			<description>This is my adaptation of several squash recipes I've seen.  This is a great recipe for a first course of dinner, lunch or snack. It can be prepared up to 2 days ahead of time (bring to work!). Reheat refrigerated soup before adding garnish.

			<title>Vegan Spinach-Mushroom Quiche</title>

			<description>My friends and family are always getting on me to publish my recipes; I don't really use them, nor do I regularly remember even what I put into my dishes. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used &amp;frac12; cup of blue corn meal, and &amp;frac12; garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower. 			<description>Okay so this is just an ordinary cheesecake with a little twist. I remember this recipe because my manager and I was trying to figure out how to make a cheesecake unique and great. Some people uses sour cream and some people don't. Some uses evap. milk and some people dont. We werent exactly sure what would taste better and what would make the cake smooth or etc. So we came up with this! HOPE YOU ENJOY IT!

You will need a Springform pan or if you dont have won, just use a 9inch round pan with foil paper. Make sure to wrap the whole pan with foil!

As for toppings, you may use anything you like.
Whipped cream
Strawberries or blueberries or cherry or any fruits
Strawberry or chocolate syrups. Any syrups to your liking.

While I do love smoothies with fresh fruit, this particular recipe works best with frozen fruit because of the addition of cereal.  Play around with flavors of yogurt and fruit until you find a pairing that you love!  My favorite is Dannon Light and Fit banana yogurt and frozen mixed berries (blueberries, raspberries, strawberries, and blackberries). Although delicious this is a time consuming recipe -- the original recipe says 2 1/ 2 hours but I took 3 hours to make this plus the another 1/2 hour to reheat the next day --- so be prepared!
