No-Bake Boiled Chocolate Fudge Oatmeal Cookies (Peanut Butter Op

My family's favourite childhood snack. I like it with smooth peanut butter, my mom likes it with crunchy peanut butter, my sister likes it without any peanut butter at all...you decide! Or spoon out some of the cookies and add peanut butter to the other portion!

For the nuts, I've done everything from pecans to cashews to coconut!

Try it differently each time. -- posted by GoldsmithLissa

Oatmeal Chocolate Chip Cookies

This is a variation of a standard chocolate chip cookie recipe. The oat flour gives the cookies a little extra crunch, but they are still soft and chewy. I had to taste test several before I let anyone else have any. Cooking time is per sheet. -- posted by Tyshero

Black Forest Chocolate Chip & Cherry Cookies

An excellent cookie for chocolate and cherry lovers alike. As you may know, the appellation 'Black Forest' does in fact refer to a forest of that name found in Germany, where the Black Forest Gateau was believed to have originated. Since then chefs have used their imagination to apply the combination of chocolate and tart cherries, customarily soaked in Kirschwasser (also credited to that region, where tart morello cherries grow) to a number of different desserts and delicacies. That being said, this delicious cookie is very adaptable to suit different tastes. It can be made without the chocolate (just add an extra 1/2 cup or so of cherries), extra chocolatey (add 2/3 cup unsw cocoa powder to the batter with the flour), kid friendly (soak the cherries in juice or a simply syrup), or easily halved. These cookies are very moist and chewy, which I love, but if you prefer crunchier cookies you may want to use a different batter base. This recipe is adapted from Dede Wilson's "Chocolate Chip Cookies". Cook time includes chill time. Cheers! -- posted by Oenophilly

This is how I get rid of our extra plain, boring shredded wheat that no one really wants to eat. They are crunchy, but still soft.

I got this recipe from Stevia Sweet Recipes By Jeffrey Goettemoeller. He recommended using carob chips, but I think I'll stick with regular chocolate chips, besides probably omitting the sesame seeds. However, it looks like a great recipe, and I look forward to trying it. -- posted by ilovechocolate

Pebble Cookies

A chocolate cookie for those who like to sneak some nutrition in when the kids (or husbands!) aren't looking. Brownie-like taste and texture. My grandsons originally called these "mud pies"; the nuts and chips were the "pebbles", and the name evolved from there. This is a tweaked version of an old family recipe. We like it without fruit, but my neighbor swears it's much better with a handful of dried cherries added; she also likes to use part whole wheat flour. -- posted by Mumpy5

Dark Chocolate is for romance, milk chocolate for nurturing, and peanut butter for the prevention of poverty. If you mix it all together you get steadfast love in times of hardship! Go ahead and switch the peanut butter for hazelnut spread (wisdom) or almond butter (love) if you want a diiferent flavor. -- posted by The Sugar Witch

Chocolate No Bake Bundles

Yes ... a desert from me. I'm not too much into desserts, but this is worth mentioning. My girlfriend made these for a bridal shower we both attended last month and they are absolutely delicious. Crunchy, sweet and even though I like chocolate, I'm not a "chocoholic," so for me to really like these, it says a lot. They just firm up on the counter and take minutes to make. A perfect like snack for a party. She found the recipe in a small local cookbook from her home town in TX. She cooks very little, but loves to bake, however, she admits ... her idea of baking is never having to turn on the oven. Well, this was the perfect dish for her and it was a hit with everyone. So I had to share. -- posted by SarasotaCook

New York Times Chocolate Chip Cookies

This is my favorite chocolate chip cookie recipe. The New York Times did a big article on the perfect chocolate chip cookie, interviewing and sampling several famous chocolate chip cookies at various bakeries. Several tests were done; larger cookies (such as six-inch affairs) scored better, as did letting the dough age for 24 or even 36 hours (up to 72 hours). A small sprinkle of sea salt was also recommended. I usually make 3 huge cookies and divide the rest of the dough in half, wrapping it in saran wrap. Also, I've cheated a bit at this recipe and used plain flour instead of the two types of flour, as well as neglected sifting the flour. I don't have a paddle attachment on my mixer. I also usually use chocolate chips. You still achieve the very special taste, but the presentation is nicer when you follow the recipe exactly. From New York Times, July 9, 2008. -- posted by Alexis L Sutter

Chocolate-Dipped Orange Cookies

This recipe originally called for lemon in place of the orange but orange and chocolate translates to Christmas for me. Found the original in The Washington Post who attributed the Ghirardelli Chocolate Cookbook. In homage, consider using Ghirardelli chocolate for this recipe. Whatever chocolate you use, use block chocolate, not morsels. ****dough needs 30 to 60 minute minimum chill in the fridge (good for making the day before)**** These turned out to be the star on the Christmas platters. Several folks would not believe these were not purchased! They are that good with bittersweet chocolate & about 3+ teaspoons orange zest. Will make next with tangerine zest! -- posted by Buster's friend

German Chocolate Cookies

Found in the Washington Post who attributed it to cookbook author Sally Sampson's "Cookies". The dough can be frozen for up to two months. The cookies keep 5 days room temp in an airtight container (good for mailing!) & two weeks in the freezer after being baked (handy!). NOTE: To toast the pecans, spread them on a baking sheet and place in a 325-degree oven, shaking the sheet occasionally, for 15 minutes. Watch carefully; nuts burn quickly. *****these were one of the first gobbled up cookies on our Christmas trays! They are very dark & lumpy bumpy - suspicious looking in fact - but once tried were scooped up fast!****** -- posted by Buster's friend

Secret Ingredient Chocolate Chip Cookies

Yes, another all-time favorite recipe for the all-time favorite cookie!
I stumbled upon this "Once Upon a Chef" recipe and knew I had to try it. I'm thinking the secret ingredients are the processed oats and coconut which give the cookie a chewy inside, but a crisp outside. They are delectable! My husband, who doesn't like coconut, really loved these. I used a coffee grinder to pulverize the oatmeal since I don't have a food processor and it worked great. -- posted by DuChick

Rachel's Fantabulous Nesquik Peanut Butter Chip Brownies

I love how well Nesquik lends itself to baking! This recipe is wonderful for doubling to take to parties and potlucks. Concocted these based off my Pink Brownies recipe, except no additional cocoa powder is needed because there's already chocolate in them. Prep Notes- you can use self-rising flour if you omit the baking soda and salt; AP and cake flours need them or else it won't come out right. If you take out the butter and use all applesauce, use another 2-3 TB or else there won't be enough moisture. If using just one serving of applesauce, those little Mott's single serves are awesome. Can also sub 3 egg whites for the eggs. And of course, the peanut butter chips are what makes it special, but sub regular chocolate chips for traditional brownies. -- posted by the80srule

Chewy Chocolate Cookies

This is a Cook's Illustrated recipe that was originally published in January 2009. These are dark, almost fudgy cookies that are not crumbly at all. They develop a nice, crackly top and are not overly sweet, even with the granulated sugar coating. CI recommends using Callebaut Intense Dark L-60-40NV, but any high- quality dark, bittersweet, or semisweet chocolate will work. Light brown sugar can be substituted for the dark, as can light corn syrup for the dark, but with some sacrifice in flavor. A spring-loaded ice cream scoop (size #30) can be used to portion the dough. -- posted by Chilicat
