Posted in response to a request. This untried recipe is from Gundel's Hungarian Cooking. First published in 1934, this is a compilation of the best recipes of Gundel's, a then famous restaurant, and it's chef Gundel Karoly. The English translation is somewhat broken so I've tried to make it a bit clearer. I am posting the ingredients as they are listed, lard and all.
Pinebark Fish Stew

Pinebark Stew comes from the Deep South, made from river fish over a pinebark fire right by the stream and often eaten from a slab of pinebark. In Louisiana it’s usually made with catfish; in the Carolinas from bass or bream. Almost any kind of flat fish will do. You don't need pinebark to enjoy this meal. -- posted by Olha

Catfish Wings

What's that you say? Catfish don't have wings? Well, I've never seen a buffalo fly either. Try it anyway! Note -- catfish nuggets are the odds and ends and broken pieces left over from the filleting process. They are regionally available in the southern US. If you can't get them just substitute ordinary catfish fillets cut into 2 inch chunks or any other firm, white fish similarly cut. -- posted by 3KillerBs

From Louis Osteen's Charlston Cuisine, Recipes from a Lowcountry Chef." His restaurant is Louis's in Charlston. This has buttermilk, flour, cornmeal, rice flour, beer, some spices and is fried in peanut oil. Can use 8 (4 oz. each) fillets or 4 (8 oz. each) fillets.
Catfish and Potatoes With Salsa Verde

Salsa verde - the parsley and caper sauce traditionally served with meat and fish - adds a welcome kick to potatoes, too. In season, sliced tomatoes will also benefit from the sauce. Add them to the plate, and you'll have a complete meal.WINE RECOMMENDATIONOnce one of the most popular of all Italian whites, Verdicchio is better than ever these days. Sip it with this dish and discover how the wine's tangy character complements both fish and pungent sauces
FISH ALTERNATIVES
In place of the catfish, you can use swordfish, salmon, halibut, or tuna steaks, or mahimahi or mackerel fillets—really almost any fish you can grill. -- posted by Witch Doctor

Easy Fish Nuggets

I make this fish nuggets with catfish and stripper we catch out of the lake. This is easy and tastes great any time of year. Also great for those weeknights when you just don't have the time or energy for serious cooking. I usually accompany this with whatever veggie I happen to have on hand. And as I don't do a lot of frying, I tend to fry something else with it. -- posted by SaffronMeSilly
