Helen's Coconut Cake

This is one great cake! The recipe is by Phyllis Richman, a staff writer with the Washington Post, she was a restaurant critic for 23 years, 8 of which she was also food editor. I am not big on desserts but I can't say no to this cake -- posted by Bergy

Calaloo,Callaloo, Calalu or Callilu All Same Soup

This is a traditional Caribbean dish. Make some dumplings and add to the soup or try adding some diced ham just before serving. You can freeze this soup but do not boil when reheating or the texture will be changed -- posted by Bergy

Don't let the low cooking temperature scare you, it turns out perfectly every time. This is an extremely easy, VERY yummy recipe. My family once served 65 people using this recipe (with the help of neighbors' ovens!).
Coconut Cake Supreme

I am always asked for the recipe for this cake. It is a rich macaroon like cake that must be kept for at least a day before serving it for the flavours and texture to develop into what they should be. You may want to keep it out of reach if you have someone in the house with a sweet tooth. Resisting the urge to nibble is the hardest part of making this cake :) -- posted by Ranikabani

South African Curried Lamb Casserole with Raisins & Almonds

In South Africa, curried ground lamb, bread soaked in milk, almonds, raisins and bay leaves fashioned into a kind of flat meat loaf is described by some as a collision of Dutch and Malayan pantries.
Coconut Chips

My husband and I have spent a fair amount of time in the Caribbean, especially the little island of Bequia. While there, we were introduced to coconut chips, which were served like a munchy mix during happy hour. A bit different, but they can be addictive.
Caribbean Rice

Pizza Rustica

Use whatever cheese you prefer.. If you do not like spicy then use a milder salami. This recipe was posted in our local TV Guide - I changed a couple of ingredients and measurements. The garlic is optional. It is a neat authentic version of an Italian pizza and I think very very good. You can cut very small slices and serve this as an appetizer (would serve 12) or have it as the main meal served with a green salad -- posted by Bergy

Chicken and Wild Rice Soup

Stock your pantry ahead of time to whip up this delicious satisfying soup. It comes together quickly for a nice meal.
Midwest Living's Bouja / Burgoo

Bouja is traditionally an upper Midwest (Minnesota) stew, while Burgoo is a specialty of the lower Midwest (Kentucky). In either case, it's what I would call a 'stew of opportunity', meaning that whatever you have on hand is what goes into the pot. In the past, squirrels were a main ingredient of the Burgoo. Anyway, I found this delicious combination recipe in Midwest Living and it made my house smell yummy, you can add squirrel if you like! -- posted by Hey Jude

Weekday Black Beans and Rice

My family loves this recipe and it's so easy to throw together after work. It's pretty spicy, how spicy depends on the andouille sausage that you use, mine was quite hot and so the resulting dish was spicy hot, but good. I reduced the amount of red pepper flakes to appease my family's preference. This will make your house smell as if you've been cooking, rather than out working, all day! I found this in the Chicago Tribune, the author, Donna Pierce, re-worked her Grandma's recipe to make it after-work friendly. -- posted by Hey Jude

Nutty African (Coffee Drink)

If you are a fan of hazelnut flavored coffee you will love this recipe. Amarula is an African liqueur made from the marula fruit; it lends a creamy caramel flavor to this coffee.
Jamaican Jerk Chicken Wings

You can adjust the heat in this recipe by the type of pepper you use. I used serrano peppers and thought it was just right, but I like food pretty spicy so if that's not for you, use a milder pepper, such as jalapeno. I found this in the Chicago Tribune 'Good Eating' section. I added the 2 hour chill time to the prep time. -- posted by Hey Jude

African Red Beans & Couscous

If you've always thought beans were boring, try this super recipe flavored with almonds. The beans are served over couscous, a grain popular in Northern Africa. I thought this was okay the first day, but the next day, I couldn't keep away from it! The first time I made it, I didn't make the couscous. You can make this in a crockpot too. Just check the water occasionally.
