John's Birthday Cobbler

My husband asks for this ever year for his Birthday! It's a dry dough except for the inside where the filling rests. It's almost like it's not cooked! But he loves it!!! The cobbler is reversed dough on bottom like a crust instead of on top.
December 2009 I made this for DH in the food processor and it was quick and easy. In place of the buttermilk I used half and half with a teaspoon of lemon juice. -- posted by ~Rita~

Apple and Date Crumble Cake

It may have the word “cake” in the title and you will end up with a cake shaped dessert, but in reality this is a recipe for an honest to goodness, old fashioned, winter warmer of a PUDDING! I made this for our Sunday meal and my DH thought it was so good he told all his work colleagues about it the next day!

I think this pud works best with lashings of hot custard, but cream is good too! Use good quality ‘cookers’ (such as Bramleys if you can get them). This recipe comes from the 2005 edition of the annual BBC Good Food “Vegetarian Christmas” magazine. -- posted by Mrs B

Super Easy Fruit Cocktail Cobbler Cake

This is a super quick, super easy dessert to make. Three ingredients and two minutes of prep time is all it takes. Doesn't get any easier.
I've used other items instead of fruit cocktail like canned pears, canned blueberries or canned cherries. I've also sprinkled coconut on top of the cake before baking which adds great flavor. Serve plain, with Cool Whip or your favorite ice cream. -- posted by Bowtie

Fresh Peach Cake (Or Cobbler)

This is a recipe I found in an old cookbook I bought my boyfriend at a used goods store. I love this recipe, it is quick and easy and tastes great. I have used prune plums, nectarines, and apricots as well as peaches. It all depends upon what I have available. I tend to add a good dash of cinnamon to the batter because I love the taste. -- posted by Chef Gustival

Apple Crumb Cake

My DH hates apple cakes and pies of all kinds but will eat this until I stop him and I love apple cake and pies of all kinds and will eat this until I stop myself; in other words everyone loves this cake. This is not a fluffy cake but a good heavy crumb cake with an almost cookie-like crust. The nice thing about this is that you really can use any kind of fresh or frozen fruit or any combination (except strawberries). My personal favorite is apple and apricot. It is especially good with a layer of fruit pie filling on top of the apples like cherry pie filling. -- posted by scancan

Coco-Berry Shortcakes

Sour Cream Apple Square

Another family favorite from the Best of Bridge Collection of Cookbooks. This is a very different cake from any of the others posted in this site, we love the spongy texture of this cake. Somehow, it just hits the spot. It is an excellent cake served warm with whip/ice cream, or served cold and plain! Great for lunch boxes as it holds up when travelling. -- posted by les2saw

Easy Gluten-Free Pineapple Cake

I modified this from a recipe for pear cobbler my dad found on Cooks.com. I made it sugar-free, gluten-free, and with pineapple, since I have an intolerance to pears. It turned out like a light, fluffy sponge cake--delicious! -- posted by Jainene

Easiest Peach Cobbler

This is the easiest desert I have ever made. I had the idea as a poor college student who rarely shopped anywhere but Walgreens. There are, consequently, only two ingredients. Because there are no raw ingredients, I often under-cook the cake so that it is still a bit gooey.

Apricot Snack Cake

Originally this cake had a layer of gooey apricots between the cake and crumbs but I wasn't paying attention one day and added them to the cake. My daughter decided she liked better with the apricots in the batter. I am partial to the gooey layer. Either way is good with some whipped cream or ice cream. It is also good made with blueberies, peaches, or a combo of fresh fruits in place of the apricots. -- posted by JPsBarbie

Boysenberry Cake

This is like a coffee cake and tastes alot like a cobbler. It is an old recipe from my grandma. If you can't find boysenberries, you can substitute with blackberries. This is delicious served with a scoop of vanilla ice cream. -- posted by aimbrulee

The Original Bisquick® Strawberry Shortcakes

The original Old Fashioned Shortcake recipe appeared on the first Bisquick® box in 1931. It's said that an advertising slogan promised – “Here’s the Kind of Strawberry Shortcake Your Husband Will Rave About.” Shortcakes are the sweet cousin of the dinner bisquit, and these easy-to-prepare treats have stood the test of time in my family. It started with my mom who made her Bisquick® strawberry shortcakes with her garden grown strawberries and REAL homemade whipping cream. Some thirty years later my sistes and I are still baking up these sweet treats. -- posted by Feast Your Eyes!
