Yule Oatcakes

I've been making these oatcakes at Yuletide for the last 5 years or so. They've become one of my favorite parts of the Holiday! I originally began making them to leave as gifts for the deer and other animals around our home, and under the trees we decorate in the woods. However nobody can ever keep their mitts off them! (especially right out of the oven) I had no idea they'd be so tasty. So now the baking of the Yule cakes has become an event. We usually pick a night and roll out about 4 batches. These are super easy to make (we usually partake of some wine during this event - that tells you how easy they are lol) They come out crispy and sweet. Perfect for breakfast or just snacking. -- posted by Nikoma

Casein and Gluten Free Almond Pulp Pancakes

I always have baggies with 3/4 of a cup of almond pulp in my freezer, the leftovers of 1/2 cup of almonds used to make 2 cups of almond milk. This recipe nicely uses one of those bags. If you aren't casein intolerant the recipe is great with 1 1/4 cups of buttermilk. If you don't have almond pulp then you can use 1 1/4 cups of almond milk, rice milk or water and use ground almonds instead of the tapioca. I throw a banana or a grated apple in with the liquid ingredients sometimes, for a different taste. I also use two tablespoons of ground chia mixed with 1/2 cup of water instead of two of the eggs now. If you do this the recipe will need another cup of so of water to reach the right consistency. This recipe makes a fairly large batch because I like having them in the freezer, they toast very well for quick or on the go breakfasts. -- posted by SWalker

It's a sweet potatoe pancake recipe that's mildly sweet, perfect for breakfast. I cook sort of free-form, in other words I throw ingredients together and see how it turns out.
Delicious Gluten-Free, Dairy-Free, Egg-Free Pancakes

Definitely a five star recipe that's base I found on another recipe site http://allrecipes.com where it had many rave reviews. I fixed it to be dairy & corn free. DH and I give this 5 stars. This is excellent served with my Recipe #362340 using the maple syrup option or drop a few blueberries on top of each pancake before flipping. They are already delicious with pure maple alone. These work with variations such as a delicious incorporation of chopped or mashed banana, alcohol free vanilla and a dash of coconut milk to taste almost like banana fritters. Enjoy them whichever way you choose! -- posted by UmmBinat

Toffeed Apples

Adapted from a recipe in 'The Australian Women's Weekly's 50 FAST desserts'. Simple to make - and delicious.Since Australian recipes are considerably less sweet than Australian recipes, American chefs may well want to add more sugar. Judge according to what tastes right for you. In her review, Karen=^..^= says that she used Fuji apples. Excellent choice: they've SO delicious. Granny Smith apples would also work well.
Low Carb Pancakes - No Soy!

I follow the Primal Blueprint eating plan so grain/starch based carbs are a NO NO! Fats, proteins, fruits and veggies however aren't off limits. These use almond meal or almond flour instead of regular flour so they're "meatier" than regular pancakes. These smell like heaven when cooking! ----------------------------------------------------------------------------------------------------------------------------------------------------------------------Top with honey or real maple syrup.
Potato Latkes (Potato Pancakes)

Latkas are a tradition for Channukah, but they are great anytime. This recipe makes about 15 latkas, but can easily be doubled or tripled. Easy to make, just allow time to stand at the stove with multiple frying pans. I use every burner that is open to speed it up. Traditionally served with applesauce on the side. Some people also top the pancakes with a little sour cream. -- posted by Karen67

Almost Martha’s Pumpkin Pancakes (Milk-Free)

I adapted this recipe from one created by Martha Stewart. Too keep them fluffy, go with the lesser amount of pumpkin (which just offers a hint of pumpkin flavor) and use all-purpose flour. But if you like them more pumpkin-y or prefer a dense pancake, feel free to increase the pumpkin and / or go with a heartier flour blend. -- posted by Dairy-Free Foodie

Vegetarian Sausages

This is great simple recipe I found online. It is great for clearing out your fridge. I saute any misc veggies I have laying around such as mushrooms and spinach and add them to the mix. These can also be put into casings and refrigerated. The colder the rice the easier it will be coat in bread crumbs. I can't say how long because they never lasted longer than a day or so. The patties can be stuffed in pita bread or eaten like a sandwich. -- posted by Irish Fraulein

Juices high in vitamin C with your oatmeal elevates your breakfast to a super-food!
The nutrients in oatmeal and OJ work synergistically to provide double the benefits.
The phenols in oatmeal and the vitamin C in Orange juice both help make LDL more stable. The more stable your LDL, the less likely it is to rupture, stick to artery walls and cause heart attacks.
So reduce your cholesterol!

