			<description>Ah Mackinac Island, a Michigan tourism paradise known for its horse-drawn carriages, lilacs, the Grand Hotel [scene of the movie &amp;quot;Somewhere In Time&amp;quot;] and, oh yes, fudge.  Wander through the streets and about every 3rd or 4th shop you pass will be a fudge shop, and you'll usually be able to watch the freshly boiled up fudge being spread and cooled on a marble slab.  It's strangely addicting watching this process, and if you hang around awhile you'll get a sample eventually.  This recipe purports to be an authentic version, though no particular fudge shop was mentioned as owning the recipe.  The initial recipe is for a vanilla fudge. It is the only fudge I make, because it does make a large amount, and I find it easy to make. I am posting this for safekeeping, since I have lost it more than once. It does matter that you use good chocolate chips. 			<description>A simple never-fail fudge that is easy to make and is so rich and velvety that it'll fool you  into thinking it was from a gourmet candy shoppe.  I adapted this from a recipe my mom used and passed on to me several years ago.  I love this recipe because you can put a variety of nuts and/or dried fruits ( i.e. finely chopped cranberries, cherries and of course, raisins) in it so you can make it for any occasion.  It also works well with any kind of chips/morsels you want to use,( i.e. butterscotch, white chocolate, even special dark chocolate chips, yum....) just be sure to buy a quality chocolate to begin with like Ghirardelli chips, which are my personal favorite and found in most grocery stores. 			<description>My Mom makes this amazing fudge every year at Christmas.  It's very smooth, creamy, gooey and rich- not all dry and hard like alot of recipes I've tried. It's unlike any recipe I've found.  You'll love it.  You'll blow everyone away when you serve this!  It calls for 4 cups nut meats but you can substitute those for whatever goodies you like (my all-time favorite is cherries). You can also add different flavorings to make your favorite!  My Mom has made this with crushed cookie crumbs, nuts, coconut, peanut butter, caramel, cherries, raspberry flavor, mint flavor, rum flavor marshmallows... there are so many I can't remember them all. The recipe comes from a cookbook called &amp;quot;Martha Dixon's Copper Kettle Cook Book&amp;quot; from 1963.  Martha Dixon was quite well-known at that time and had a cooking TV show that was really popular back then.  There was no Food Network back then.  It was Julia Child and later the Galloping Gourmet... remember them?  Anyway, her show was on TV for several years. What a joker!  Although she was famous for her fudge we never caught on that it was the recipe on the back of the Fluff jar!  So this reminds me of my MIL and I will miss her very, very much. 			<description>A soft fudge flavoured with golden syrup an vanilla. Itnstead of golden syrup you can use corn syrup or honey. Or mix in melted chocolate before leaving to set. I've been trying to make a soft fudge for ages now, and this is the first that worked! It's all in the technique of cooling. A sugar thermometer is advised, as it makes things alot easier.

The time on this recipe is guessed..i don't time myself when i make things. I love dark chocolate and so that is the direction I went and threw in the other ingredients to try to cut through the richness.
