Granny Smith Apple Cake

This recipe is modified from one published in the Cedar Rapids Gazette back in the early 1990's. Like all "Cake-Mix" cakes, it is a breeze to prepare, but it looks and tastes like you labored in the kitchen for hours! It is lovely topped with either vanilla or cinnamon icing and goes great with a fresh cup of coffee. It also keeps very well. -- posted by Squiddy10

Diet Delight Coffee Cake

This was a depression era recipe made without eggs my grandmother and my mother made. I have changed the ingredients as my husband is lactose intolerant and cut the calories for me. The mayo replaces the fat butter used to add and the dairy is removed by using Fleischman's unsalted margarine which is parve. We are the 3rd generation to enjoy this cake! We hope you like it too! -- posted by feeding the masses mamma

Glazed Cinnamon Rolls

This recipe is from Baking Illustrated, it is a very time consuming recipe but makes the best cinnamon rolls ever. You will not be disappointed. They turn out light, airy and wonderful. This recipe uses a Kitchenaid mixer to mix the dough. I'm sure it can be converted to make them by hand just not sure how to do it. It takes about 5 hours from start to finish to make these beautiful cinnamon rolls. The use of the instant read thermometer to tell if they are done I believe helps to assure these rolls come out just right, not over cooked and dry. -- posted by Pumpkie

Cinnamon-Pecan Topped Coffee Cake

Not a overly huge cake, but buttery moist delicious, with a layer of cinnamon/sugar topping on top of halved pecans. I have made this cake using large walnut halves also. If you prefer a less sweeter topping then reduce the sugar by a couple of tablespoons but keep the cinnamon to 1-1/2 teaspoons. This cake is best served still slightly warm topped with whipped cream. Try this cake, you will love it! -- posted by KITTENCAL

Easy Chocolate Chip Coffee Cake

I found this recipe in a magazine (Southern Living I think), and I've been making it ever since. My friends always request this cake and the recipe, and my Grandmother takes it to all kinds of church functions. It's quick to put together, but no one will ever know how easy it really is. And I make it with fat free sour cream, skim milk, and egg substitute when the girls come over so we aren't guilty afterwards. Doesn't change the taste at all.

Cinnamon Streusel Bread (Gluten-Free)

Went to a Gluten-Free baking class and this was one of the featured breads. Was quite delicious although I haven't made it myself yet. The outer layer was nice and crisp without being burnt and it had just the right amount of cinnamon and sugar. The recipe calls for Bette Hagman's Bean Flour Mix. *This recipe is 2 parts garfava bean flour, 1 part sorghum flour, 3 parts cornstarch, and 3 parts tapioca flour. **Soured milk can be substituted for buttermilk by adding normal milk to 1 tbsp of vinegar to total 3/4 cup. -- posted by Andrew Mollmann