Sweet & Speedy Breakfast Oat Bran Muffin (Microwave)

Stir and pop into the microwave for an easy, healthy breakfast!

I mix it up, microwave, and eat it straight out of a ceramic mug. The batter sticks a little, but to wash cleanly, pour in hot water and soap and let sit until you do the dishes!

I was inspired by *Pixie* 's South Beach Muffin (http://www.recipezaar.com/South-Beach-Muffin-263983) but I didn't have the baking powder, yogurt, or flaxseed, so I improvised.

Banana Latte

I often watch the show, "You Are What You Eat" with Gillian McKeith on BBC America. She was explaining this recipe on one of her shows and I decided I had to try it. I don't know if I got the exact measurements right, but I think I'm quite close. This is delicious and fast and easy. I think it makes an excellent quick breakfast if you have no time to eat, or makes a great snack too. ETA: I caught a rerun of the episode on which this particular recipe was featured and realized my error in naming the recpe "Banana Mocha Smoothie". The correct name for this recipe is "Banana Latte". Sorry for any confusion and no wonder, because mocha usually means chocolate is added, but it wasn't a part of the original recipe. The name "Banana Latte" makes more sense. I'm happy to note on one of the reviews that adding chocolate syrup to make this into a banana mocha works so well, though. :) -- posted by blancpage

Gluten-Free Sourdough Pancakes

Use quinoa, a high-protein and high-iron seed, as the basis for the healthiest sourdough pancake you will ever meet. The secret to the smooth and bright texture is sprouting the quinoa ahead of time, and using a high-powered high-speed blender like my Vitamix.

The taste is similar to english muffins or mild injera (Ethiopian flatbread). The texture is amazingly light, almost frothy, but still chewy, holding its shape with no problem.

As a general purpose gluten-free batter, this sour quinoa batter is surprisingly versatile and easy to work with. This recipe has been used for sourdough crepes, okonomiyaki (Japanese savory pancakes), and even as the base for savory pies. -- posted by Naomi Most

Only 1 WW point!!! I love to whip this up in the morning when I'm rushing around to get ready for work. I just set it up and can forget about it for a few minutes. There are several varieties of this that I make, it just depends on what I have on hand. It is NOT a savory or rich omelette, but a healthy dish that is a real favourite of mine.
Ana Gourmet: Oat Bran Pancakes

Fluffy, low cal, vegan pancakes made with whole wheat flour and oat bran. My whole family loves them and don't seem to suspect for one minute that they're a diet friendly food item. They have a lovely oaty flavor to them and they're very filling. The only downside is they're not completely fat free, but they are very low in fat. See the nutritional information table for more details. Try these with your favorite sugar free syrup, jam or fresh fruit for a satisfying low cal breakfast. Enjoy. -- posted by Chef Roxanne D.

Big B's Pancakes (Dairy Free, Diabetic Friendly)

My late dad was a fabulous cook. My mouth waters when I think about his concoctions. He owned a pancake parlour and this is his pancake recipe that he used and that I memorized as a young girl. Fortunately it is dairy free so it works well for my dairy allergic son. My dad insisted that this recipe worked better if the batter aired for at least an hour prior to cooking. The batter can last in the fridge for up to 24 hours. I usually use 2 pans simultaneously to halve the cooking time, so the cooking time specified in this recipe is for the whole batch using 2 pans. -- posted by Cheron

Raisin Bread French Toast for One (Dairy Free)

I love French Toast and so many of the recipes I've seen are for more then one person. So I came up with this one. If you don't like Nutmeg, use Cinnamon instead. I'm sure it will be just as tasty. I used agave instead of maple syrup because its low on the gylcemic index. You could use an unsweetened seed or nut milk instead of soy if you wish.
Spanish Omelette (Tortilla De Patatas) (Spain)

POSTED FOR ZAAR WORLD TOUR 5. Along with paella, the ubiquitous tortilla de patatas - is perhaps one of the best-known Spanish dishes. It is impossible to find a self-respecting tapas bar that does not feature tortilla in its repertoire.
As delicious as it is versatile, this Spanish staple lends itself to countless variations according to personal taste. Some cooks mix in mushrooms, beans, spinach, and tomatoes, while others choose to omit the onion and instead cover the tortilla in tomato sauce. Others still would never dream of serving the tortilla without heaping mounds of mayonnaise. Each region, and each tapas bar, will have its own variation of the traditional tortilla. This delicious tapa can be served warm or cold. From http://www.spain-recipes.com. -- posted by UmmBinat

