Cinnamon Cookie Bars

I like this recipe because it is so simple to make. I read that cinnamon is very good for you. I found a cinnamon cookie here, but I didn't like that it didn't hold together. I took a recipe of mine and adapted it to the Cinnamon Cookie I wanted. If you choose to glaze this cookie, warm the frosting in the microwave so that it can be spread thinly. -- posted by Djoanne

Midnight Biscuits

edit: I did have the quantities right!

So-named because I don't think I've ever made these before about 10pm :o) The recipe was originally called the more boring "Cinnamon Snaps" and came from "Quick and Easy Biscuits" by Valerie Eames. These bicuits also work with cocoa or ground ginger and probably many other spices. I would like to point out that, even for this ginger lover, an entire teaspoon of ginger does make the mouth a tad warm! The lack of eggs in this recipe also means that you can eat the raw dough without worrying about salmonella - although my usual theory is that I grew up licking the beaters clean of raw cake dough and it hasn't killed me yet so I'll probably be okay. -- posted by hels

Lemon-Frosted Sugar Cookies

I was looking to make sugar cookies for an event and disappointed to not find a relatively healthy version here. So now I'm adding one. This one began as a Cooking Light recipe and includes my adjustments. Not your typical sugar cookie, the wheat germ gives these a pale brown color and a nuttiness that contrasts nicely with the lemon glaze. The dough needs to chill at least four hours and does best if chilled overnight, so you need to plan ahead with this one. -- posted by justcallmetoni

Molasses Crinkle Cookies

I love cookies and the molasses is so good in these with the spices. If you refrigerate the dough for about 1 hour, you can shape the dough into balls and roll them in granulated sugar. I think this is a little easier and your cookies are more uniform. -- posted by MelinOhio

These cookies are very yummy. They are crisp on the outside and alittle soft on the inside. They remind me of those wheat containing animal crackers, that I used to eat as a kid(before I was diagnosed with Celiac Disease.)These cookies are very yummy and lots of fun to make and decorate.I like making them with coloured sugar or shaking alittle powdered sugar on them. They also keep very well in a sealed container.Last year I made them to take up to my cottage on our week of holidays.
Lemon Buttercups

A friend was recently recalling a cookie his mom made called a buttercup. In the version from his childhood growing up in Alabama, Jiffy pie crust mix was combined with sugar and spices and used to make a filled cookie baked in a muffin tin. With that description in mind I began my search and found several version of this cookie including one attributed to Gale Gand, a supremely wonderful baker. These look richer and more refined but just as tasty. I have not tried this recipe yet but will do so after the holidays.
Soft and Fudgy Peanut Butter Cookies

These cookies weren't supposed to be! A Zaar chef, who shall remain nameless, ;) posted a recipe for a chocolate cookie with pb chips in it. But instead of listing butter as the first ingredient, she accidentally listed peanut butter. After I had mixed everything together, I knew something was wrong because I ended up with a bowl full of crumbs, not dough. To try and salvage the ingredients, I added the milk, left out the pb chips and formed them like traditional pb cookies. Thankfully, the resulting cookies were soft and tasty so I decided to share. :) -- posted by Marg (CaymanDesigns)

Old Fashioned Tea Cakes

These are the cookies from my childhood. The recipe is originally from the Red River Cookbook of Shreveport LA, published in 1953. This makes the perfect sugar cookie dough for cutting out shapes. The dough is relatively easy to work with and does not seem to toughen up with repeated rollings. Best of all, the cookies do not puff up, they retain the shape they were cut into. The cooled cookies are slightly crisp, very thin, and have almost a shortbread texture. The dough will freeze in rolls for slicing or shaping at a later date. The yield will depend on the size of cookie cutter you are using. We normally end up with about 4 pans full of cookies. If you keep to simple shapes, the cookies pack and travel well with minimal breakage. -- posted by gourmetmomma

Sablés Normandes à La Cannelle

Sablés are sometimes called French butter cookies. The name 'Sablé' is French for "sand", which refers to the sandy texture of this delicate and crumbly shortbread-like cookie. The cookie originated in Normandy hence the 'normandes'. 'À la cannelle' means literally "has cinnamon". So these are Cinnamon Cookies, and they are delicious!

