me too; adding garlic,salt and pepper to taste was also suggested. -- posted by Happy Hippie

Okay, I have made this in the past for "Mexican" night & poker nights... but then we had this again a few weeks ago at a friends party and just had to post the recipe for easy access & safe keeping. There are several recipes out there for this casserole, but they are all different. This one has no eggs (which seems to be hard to find) and uses only 5 ingredients. It's so easy to make but always a crowd pleaser - try it at a BBQ, alongside chili, or as a Holiday side-dish... PS- I make a double batch & bake in a 9x13x2 casserole dish. The American Indians in this region call corn, beans, and squash the 'Three Sisters' becasue, when planted together, the nourish eachother and protect eachother from garden pests.
