Trenchies...trailer Trash Enchiladas

This is a VERY easy dish to create. I got this from a friend in California and it is a great "what are we having for dinner" solution as you can have all of the ingredients on hand most of the time. I swear the hardest part is cutting the chimi's out of the packaging. You can use any frozen burrito, but the best I have found is the chimichangas from either of the club stores. -- posted by momEgodess

Southwestern Baked Beans

This is something I came up with when I wanted to use some dried beans but didn't want to have the same old baked beans. I added the barley to get more healthy grains into my family, knowing the color of the black beans would mask it. There are only 4 of us so we ended up having over half of this left after dinner. The leftovers worked great for burrito filling and a vegetarian topping for nachos. -- posted by DbKnadler

Artichoke Chicken

I haven't tried this chicken dish yet, but it has changed my dinner menu for tomorrow. I found this recipe on Allrecipes.com where it has received 663 5-star reviews. Credit goes to Amanda Bibb who submitted it. As I was reading through some of the reviews, there were some notations that I felt should be shared here. One reviewer said that even after draining the artichokes, there was still some excess liquid in the pan, so it was recommended that the artichokes be squeezed prior to chopping to cut the liquid even more. This same reviewer made it at another time and this time used marinated artichokes and said it was fantastic. It was also suggested by a couple of people to use 1/2 mayonnaise and 1/2 sour cream instead of all mayonnaise, now that sounds really good to me too; adding garlic, salt and pepper to taste was also suggested. -- posted by Happy Hippie

Jiffy Corn Casserole (5 Ingredients) Easy & Delicious!

Okay, I have made this in the past for "Mexican" night & poker nights... but then we had this again a few weeks ago at a friends party and just had to post the recipe for easy access & safe keeping. There are several recipes out there for this casserole, but they are all different. This one has no eggs (which seems to be hard to find) and uses only 5 ingredients. It's so easy to make but always a crowd pleaser - try it at a BBQ, alongside chili, or as a Holiday side-dish... PS- I make a double batch & bake in a 9x13x2 casserole dish. Also, if you add about 3/4 cup of sugar to this, you could serve it as a dessert :-) -- posted by BlondieItaliana

Hg's Rockin' Lean Bean Casserole! - Ww Points = 1

Here is yet another Thanksgiving Day recipe from Hungry Girl! The holidays are here. Know what that means? It's green bean casserole time! But did you know that even though the main ingredient in the classic dish is green beans, each serving can have about 250 - 300 calories and TONS of fat? How can that be? It's all those crazy canned fried onions that are crammed into and piled on top of the thing. One little can of those crispy catastrophes has roughly 900 calories and 70 grams of fat! Eeeks! The good news is, with just a few easy swaps, you can make your own version of this holiday fave, for a fraction of the fat and calories. Check out HG's NEW recipe and share it with everyone you know...

(Serving Size: 1/8 Casserole - 80 calories, 1g fat, 255mg sodium, 13g carbs, 4g fiber, 3g protein -- POINTS® value 1)

Please note that all of the can sizes are approximate as none were provided in the recipe from Hungry Girl. I will update this when I make the recipe! :-) ANOTHER NOTE: ***This recipe will rock your holiday world!!!! The key ingredient here is the Crispy Delites Red Onion Chips. You can buy them online at heavenlydietstore.com or yummydelights.com. In a pinch, you can use an ounce of onion-flavored soy crisps instead. -- posted by senseicheryl

Cheesy Chicken & Broccoli Bake

Found this as an advertisement for Velveeta in my Taste of Home magazine. I typically cook from most things from scratch and don't like to use canned soups, but this was really good! I'm posting the recipe as is, but I did end up adding some extra cheese, and I didn't put the stuffing on top until half way through. I was afraid it would get too crispy, but I might try it for the full 40 minutes next time. -- posted by Boxergurl
