Chocolate/Espresso Pour Icing

This cake icing is perfect for a 9x13 inch cake left in the pan. It is rich with chocolate flavor and married with one of chocolate's natural partners, espresso. I added instant espresso powder to the milk called for in the recipe, but I suppose if you wanted to omit the milk, you could just add the equivalent of freshly brewed espresso with it's exquisite crema. Or even go total latte.Getting the espresso flavor in there is the key. -- posted by Citruholic

Super Easy & Delicious Fudge

If you like fudge and you like easy, this is the recipe for you! My grandma used to give this to us for Christmas served in circular tins, separated by wax paper. I prefer plain chocolate fudge, but have been known to insert some Andes mints in here or there. I went through a phase in high school where I made this almost bi-weekly. -- posted by Chef Acosta

My mom made the best fudge when i was a kid. She stopped making it after we got older and forgot the recipe. This is the recipe off of the Hersheys Cocoa can.
Double Layer Coffee Almond Fudge

A Delicious two layer fudge with almonds and a touch of coffee, This fudge is quite rich and I normally make it in a small batch but you could easily double it and use a larger pan. It uses both dark and white chocolate and keeps well in the fridge for a couple of weeks. A nice fudge for a special occasion. I normally serve this fudge cut into small rectangular pieces. -- posted by dizzydi

Halloween Gravel (Fudge Candy)

I got this recipe from the Better Homes and Gardens website. I placed the fudge "rock" candies in a crystal centerpiece, and then scattered a few pastic spiders for a quick Halloween decoration. I didn't eat the candy myself, but my kids said they were pretty good (and they were gone in a matter of hours, so they must have been pretty good). Even if you don't eat them, these are a handy treat to use for enhancing your Halloween decorating. Cooking time includes minimum chilling time. The recipe make about 2 1/4 pounds of candy, or about 80 rock-shaped fudge candies. -- posted by NorthwestGal

Two Flavor Fudge

This tasty fudge recipe was given to our family a number of years ago as a "never fail" fudge recipe. When our daughter, Nancy, was in Scouts, a pre-Christmas project one year was for each member of the troop to make a complete batch of fudge to take home for her family. Not one single batch of fudge failed! Quite a feat for a group of ten to twelve year olds! -- posted by GrannyJo

Absolutely wonderful for around Yule/Christmas time! If you're not big into peppermint, you can omit the flavored extract all-together or substitute it with a flavor you like. Also, you can replace some of the chocolate with peanut butter chips and make a peanut butter chocolate fudge swirl. You can also add nuts or candy chips! So versatile!16 -- posted by Chef #1102129

Country House Fudge- Martha Dixon

My Mom makes this amazing fudge every year at Christmas. It's very smooth, creamy, gooey and rich- not all dry and hard like alot of recipes I've tried. It's unlike any recipe I've found. You'll love it. You'll blow everyone away when you serve this! It calls for 4 cups nut meats but you can substitute those for whatever goodies you like (my all-time favorite is cherries). You can also add different flavorings to make your favorite! My Mom has made this with crushed cookie crumbs, nuts, coconut, peanut butter, caramel, cherries, raspberry flavor, mint flavor, rum flavor marshmallows... there are so many I can't remember them all. The recipe comes from a cookbook called "Martha Dixon's Copper Kettle Cook Book" from 1963. Martha Dixon was quite well-known at that time and had a cooking TV show that was really popular back then. There was no Food Network back then. It was Julia Child and later the Galloping Gourmet... remember them? Anyway, her show was on TV for several years. Some of you may remember her. -- posted by Realtor by day, Chef by night