Sarah's Vegan Oatmeal Amazingness Cookies

This vegan chocolate chip oatmeal cookie eats more like a breakfast food than a cookie. If you are looking for a sweet desert cookie for kids, this recipe might not work. However, if you are trying to eat healthy, preserve the environment, and indulge in a little yumminess, then this is an excellent cookie to bake! (I personally like the cookies chilled.) I thank my friend, Sarah F., for giving me this fabulous recipe.
NOTE: For the ease of posting, I listed an egg in the ingredients. Egg Replacer works perfectly well in this recipe and it is usually how I make. If you live near Trader Joe's, their orange flavored cranberries are perfect for this recipe. Also, you can substitute currants or dried berries for the raisins. -- posted by The Bad Cook

Packed Pancakes

These pancakes are heartier than the average pancake. I created them to serve as a meal for my picky milk-allergic toddler who won't eat anything from a spoon or fork. Those without milk allergies could substitute cow's milk, water, or any other kind of "milk." I've also made them with other fruit or vegetable purees -- posted by cathianne

Summer Berry Cornbread Pudding

A nice summery twist on cornbread! I recently travelled across U.S.A. for the first time and became addicted to cornbread. Since coming back, I've been experimenting with different recipes, and this is one of my favourites. It's nice on its own, with custard for dessert or milk for breakfast. It's easily made wheat/gluten free by using spelt or rice flour, or lactose free with soy yogurt. Hope you like it! -- posted by Rainbow*Bubbles

Healthier Basic Crepes

This is my adaptation of Recipe # 55172. Unsweetened soy milk is best. (I'm lactose intolerant.) Reduce the sugar if you use sweetened soy milk. For vegetable crepes, omit vanilla and reduce or omit sugar. (It does not need salt, but if you must, you can add a pinch of salt.) For what it's worth, I am using an old Wagner cast iron frying pan, that's so worn I can't read the markings, but it measures 8 3/4" wide at the top (inside dimension), and cooking on a Frigidaire glass/ceramic cooktop. I started with the element set at 4 and then reduced it to 3.5 after the first 2 or 3 crepes. -- posted by Lianna Banana

Oatmeal Raisin Breakfast Cookies

This recipe has only four common ingredients, is easy to double or triple, and makes a good meal for those who are on a diet. Even better, it's vegan! In my opinion the cookies taste best right out of the oven, so don't hesitate to serve immediately. (;

The ingredient measurements are estimates, since I make this without measuring anything but the oats. If they aren't sweet enough, add your sweetener of choice. -- posted by Qzxyntop

Leek and Pepper Omelette

I found this recipe in Janet Wright's book "The top 100 health tips", published by Lifetime Distributers, Castle Hill, Australia.
Janet says "Eating the right meal within an hour or two after excercise could make the biggest difference you've noticed yet. That's the time when your body needs - and most effectively uses - food to turn your effort into stronger muscles and increased energy levels. It's also when you burn fat most effectively. Eggs are a concentrated source of muscle-building amino acids and other body-building nutrients. They're also rich in vitamin K, which helps to heal bruises and other minor sports injuries. This vitamin works by ensuring that blood is able to clot normally, so it could also reduce the danger of blood clots in arteries."
The original recipe called for groundnut oil, but I think butter would work just fine - or any other oil you have on hand.
This would make a nice breakfast for an extremely hungry person, or could be shared among a few people. If you're just making it for yourself, you might want to halve it.
I haven't tried this recipe yet. -- posted by TALIA #3

Organic Meal Replacement Shake (With Chia Seeds)

I have been trying, unsuccessfully, to find a "healthy" commercial, meal replacement, that doesn't have artificial sweeteners and/or sugar alcohols (like Xylitol, Manitol, Stevia, etc), which give me migraines. I have MCS (Multiple Chemical Sensitivity), and must avoid ALL chemicals, so organic is a must, for me. Each time I find a shake, I think I can use and recommend to friends, I look closer, and find something in it that won't work. Add to that, the fact that they are all very expensive, and I finally decided to make my own. Here is the result of my search. -- posted by Devonviolet

Whole Wheat Pancakes With Blueberry Compote

This is a refresh of a Wholeliving.com recipe. Martha Stewart's gang opts for low-fat buttermilk, but I never have that on hand so I trade in 2% milk or vanilla soymilk -- depending on what's in the fridge. The added wheat germ supplies some potassium and iron (it has more than any other food). I also add a teaspoon of cinnamon (because I love it) and cut the whole wheat flour with some all purpose flour so they don't taste too "nutty." To make the compote, you can use fresh or frozen blueberries -- up the lemon juice for more tartness and up the sugar for more sweetness. -- posted by Kristine at Recipezaar

