Max's Ultimate Corn Muffins

I tried the "Delicious Corn Muffins" recipe posted here from "Top Secret Recipes" and found that it was lacking in a few areas, so here's my version. I changed some ingredients and gave more detailed instructions on how to mix them. This is the best muffin I have ever had, period. Be sure not to overcook them, they are done when the edges of the muffin are golden brown and the top is still yellow. (Note: it says 0-2/3 cup of sugar, this is a typo. It should say 2/3 cup) -- posted by Max Maloney

Pumpkin Muffins With Raisins

These are delicious, lots of pumpkin flavour. For plump raisins soak in boiling water for about 5 minutes, drain well.I made these today and instead of 3/4 cup oil I used 1/2 cup oil and 1/4 cup apple sauce. I reduced the sugar to 3/4 cup. They are still delicious. -- posted by Dorel

Chocolate Chip Coconut Banana Bread

Raisin Oatmeal Bran Muffins

Though there are many good raisin bran muffins on the site, there are none quite like these. The addition of oatmeal helps keep these low-fat muffins moist and tender. The original recipe comes from one of my mom's many muffin cookbooks, wish I remembered which one. I've played with it a bit but this is close. -- posted by justcallmetoni

Peanut Butter Banana Bread

I can't seem to get enough banana bread recipes, and the addition of peanut butter is always a plus. I love the light, cakelike texture of this bread. I may increase the peanut butter next time - it's pretty subtle, although it does comes through more strongly as the bread sits (it would probably be good to make it the night before you want to eat it). I made this into mini-loaves, baked for 35-40 minutes.
Low Fat Secret Ingredient Banana Bread

This is just delicious--moist and flavorful, chock full of protein, and LOW FAT! Oh, and it's at least partly whole wheat. What more could you want?!? This is a great way to work soy into your diet stealthily. :)
Oh, and the secret ingredient is tofu. It replaces the fat in traditional recipes, and does a darn good job of it, too! :P
Feel free to leave out the nuts.

This recipe was first introduced in Eating Well magazine (a must read for health-minded cooks). A big fan of the rich sweetness of cornmeal, this attracted me immediately and the recipe here is my adaptation. It is dense and moist and well-studded with berries. The cake tastes even better after resting for a day, so consider making it in advance. I really like this with the orange blossom water as it intensifies the orange while adding a slight floral note. But either orange or lemon juice work quite well. -- posted by justcallmetoni

Super-Moist 100% Whole Wheat Banana Currant Bread

Whole Wheat does not have to mean dry and boring! This bread is incredibly moist- and since it uses apple sauce instead of oil/butter and agave nectar instead of sugar, it is actually good for you!

The moistness comes from the sour cream, apple sauce, and agave nectar (which has the consistency of honey... look for it at a whole foods or specialty store). You could probably use Splenda to cut the calories even more. -- posted by Jessica45730

Chocolaty Chocolate Chip Whole Wheat Muffins

I was originally interested in making a chocolate nut bread from Very Best Baking but decided I needed something more chocolaty and with more spices. So I decided to merge that recipe with another muffin recipe I use that calls for cinnamon and nutmeg. I wanted it to look chocolaty too though so I also added cocoa powder. I do want to add that this recipe is not very sweet. It is just right. You can use just all purpose flour if desired. This recipe will make 48 regular sized muffins or 24 Texas sized muffins. You can also freeze some for later. -- posted by Jasmine31

Cinnamon-Cappuccino-Pecan Scones

This recipe is from the www.kingarthurflour.com website. "Dusky-dark from cinnamon and espresso, these scones are moist, crumbly, and packed with flavor." Tips from our bakers: To make now, serve later, prepare the scones up to the point where they're shaped and ready to go into the oven. Freeze on a baking sheet, then place in a plastic bag, removing as much air as possible, and store in the freezer for up to 2 months. To bake, place frozen scones on a baking sheet and bake for about 25 minutes in a preheated 400°F oven. -- posted by senseicheryl

Went to a Gluten-Free baking class and this was one of the featured breads. Was quite delicious although I haven't made it myself yet.