Notes:
Hard-boiled eggs-Contrary to popular belief eggs should never be boiled they should instead be "simmered" for 12-15 minutes depending on the size of the egg
Mixing-I highly suggest mixing using your hands, this will melt the butter and allow the mix to become dough
Buttered Baking Sheet: Yes, you need to use real butter NOT cooking spray
Rolling: I have gotten away with rolling individual balls and flattening them with a cup bottom but if you have time I suggest rolling them out

These are some of my favorite cookies and they tend to disappear fast so I always make double. Plus these cookies can be made into any shape so they are great for holidays! -- posted by MyBentoOfAwesomeness

Original Be-Ro Melting Moments-Afternoon Tea Biscuits or Cookies

These are great little "light as a feather" and meltingly crisp English style biscuits, or cookies. This recipe is the slightly adapted recipe from the Be-Ro Flour cookbook - they suggest lard, but I don't "do" lard! Melting Moments ALWAYS made an appearance on my grandmother and mum's afternoon tea table, and we also had them popped into our lunch boxes for school. The recipe is SO easy to rustle up and they stay crisp and fresh for up to 5 days in an airtight tin. You can roll them in coconut or oats, I prefer coconut - but I am sure they would be just as nice with oats, which is a suggested alternative.
Banana Nut Cookies

These are so easy and so good! Like banana bread in a cookie size! Even better when they're frosted (mmmm...buttercream :). Can roll them and cut them out, or just roll into small balls and squish with the bottom of a glass. I've used the Betty Crocker and Mrs. White's muffin mixes with equal success. Have yet to try with Jiffy mix though since it's always out. -- posted by F-16 momma

Chocolate Crinkle Cookies

These are crisp on the surface with a soft and gooey centre. These are great for the holiday season as the white powdered sugar contrasts dramatically with the deep brown chocolate crevices and they look as though they are covered in snow. The recipe is from "Bakewise: The Hows and Whys of Successful Baking" by Shirley Corriher. These are Shirley's favourite cookies! She is a food scientist (as well as a cook) thus her recipes are very reliable. The dough needs to be refrigerated for a few hours or overnight.
Traditional Algerian Sables (Cookies) - Like Linzer Augen

This is my own family recipe for the traditional Algerian 'Sables' cookies.
These sables are very easy to make & are a real favourite in our home. We like them with strawberry jam filling & icing sugar dusting or with apricot jam filing & dessicated coconut finish... but you can use any of your favourite preserves (if they have fruit pieces in you should sieve them before using.
I have a special 4cm fluted sables cutter but you can use any cutters. I oftern use star cutters then punch out the small round centre by using a small metal bottle top (like on food colourings), or round cutter & using a small star, heart or flower cutter for the centre.

These sables freeze nicely in layers separated by parchment or waxed paper in an airtight container. Allow to defrost in a single layer then dust the tops & fill with jam. -- posted by Um Safia

British Fig Rolls - Almost Better Than Shop Bought!

This is a recipe I found many years ago for authentic Fig Rolls, and they are almost better than the shop bought variety, much though I love the commercial ones! Try to roll out the pastry as thinly as possible, other than that, this recipe is a breeze to make. Fig rolls are a much-loved "biscuit" from my childhood days and I make them whenever I can as I now live in France, as we cannot get them here. Fig rolls are great for a mid-morning snack with a cuppa as well as being ideal for school lunchboxes, picnics, gifts and afternoon tea. (I have posted this recipe on Zaar especially for Lalaloula, who asked about a fig roll recipe in the British forum.) -- posted by French Tart

Barbara's Tea Cakes (Cookies)

A dear friend shared this recipe with me many years ago. The recipe became a favorite & I have used it for everything over the years. It has made it way to many a Girl Scout mtg, school party, potluck, etc. Tea Cakes became my family's favorite cookie at the holidays. It isn't Christmas without a platter of these & a bag for everyone to take home. They are good plain and sweeter with the glaze & icing. -- posted by Susie D