Apricot-Walnut Oatmeal

Pineapple Oatmeal Pancakes (Gluten-Free)

Oh my gosh these are AWESOME! This can of pineapple on the counter was calling to me, and my husband can't eat wheat, so if I make pancakes they're gonna have oats in them. Plus, the Tahitian Pancakes came up on Heroes in the past week or so, so that's on my mind.
I combined two different recipes that I found online, one for pineapple pancakes and one for oatmeal pancakes. Neither one is like this new version though. SO AWESOME!
One last thing, I used coconut milk instead of cow milk, since my husband is also on this non-dairy kick.
This recipe makes A LOT of pancakes, and they're very filling. Store uneaten pancakes in the fridge and have breakfast all week! -- posted by kitchengrrl

Gluten Free Biscuits

This Recipe is from Roben Ryberg's Cookbook You Won't believe it's Gluten-free!
Easy and super yummy! Even good re-warmed the next morning(it any left!)
I followed directions exactly except used soy milk and marg. and patted out and cut with a knife, worked fine but might try dropping from spoon like traditional drop biscuits next time, don't know how that would work, I have only done as writen so far.... -- posted by Robin Batterson

Coconut Date Granola Bars

This is a wonderfully satisfying treat packed with oats, nuts, and fruits. When they first come out of the oven, they may be fragile and slightly crumbly. Make sure to let them cool before cutting, and they will soon become firm, chewy granola bars. -- posted by sszz

Our Favorite Granola

I started making granola in college, though it was much more plain then. Years intervened when I didn't make granola, then when my daughter started buying a local specialty version I decided to dust out my old recipe and update it. I thought it would take several tries, but my family liked this first one so much, we've stuck with it. I like doing this as a large batch - fills up my jelly roll pan 3 times - keeps well. It is a very adaptable recipe - friends of mine have substituted nut butter for part of the honey, for instance. -- posted by Chef #750419

Fresh Fruit Quinoa "risotto"

Oddly, adapted from Men's Health magazine. Excellent for breakfast or dinner, and a good way to get the family to eat healthily. The juice adds a fair amount of sweetness; if it is still too bland for you, add some brown sugar. I used a "light" apple juice, though you can substitute a regular one. -- posted by Laura Meehan

High Altitude Hard-Boiled Eggs

After moving to Colorado from the coast, my tried and true hard boiled egg recipe no longer cooked my eggs fully. After quite a few experiments, I finally found an easy, fool-proof way to hard boil my eggs at 5500 feet above sea level! -- posted by Allisonsdinner

Gluten Free Dairy Free Corn/ Cornmeal Pancakes

GF flours are so expensive (especially in Panama), so I'm trying to get a good corn based pancake. I've been tinkering with this recipe, and I'm posting it here for safe keeping. It's a work in progress. Here in Panama they have what they call crema de maiz or cream of corn. It is a very fine ground corn flour. Masa harina that you use for tamales might work as well. -- posted by mjerusha

Peach & Pear Muffins

This recipe was designed in answer to a request from my son for crocodile muffins. The pear skins are the crocodile skin, the peaches are the eyeballs and the butterscotch chips are the teeth. My version is wheat, egg, and (almost) dairy free, but feel free to switch it up and use eggs and milk if you prefer. I haven't found dairy free butterscotch chips, so you could leave them out of the recipe if you needed to. There is no added sugar in this recipe because the fruit and butterscotch are plenty sweet. -- posted by DiabeticMom

Eggs in Purgatorio

I'm grateful to andypandy for telling me about Eggs in Purgatory in answer to a community question about varying poached eggs. I checked out the various recipes and then adapted them to my needs and came up with this.
Rather than an Italian style tomato sauce, it is more like a Latin salsa. The garlic and onions can either be done first in the skillet, adding a bit more oil to the skillet after that so as not to let the eggs stick,, or, if rushed then can use garlic powder and dried minced onions in the salsa/sauce. (Salsa just means 'sauce' in Spanish)
I get a kick out of watching it cook because the edges of the egg look kind of ragged as the tomato sauce bubbles up and the pattern looks like flames,,, haha and thus the name of the dish.
I'm not fussy about the exact amounts of ingrediants and many of you 'tweak' recipes anyway,, so please understand that the amounts are approximations,, and it also depends on how many eggs are being poached. The fry pan should be a size so that the number of eggs fits with just a little bit of space between and around the eggs and the sauce has some depth, so don't use a huge pan for two eggs. -- posted by Rainbow - Chef 536866
