Chewy Honey Almond Energy Bars

These ingredients are what I normally have on hand, but feel free to substitute or add other nuts, seeds or dried fruit such as dried cranberries, cherries, shredded coconut, toasted oats, etc. These are packed with protein (and calories), and are great for athletes, or anyone who needs a hit of energy! The bars are soft and chewy, but the more ingredients you add, the firmer the bars will be. -- posted by Procrasti-baker

Kashi Golean Granola/Snack Bars (No Bake)

These are SO easy! I am always on the look out for high protien, high fiber foods. I created this recipe on a whim and was incredibly impressed with the outcome... Good for you AND tasty!! Practically perfection in my book! It's made from Kashi Go Lean cereal which has 10g of fiber, 13g of protien and only 1g of fat per serving. There is lots of room for variation so have fun adding your own favorite fillers. -- posted by Motivated Mama

I have not tried these bars. I'm posting this for safe keeping. I found this recipe in Bake The Best Ever Cookies kids cookbook.
Chili Dogs

Just cover the franks with any extras you like, such as mustard and onions, then ladle on this super sauce. I found this recipe in Taste Of Home Quick Cooking 2005. I posted this for safe keeping before my family tried it. I have to agree with reviewer there is not a whole lot of flavor for all the seasonings. I even doubled the onion powder, garlic salt, and ground mustard. I added 1/2 tablespoon brown sugar and 1/2 teaspoon salt. This just still didn't due anything for the flavor. Overall this is a thick sauce. -- posted by internetnut

Breakfast On-The-Go

A complete grab & go breakfast or snack. You've got ingredients from all 4 food groups and the recipe is easily customized to your family's preferences. I like to reduce the flour and add wheat germ, ground flax seeds, I often add poppy seeds, the combinations are endless. I usually replace chocolate chips with nuts. Other times, I use dried cranberries & dark chocolate chips. I suppose you could also replace the cream cheese with peanut butter, yoghurt, or jam. You could also add cocoa. You'll probably choose to adjust the ingredients according to the type of cereal you are using (some already have dried fruit and/or nuts)I find they taste best the next day. -- posted by Génial Génie

Crispy Roasted Chickpeas With Moroccan Spices

This is a great mid-afternoon snack by itself or sprinkle them on a salad or add some nuts. I used garbanzo beans from my freezer I cooked earlier and tripled the recipe so I'd have extra on hand. Kalyn says garbanzo beans are one of the world's healthiest foods--one of the highest protein levels in plants and also a low-glycemic food. Roasted chickpeas are eaten in Turkey as a snack called Leblebi. This recipe came from Kalyn's Kitchen--the Moroccan Spice Mix is from Fine Cooking Magazine. Kalyn keeps Moroccan Spice Mix on hand to flavor veggies as well. -- posted by AmyZoe

White Chocolate and Maple Rice Krispie Squares

I like my rice krispie squares to be heavy on the mallow so if you prefer, feel free to add more rice krispies to the mix!
I don't have easy access to good maple syrup this side of the pond so please feel free to adjust that amount too- 2 tablespoons of the fake stuff I get here is about right but you may need less of the real thing!

This delicious damper is best made on the day you plan to eat it. Don't use butternut or kent pumpkin, as they have a high water content. Best part about this delicious damper, is that it comes in at just AU$1.75 a serve!

Make-Ahead Burritos

I needed to use up some leftover chicken, and I didn't want to feel like I was "eating chicken again". It was the fastest burrito I've ever made, and I'm going to freeze the leftovers individually. Who needs to purchase frozen burritos when you can make your own with ingredients you have on hand. The only thing I did differently is I used around 7 ounces of green chilies and instead of the burrito seasoning mix I added my own seasoning (fresh cilantro, garlic, cumin, and chili powder).
Campfire S'mores (Aka Robinson Crusoes)

If you like regular S'mores, you're going to LOVE these! Start with chocolate graham crackers, smear on some creamy peanut butter, add the chocolate candy pieces, the melty marshmallow; then top with the other square of graham cracker. THE TRICK to making these perfectly is being patient while the marshmallow is roasting....don't stick it into the fire, twirl it slowly over the warmth, so that it starts to swell up. That's your signal that the inside is getting all soft and smooshy--just right for perfect s'mores. I first made these back in the early 90's when taking 10 girls on a church youth camp-out in eastern Washington State. We cooked all our meals over the open-fire (no campstove!!) including chocolate chip pancakes MADE FROM SCRATCH, pioneer hotdogs (yum, yum!) and caramel apples roasted in the coals. I guess I need to post those recipes too. After all...it's summer-time and people are camping!!! -- posted by Debber

Easy Italian Salami Pasta Salad

This is a recipe that is easy to make from ingredients that are often in the fridge/ storecupboard. If it is served straight after the minimum 30 minute chill time, you may find that there is a lot of dressing in the salad- this is so that it doesn't dry out if it is stored in the fridge for a few days. Serves 4 as a side dish but this would also make a good take-to work lunch or potluck dish. -- posted by Shuzbud

I Can't Believe It's Low Fat Carrot Bread

So moist and delicious you will never believe it is low fat. The original recipe given to me by my BF's mother used oil instead of applesauce, 2% milk and a cup of white sugar, I also added the vanilla. I changed the recipe to what it is now and he never knew the difference. -- posted by katdi

Almost Dad's Tofu Jerky

I adapted this recipe from one I found at tofujerky.org. One of the few cheats I would do as a veggie was eat my dad's venison jerky. With his passing, we lost the family recipe. I recreated it to the best of my memory using tofu. The marinade also makes great baked tofu. Adjust the pepper to your taste. I usually double this recipe because we love it so much. -- posted by PDX CakeGirl

Not Hot Beef Jerky

This is a good beef jerky marinade, especially if you prefer one that is not loaded with pepper. My mom gave me this recipe, I think it came enclosed with her dehydrator. This amount will marinade about 2 1/2 pounds of meat.
Breadmaker Granola

Make healthy Granola to use in trail mix or over yogurt for a healthy breakfast...in your breadmaker! I use about a 1/3 cup scoop of this over about 1/3 cup - 1/2 cup plain natural yogurt for my breakfast every day. I also found this to be an easy, filling and healthy camping breakfast with the individual size yogurts thrown in the cooler. Choose your own combo of nuts and dried fruits...for a special treat, add some dark chocolate chips after it has cooled. -- posted by Seamor

Mani's Bakery's High Protein Muffin

This recipe comes from the LA Times Food section's SOS column posted in response to reader pleading. It is an adapted recipe from the bakery. You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins & likely need a slightly shortened cooking time. Should be getting about 11 grams of protein & 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds & canola oil. Just the thing for hiking, fishing or hunting - easy to eat & needs no fridge! -- posted by Buster's friend

Summer Camp Gorp

I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. Also keep an eye on the oats as they're cooking, as all ovens are different, so they don't burn. -- posted by NapalmFairy

Scrambled Egg Wrap

I am saving this one for our next camping trip, but this is also a great recipe for a quick, filling breakfast or light lunch. This recipe is very versatile and you can add any herb or vegetable to the eggs or as a topping. Suggestion -green onions, hot sauce, tomatoes etc -- posted by Deantini

Crunchy Granola Bars

I love those nature's valley crunchy granola bars and I also like those sweet and salty granola bars as well as fruit granola bars! But notice how you can't seem to get everything you want in a granola bar without sacrificing the healthy aspects. Anyhow, these are great and easy adapted for whatever ingredient you fancy. -- posted by Dulcet Kitchen
