			<description>Does your family love chicken like mine does? This is my clan's all-round favorite dish of any sort. The original recipe came from Mr. Food (Art Ginsberg) before I messed with it a bit to suit our tastes. It's easy, fairly cheap, feeds 6, sticks to your ribs, and can be prepared easily in 90 minutes. Once you have it going, you just monitor it and make your spaghetti to serve it over (you could serve it over rice). I make this chicken cacciatore at least once a month and they'd be happier around here if I made it once a week! It is much better if the skin is left on while cooking (chicken doesn't get leathery that way) -- you can pull it off (it practically falls off) when you serve it if you wish. Also, if you use plain table salt, cut it back to 1/2 a teaspoon. Sometimes I use whole chickens, cut up, (without the backs, necks, and organs, which I save for making stock), and sometimes just legs and thighs -- it really doesn't matter. We often take this recipe camping, making up the spaghetti ahead of time and storing it in zip-lock bags in the cooler. One final variation -- you can substitute an equivalent amount of fresh Roma tomatoes instead of the canned ones for a &amp;quot;brighter&amp;quot; flavor but, if you do, add 6 ounces of V-8 juice to the recipe. This version (below) is the one I use most often but I have also offered alternatives, in the directions section of this recipe for all tastes, kids and adults alike. For this unique recipe, you will need either a charcoal grill or a small campfire. You will also need a campfire pie or sandwich baker, (also called pie irons), which you can easily find at Wal-mart in their outdoor section, or, at any outdoor supply store. They come in both square (sandwich) and round (pie) versions -- you can use either one with equal success. These babies are so delicious, fast, and easy that they're certain to become a family favorite at home or on camping trips which your kids will surely pass down to their own kids some day. 			<description>A nice, big soup which serves as a perfect winter comforter. This is an adaptation of an age old family recipe. My family are Italian and this is adapted from a typical &amp;quot;rustic&amp;quot; country dish. I have adapted it to better suit ingredients found in England and North America as these are the ingredients I can most easily get hold of whilst I am at university.

It is easy to prepare and definitely a crowd pleaser, I've served it to everyone from friends at uni to friends' parents after a hard day at work. My seven year old twin cousins also enjoyed it, so I think it's an all-rounder.

			<description>This dish evolved from my spicy omelette sauce recipe. This chunky sauce just &amp;quot;screamed out&amp;quot; to have seafood added and since butter, vermouth, and garlic are integral to this particular blend, I figured I could add shrimp and call it a scampi of sorts. You could also add calamari rings, bay scallops, mussels, and/or fish chunks if you wished and it would only add to this dish's superb flavor. In any case, it's not pop-your-eyeballs-out hot but you can supplement the heat from the cooking oil by adding a little Tabasco as directed. This is a shrimp dish that will be quickly devoured by a small crowd as I discovered when I first served it as one of multiple appetizers at a family gathering -- it was the first to disappear. As a meal, you can serve this over either cooked Basmati rice or egg noodles. I've offered some ingredient substitutions which have, so far, worked beautifully for me. As a final comment, I love to take this dish camping and cook it in a wok right over an open campfire.
