Easy Hearty Chili

This is a hearty chili without tomato chunks. If you prefer chucks of tomato in your chili use diced tomatoes instead of tomato sauce. This is just enough for a lunch for my husband, our toddler, and myself, but if we need a bit more I'd go to the 22 oz size of tomato sauce and or beans. Do not leave out the salt since the little bit really brings out the other flavors. IF you making a large pot to have left overs leave out the salt since chili always gets saltier as it stores. I started with another chili recipe I found here, but we made several modifications so I am posting it as is. -- posted by Vyrianna

Individual Rice Krispie Treat (Microwave)

This is a classic treat, but it is usually made in a big batch. I came up with this individual version one day when I was scouring the pantry for something sweet. I guess you can pat it into a square if you REALLY want to be authentic, but that would probably be quite messy, time-consuming, and it's easier to just eat it right out of the bowl. -- posted by Greeny4444

But no matter what time of year, I’m always down with quick recipes. You can make this sauce in the time it takes to boil the pasta. My whole wheat pasta cooks in 9 minutes, so this simple sauce makes a 9 minute summer meal that’s hard to beat." -- posted by SPrins

Kamut Salsa Lettuce Wraps With Cojita Cheese Crumbles

Kamut is a type of wheat also known as Krorasan, that is powerfully nutritious - loaded with more protein, fiber many vitamins and antioxidants that "regular" wheat doesn't have. It can be found in natural food stores.
The recipe can be found here: http://lobsterandfishsticks.com/2009/06/10/kamut-salsa-lettuce-wraps-with-cojita-cheese-crumbles/
While the kamut makes this dish extra special and almost exotic, brown rice coul be substituted. -- posted by ChefMamaBlogger

Amish Corn on the Cob

One of my dear friends, Pam, comes from an Amish background and each Summer we head to Millersburg, Ohio to visit her relatives. One visit was during the first Sweet Corn harvest and this dish was served at their table. Initially, I was sceptical about it, having never had my corn served this way...that is, until I ate it and then I couldn't get enough! That was 30+ years ago, and each Summer I wait with the greatest of anticipation for the first Sweet Corn to become available so I can have this simple feast. It's hard for me to have corn any other way now, as it always seems that "something is missing."

Note: The servings for an individual are two ears of corn per person. Just increase the recipe, per person, for your serving needs. -- posted by The_Swedish_Chef

Amaranth Breakfast Fruit Bowl - Elimination Diet

Cooked amaranth, berries, maple syrup, cinnamon and a splash of rice milk so much better than oatmeal!! This has become a staple for me on this Elimination Diet. I cook up a big batch of amaranth. Then, throughout the week I can put this together in under 5 minutes. Great for a quick breakfast or yummy filing desert. I love the "pop" of the amaranth! I use the 3 berry frozen mix from Costco. Frozen fruit is a must for me as I am doing this diet in the middle of winter. Use whatever non-dairy, non-soy milk you choose. I like rice milk. Adjust the toppings to your liking. Time to cook does NOT include the cooking of the amaranth.
AMARANTH: This grain cooks up soupy. Don't add salt to the amaranth while cooking. -- posted by Mrs Goodall

Beer & Stilton Stuffed Beef Wellington

This recipe was designed around two of my favorite things, beer and Stilton. I opted to use Dogfish Head's World Wide Stout as I really like the way it pairs with the cheese, but any sweet strong ale (Belgian Strong, Barleywine, etc.) would work. Likewise, the cheese is the same thing. I love the Colston Bassett Stilton, but any strong bleu would fit the bill. -- posted by Pangaea

Pear, Cranberry and Stilton Waldorf Salad

This is an adaptation of one of Emeril's Waldorf Salad recipes. The key to making it delicious is using very hearty, crunch lettuce. Softer lettuce turns to mush with the mayo dressing. You can sub any bleu cheese for the Stilton. It makes a great healthy lunch or a nice side to a beef or pork dish. -- posted by Pangaea

Eggs in Purgatorio

I'm grateful to andypandy for telling me about Eggs in Purgatory in answer to a community question about varying poached eggs. I checked out the various recipes and then adapted them to my needs and came up with this.
Rather than an Italian style tomato sauce, it is more like a Latin salsa. The garlic and onions can either be done first in the skillet, adding a bit more oil to the skillet after that so as not to let the eggs stick,, or, if rushed then can use garlic powder and dried minced onions in the salsa/sauce. (Salsa just means 'sauce' in Spanish)
I get a kick out of watching it cook because the edges of the egg look kind of ragged as the tomato sauce bubbles up and the pattern looks like flames,,, haha and thus the name of the dish.
I'm not fussy about the exact amounts of ingrediants and many of you 'tweak' recipes anyway,, so please understand that the amounts are approximations,, and it also depends on how many eggs are being poached. The fry pan should be a size so that the number of eggs fits with just a little bit of space between and around the eggs and the sauce has some depth, so don't use a huge pan for two eggs. -- posted by Rainbow - Chef 536866

Pasta With Sun-Dried Tomatoes, Snap Peas, and Feta

A delicious pasta that I threw together using some of the leftovers from another very tasty dish:

http://www.recipezaar.com/Chicken-Breast-Stuffed-With-Feta-Cheese-Sundried-Tomato-and-Re-17962.

My directions are not exactly precise since most of it is according to taste. However, if you have a little experiencing cooking, and taste everything as you go, this is really simple to make.

The sweetness of the snap-peas go really well with the saltiness of the feta, and the sun-dried tomatoes meld it all together. Yum! -- posted by Chef #1413665
