Rhubarb Crumbles

Rhubarb is at its best and most tender early in the spring, and that's the time to make delicate rhubarb tarts and cakes. By late summer the rhubarb crop is getting ready to give up the ghost, and what's left is usually fat, somewhat woody, and liable to be tough, unless it's treated right. Rhubarb crumble is the solution for a baker faced with one last basket of rhubarb and no room in the freezer. -- posted by Annacia

Raspberry-Rhubarb Crisp

Gluten-Free Strawberry-Pear Cobbler

I really enjoyed the distinctive taste of pear peeking through the tart sweetness of strawberries. I recommend using Spectrum's palm oil based shortening, as it's non-hydrogenated and has none of those much-maligned trans fats. Serve this cobbler alone or with whipped cream or vanilla ice cream. I can't guarantee that this will work with other gluten-free flours, so stick to Pamela's Ultimate Baking and Pancake Mix if you can find it. -- posted by What's Cooking?

Good Ol' Summertime Rhubarb Custard Dessert With Cookie Crust

A delicious cookie crust, a sweet-tart creamy custard loaded with rhubarb, topped with an (optional) amazing meringue. Works with frozen or fresh rhubarb. RHUBARB GROWING HINTS: water freely while it is growing; fearlessly remove the flower buds (they look kind of like white broccoli) before they open--if you don't the plant puts more effort into flowering than in making thick juicy stalks--can't have that!; harvest stalks throughout summer, then discontinue plucking spears in early August; snap off or cut stems at the base (right above the ground); rhubarb leaves are a GREAT mulch around the rhubarb bed, to keep the weeds down. -- posted by Debber

Apple Raspberry Pie

I created the recipe because I found a spot in the woods while camping where delicious, wild raspberries were growing. I came home and picked apples off our tree and decided to put them together since I had never used raspberries in cooking before. WOW was that a great idea.
Vegan Bourbon Cobbler (Peach, Nectarine, Strawberry, Blackberry)

This is a vegan variation of my recipe: Recipe #295437 Southern Bourbon Peach Cobbler. This tastes slightly different because I use coconut, but very tasty, and you wouldn't think it was vegan if someone hadn't told you. I've found nectarines are very nice (and inexpensive) in my area during the summer, but any fruit or combination could be used. Some possibilities include: peaches, nectarines, strawberries, blackberries, cherries, raspberries, plums, blueberries, mango, apricots, rhubarb, and other berries and stone fruit. The recipe would have to be varied if you wanted to use a less juicy fruit like apples or an acidic fruit like pineapple. -- posted by MC Baker

Country Caramel Apples Around the Campfire

Here's a recipe that is sure to draw some oohs and aahs from your favorite diners! An easy-to-make, simple way to end the day while camping or on the back deck. The hardest part is coring the apples. Try stuffing the core with other melty sweet treats: chocolate caramels, cinnamon Red Hots, Lemon Drops, Gummy Bears. Oooohh...! The original recipe came from the Lutheran Girl Pioneer Camping cookbook. COOKING TIME DOES NOT INCLUDE getting the fire or grill coals going. This is a good recipe to put on as the fire is dying down---or AFTER you've pulled the meat off the grill--while you're eating supper. These will cook all by themselves while you're eating! -- posted by Debber

Rhubarb Crisp: a Celebration of Summer!

My rhubarb flourishes at the end of my clothesline, right next to a patch of hollyhocks that sway in the summer breezes. Right now there are some little birds (I can't make them out with my spotting scope) snatching up pine needles and flitting about busily. Anyway, this recipe comes from the June '09 issue of *Country Living*. I do live in the country, and have an abundance of rhubarb. It's easy to freeze the cut-up pieces, and if you toss the pieces with sugar (right in the zipper bag), you can pop it in the freezer and use them later. The extra sugar will be fine in the recipe! -- posted by Debber
