			<description>This is one of the dishes I made for a big crowd that will be partying with us on the Fourth of July. (You can cut the recipe in half or you can freeze for a latter day).I used venison but you can use lean beef. Venison is very lean. I use small cubed pieces of meat as well as ground. Gives it more texture. But its melt in your mouth cubes of meat. It really does melt in your mouth. All the different ingredients blend together to give you a nice spicy almost 5 alarm chili. I used Goya beans which are not to be rinsed. 			<description>I used to be on the Chile-head listserv with Kit. His chili is the best I have ever had. I am going to post it exactly as he has it written, and you can experiment from there. It is amazing as is though, so try it Kit's way the first time as strange as some ingredients may seem to you. Heat depends on the type of chilies and chili powder you use. This is very hot as is...leave out the paprika at the very least if you can't take the heat. Roasting, peeling, and seeding your own chilies is so worth it. As in any &amp;quot;real&amp;quot; Texas chili, this has no beans. That's important. 			<description>This chili recipe is simple to make and strong on flavor.  It was adapted from a recipe found in Texas Home Cooking by Jamison and Jamison.  I would highly reccomend using a homemade chili powder, but a store-bought one can be used, if needed.  

This is an excellent dish to make ahead of time and reheat before serving.

			<description>This chili recipe took me two years to perfect. It's just a basic beef chili, but it's really good! Try substituting ground turkey--it works great too. Doubling or tripling this recipe is no problem. I always do so I can freeze some. It reheats amazingly well! Fair warning--this chili is pretty spicy! You can lower the spice by using milder peppers instead of the jalapenos. It's also easy to increase the heat--we add a another teaspoon of red pepper and a whole cascabel pepper (remove before serving) with the rest of the spices. 			<description>Description: neither thick nor thin, big flavor, traditional chili flavor, 4-alarm on a 1-5 alarm scale. If you like 10 or 12 drops of Tabasco on a big plate of spaghetti, this chili is fine for you, but it's not so hot that your eyeballs are going to pop out.
This chili began as a clean-out-the-refrigerator recipe but I did apply my considerable chili knowledge to the dish by manipulating the flavor with certain key herbs and spices. I didn't just dump in everything in other words. I'm compelled to say that I was very happy with the end result. For one thing, it doesn't taste like all my other chilis. No, this one is much more traditional in flavor with plenty of good heat. But when you STOP eating it, your mouth does not remain really hot. Just right, if you like a good spicy chili. I think the salsa verde is the key ingredient.
This chili would be especially good for a Superbowl party or for brunch on a day of deep snow and goofing off. There is very little labor involved in this one. It will be too hot for the kids though. One final caution: do not add salt to this recipe. There is plenty of salt in the bouillon and other ingredients. We made it to the best of our ability but we had to make substitutions because we just couldn't find some of the chili powders.  We ended up just using 5 Tbs. of commercial chili powders in place of the 3 Tbs. of ancho chili powder, 1 Tbs. pasilla chili powder, and 1 Tbs. ground cumin.  It was still very good.  We also substituted ground buffalo for about 1/2 of the beef. 			<description>This is the way I make the chili.  It is very nice. :)  Sometimes I only use 1 lb of beef and a can of black beans instead of 2 lbs.  If you use the beans, make sure you toss in about a tablespoon's worth of cinnamon to help with the black beans' flavor.  Also, I like to keep the veggies nice and chunky so you can still identify them after a long stewing. 			<description>I took a basic chili recipe out of a cookbook some years ago and been tweaking it ever since. Chili is so subjective, who can say which is the best, but I love the recipe below. Any amounts should be tweaked to taste, as I have over the last 10 years, but people have raved about it now for too long to keep to myself. This makes a massive pot that can feed up to 15 people. I usually freeze a bunch and save it for following Sundays. The real key, I think, is mixing in a bunch of different types of peppers. I list a few below, but be creative, you almost can't miss. All the spices are references, i actually keep tasting and adding throughout the afternoon until it's right. The problem with trying to find a good chili recipe is that what makes a &amp;quot;good&amp;quot; chili is a personal opinion; my idea of a great chili may be very different from yours. My chili is heavy on the meat, garlic and spice; rather rich-tasting, hearty, thick, fiery, and smoky. If that sounds like something you'd enjoy, I'm also going to include plenty of advice on how to adjust it to meet your tastes.

			<description>I have always loved Skyline Chili. I'm not from Cincinnati, but have been there. This is a combination of recipes I used to make one that has worked for me. I made it for the big superbowl party my family has every year. They loved it! I've never made it from scratch before because I didn't know what all was in the sauce. I had always used sauce packets from the grocery store. When the store was out, I had to come up with another solution. I love to cook and experiment. So...this is what I came up with.