Not so Sweet Fudge-- Microwave Quick

I am a chocoholic. But can't eat much in the way of carbs. So most sweets, including baked goods are out. I came across a recipe for Chocolate Ice Cream without an ice cream freezer in Cook's Country Magazine. Looked great, simple, and had my mouth watering. I have tried 3 different ice cream freezers (even a fancy gelato maker) and never been happy with the results. I was so impressed with what looked like a great recipe I had to try it. Well, I wasn't that happy with it. Perhaps because I didn't use semi-sweet chocolate. I used 70% Scharfenbargers. I have stayed away from Sweetened Condensed Milk, again because of the carbs. Most fudge recipes call for all kinds of sugar. But I was trying to make ice cream and the only sweetener with a fair amount of cream was the SCM. So ...to make a long story short. The base for the ice cream was FANTASTIC FUDGE not too sweet, creamy, with excellent chocolate flavor that was very satisfying. (I know, why not just eat the chocolate?--too bitter, go figure). So here is the base recipe. I use instant espresso, which greatly enhances the chocolate flavor. Cook time is refrigeration time. I haven't tried variations yet, but that should be pretty easy. UPDATE: unsweetened bakers chocolate works well; tried orange rind and orange extract with excellent results. -- posted by Judy in WA Chef #763912

Easy, No Bake Rocky Road Fudge (Also Gf)

This is a recipe I found in a Pampered Chef cookbook while looking for good things for my mom (who had been recently diagnosed with a wheat allergy) to eat. This recipe is simple, fast, and really pleases a chocolate-loving crowd.
I usually use fewer marshmallows than the recipe actually calls for b/c I don't care for them very much, but nobody has ever complained when I don't. :D -- posted by Chef #1284564

Sheila's Can't-Fail Fudge

This is the ONLY fudge recipe that I make, which everyone looks forward to around the holidays. My niece Alisa saves her empty container from the year before and brings it to me for her annual refill. She loves to help make this, and it is so easy, even a child can do it! I personally prefer walnuts in my fudge, but it's great either way. It makes a nice gift when presented in a holiday tin.
Rich Mallow and Honey Almond Fudge

I’ve adapted this recipe from one I found on the Simply Great Meals website. The original recipe uses pistachios; I’ve used honey-roasted almonds. Obviously, you could use whatever nuts you fancy or a mixture of several different nuts. Once you’ve melted your chocolate, butter and marshmallows, no more cooking is required. Great for lunchbox snacks, picnics and potlucks! For the best results, use top quality chocolate rather than cooking chocolate. I’ve suggested Lindt, and if you choose one with orange or peppermint chips, you’ll add another subtle flavour. I’ve wondered also about using a fruit juice instead of the water but haven’t tried this yet. The conversions you may need: 90g = 3oz; 250g = 8oz. -- posted by bluemoon downunder

Dark Chocolate Cranberry and Cashew Fudge

I recently made JackieOhNo!'s recipe #386677 and that showed me that it can actually be pretty easy to make fudge. So, it got my creative juices flowing and I decided to try to play around and see what I can do come up with a new fudge recipe. I love dark chocolate and so that is the direction I went and threw in the other ingredients to try to cut through the richness. I included a couple hours chilling time in the cooking time but really the longer you leave it the better it gets. -- posted by Sarah_Jayne

Coco-Cocoa Fantasy Fudge (Clean Eating)

If you like chocolate, and you like coconut...this is for you! I found this recipe in my Clean Eating Magazine, and had to give it a try! It was super easy to make (only 4 ingredients! Wow!), and tastes wonderful. And the health benefits from eating coconut products make it well worth it, too! It goes well with a glass of red wine, or is a nice treat for the kids. Either way...it was a hit for everyone in our family (young and old). -- posted by MamaMeag

Sarasota's Simple Eagle Brand Fudge

I can't take any credit for this, and I'm sure this recipe has been made over and over, but, I always like to pass it on. At work, I used to take batches in every Christmas, and I was surprised to see how many people had never tried this simple recipe. For those who know me on Zaar, they know I DON'T like to bake and don't unless I have to. I'll bake cookies or a pie at Christmas, and I do bake these "TWO" cakes; rum and eggnog, and beer bread, but that is about the extent of it. Don't get me wrong, I can when I have to ... I just would rather cook. So I have been making this fudge for some 25 years. A simple mix of Eagle Brand Sweetened Condensed Milk and Morsels (any flavor). So, below is the basic recipe and some of my favorites. The best part is ... have fun with flavorings and added ingredients (extracts or liquors and dried fruits, nuts, coconut, etc). A quick 3 minutes in the microwave and then poured in a square 8x8 pan lined with foil or parchment and let cool. The easiest fudge around. -- posted by SarasotaCook
